1 cup sour cream
1/3 cup chopped fresh dill
3 tablespoons finely chopped onion
2 tablespoons Dijon mustard
1 1 1/2-pound center-cut salmon fillet with skin
2 teaspoons minced garlic

Steps:

  • Whisk sour cream, dill, onion and mustard in small bowl to blend. Season sauce to taste with salt and pepper. Let stand at room temperature 1 hour.
  • Preheat oven to 400°F. Lightly oil baking sheet. Place salmon, skin side down, on prepared sheet. Sprinkle with garlic, salt and pepper; spread with 1/3 cup sauce. Bake salmon until just opaque in center, about 20 minutes. Serve with remaining sauce.

  • In a small bowl, whisk together the first 4 ingredients.
  • Add salt and pepper to taste and blend well.
  • Allow to stand at room temperature for 1 hour.
  • Lightly grease or oil a baking sheet.
  • Put salmon, skin side down, on baking sheet.
  • Sprinkle with garlic, salt and pepper.
  • Spread with 1/3 cup of sauce.
  • Bake at 400 degrees for 20 minutes or until just opaque in the center.

Steps:

  • Preheat oven to 275°F. Line a rimmed baking sheet with parchment paper. Toss asparagus with 2 Tbsp. oil, 1/2 tsp. salt, and 1/4 tsp. pepper on prepared sheet, then arrange in a single layer on one half of baking sheet. Bake asparagus 5 minutes.
  • Meanwhile, spread each salmon fillet with 2 tsp. mustard. Sprinkle fillets with 1/4 tsp. salt and 1/4 tsp. pepper total. Toss panko with remaining 1 Tbsp. oil in a small bowl. Sprinkle panko mixture evenly onto salmon fillets, then dust with smoked paprika.
  • After asparagus has baked for 5 minutes, remove baking sheet from oven. Place prepared salmon fillets skin side down on empty half of baking sheet. Return to oven and bake until salmon is firm but still pink in the center and asparagus is tender, 14-16 minutes more for medium rare salmon. Divide salmon and asparagus among four plates and top with tarragon.

4 6- to 7-ounce skin-on salmon fillets
1/2 cup low-fat mayonnaise
1/4 cup Dijon mustard
1/4 cup honey
2 tablespoons finely chopped fresh chives, plus more for garnish
Kosher salt and freshly ground white pepper

Steps:

  • Preheat the oven to 375˚. Line a baking sheet with foil and lightly coat with cooking spray. Lay the salmon skin-side down on top. Set aside.
  • Combine the mayonnaise, mustard, honey, chives and a pinch each of salt and white pepper in a medium bowl and stir to thoroughly combine. Remove half of the sauce to a separate bowl and set aside for serving. Season the salmon with salt and white pepper and spoon the remaining sauce over the fish, spreading it evenly all over the top and sides of each fillet.
  • Roast just until the fish is opaque in the center, about 7 minutes. Switch to the broiler setting. Broil the fish until browning in spots, 6 to 8 minutes. (Keep your eye on it to avoid burning.) Garnish with chives and serve with the reserved sauce.

From Bon Appetit's February, 1994 issue...I have made this recipe SO many times and always with good results. One of my all-time favorites. I am not normally a fan of salmon due to the "fishy" taste...but this recipe changed my mind. The sauce is awesome--a friend asked if he could take the leftover sauce home and just eat it with a spoon by itself! Nice dish for entertaining but really simple if you just want to spoil your loved ones. :-) This was on a menu in Bon Appetit with a Potato, Tomato and Onion Gratin that I am also posting, which is equally as good. Enjoy!

3/4 cup creole mustard or 3/4 cup other coarse grain mustard
4 teaspoons Worcestershire sauce

Steps:

  • For sauce: Combine all sauce ingredients in a heavy medium saucepan. Simmer until very thick, stirring frequently, about 5 minutes. (Can be prepared one day ahead; cover and refrigerate).
  • For fish: Line large baking pan with foil. Arrange fish, skin side down, in a single layer on foil. Mix the butter, brown sugar, soy sauce, fresh lemon juice and dry white wine in a bowl. Pour over fish. Cover fish and refrigerate at least one hour and up to six hours.

1 (2 -3 lb) salmon fillets, 1 1/2-inches thick
3 tablespoons extra virgin olive oil
1 pinch kosher salt (coarse)
1 pinch fresh ground black pepper
1/2 cup mayonnaise
1/2 cup sour cream
3 tablespoons fresh parsley leaves, minced
2 tablespoons dijon-style mustard
2 tablespoons fresh dill weed, minced
2 teaspoons fresh lemon juice

Steps:

  • Preheat oven to 350 degrees F.
  • Line the bottom of an ungreased baking pan with aluminum foil.
  • Wash salmon and pat dry. Rub with olive oil, sprinkle with coarse salt and pepper, and place skin-side down onto rack.
  • In a small bowl mix together mayonnaise, sour cream, parsley, Dijon mustard, dill weed, lemon juice, salt, and pepper.
  • Cover bowl with plastic wrap and refrigerate for at least 3 hours before serving.
  • Bake salmon, uncovered, 12 to 15 minutes or until a meat thermometer registers an internal temperature of 140 to 145 degrees F (salmon will be slightly opaque in thickest part).
  • NOTE: During this time the salmon continues to cook (meat temperature will rise 5 to 10 degrees after it is removed from the oven) and the juices redistribute.
  • Carefully remove salmon from pan and transfer onto individual serving plates.

1 garlic clove, minced
10 ounces fresh mahi mahi
1/2 tablespoon ground black pepper
1 tablespoon unsalted butter

1/4 teaspoon salt
1/2 teaspoon Worcestershire sauce (optional)
1 scallion, chopped
1 teaspoon Dijon mustard

Steps:

  • Preheat oven to 375 deg F.
  • Heat butter in small skillet on medium heat.
  • Add garlic and heat for 1 minute.
  • Add honey, worcestershire and mustard, cook for an additional minute.
  • Add lemon juice and allow to cool in refrigerator for 10 minutes, or until mixture is thick.
  • Chop scallions and basil.
  • Cut fish into 2oz portions.
  • Pinch a piece of foil so that it has four raised edges to trap the sauce.

Steps:

  • Pre heat oven to 180c
  • For the sauce: in a mixing bowl combine sour cream, dill, mustard and season with salt and pepper.
  • For Salmon: Line a baking tray with baking paper, rub the salmon around in the sauce so it is coated. Place on tray and bake in the oven for 8-10 mins. Every now and then spoon some more sauce onto the salmon.
  • For noodles: cook noodles in pan of simmering water for the designated time. Once cooked drain and allow to steam. Heat a medium sized frying pan, add coconut oil and throw in the onion and garlic and cook for 1-2 mins before adding the noodles. Add any remaining sauce from the salmon cook for 1-2 mins just to coat the noodles in sauce and warm through. To serve: Serve the noodles with the salmon flaked through or whole, add the greens or your choice.

Combine the mayonnaise, mustard, honey and chives in a medium bowl and stir to thoroughly combine. Reserve half of the sauce. Spoon the remaining sauce over the fish, spreading it evenly all over the top and sides of each fillet. Sprinkle with salt and pepper. Roast just until the fish is opaque in the center, 7 minutes. Increase the oven to broil. Broil the fish for 6 to 7 minutes, but keep your eye on it to avoid overcooking. Garnish with chives and serve with the reserved sauce. 3 tablespoons fresh lemon juice
1 tablespoon lemon, rind of, Grated
2 tablespoons Dijon mustard
1 1/2 teaspoons dry mustard
1/4 cup vegetable oil
1 cup breadcrumbs, Fresh
1/3 cup pommery mustard
1/3 cup sour cream
1/3 cup horseradish

Steps:

  • Mix in bowl: Lemon juice, lemon rind and both mustards.
  • Slowly pour in oil and blend until medium-thick sauce forms.
  • Add breadcrumbs. (Can be made 1 day ahead and chilled).
  • Preheat oven to 375 (F) degrees.
  • Lightly grease 9x13-inch baking dish.
  • Arrange salmon in prepared dish, skin side down.
  • Press breadcrumb mixture onto fish.
  • Bake salmon until cooked through and golden brown, about 18 minutes.
  • Using large spatula as aid, transfer salmon fillets to platter.
  • Serve, passing the following mustard sauce separately.

  • Combine Mustard Sauce ingredients, mix with whisk in bowl and serve with prepared salmon.

1 Cup whipping cream
3/4 Cup creole mustard or any other coarse grained mustard
4 Tsp Worcestershire sauce
1 Tbsp Dijon mustard
3/4 Tsp ground pepper
1/2 Tsp dried basil
1/4 Tsp ground white pepper
1/4 Tsp cayenne pepper
Fish
2 1 1/2 Pound center-cut salmon fillets
1/4 Cup butter, melted
3 Tbsp golden brown sugar
3 Tbsp Soy sauce
2 Tbsp fresh lemon juice
2 Tbsp dry white wine
1 Cup sour cream

Steps:

  • DIRECTIONS 1 For Sauce: Combine all ingredients in heavy medium saucepan. Simmer until very thick, stirring frequently, about 5 minutes. (Can be prepared 1 day ahead. Cover and refrigerate.) 2 For Fish: Line large baking pan with foil. Arrange fish skin side down in single layer on foil. Mix butter, brown sugar, soy sauce, fresh lemon juice and dry white wine in bowl. Pour over fish. Cover fish and refrigerate at least 1 hour and up to 6 hours. 3 Preheat oven to 400 F. Uncover fish and bake until just cooked through, basting occasionally with pan drippings, about 18 minutes. 4 Meanwhile, rewarm sauce over low heat, stirring occasionally. Number Of Ingredients 11

1 (2- to 3-pound) salmon fillet, 1 1/2-inches thick
3 tablespoons extra-virgin olive oil
Coarse kosher salt
Freshly ground black pepper
1/2 cup mayonnaise
1/2 cup sour cream
3 tablespoons minced fresh parsley leaves
2 tablespoons Dijon-style mustard
2 tablespoons minced fresh dill weed
2 teaspoons freshly squeezed lemon juice
Salt and freshly ground pepper to taste

Steps:

  • Preheat oven to 350 degrees. Line the bottom of an ungreased broiling pan with aluminum foil and spray broiler rack with vegetable-oil cooking spray. Wash salmon and pat dry. Rub with olive oil, sprinkle with coarse salt and pepper, and place skin-side down onto rack. In a small bowl mix together mayonnaise, sour cream, parsley, Dijon mustard, dill weed, lemon juice, salt, and pepper; cover bowl with plastic wrap and refrigerate for at least 3 hours before serving. Bake salmon, uncovered, 8 to 12 minutes or until a meat thermometer registers an internal temperature of 140 to 145 degrees F (salmon will be slightly opaque in thickest part). NOTE: During this time the salmon continues to cook (meat temperature will rise 5 to 10 degrees after it is removed from the oven) and the juices redistribute. Carefully remove salmon from pan and transfer onto individual serving plates. Serve with the cold mustard dill sauce. Approximately cooking times for salmon: 1/4 to 1/3-inch - 3 to 4 minutes 1/2 to 3/4-inch - 4 to 6 minutes 1 to 1 1/2-inch - 8 to 12 minutes
