20 years ago I worked the graveyard shift in a hotel restaurant in town. This was one of the most popular items on the menu with the late night drinkers.

2 slices bacon
1 slice bread
1 teaspoon butter
1 ripe banana
2 slices cheese (a sharp or tasty brand)

Steps:

  • Cook bacon under a grill (medium-high) until crispy.
  • Toast bread and then butter it while hot.
  • Place bacon on top of toast.
  • Slice banana and place on top of the bacon.
  • Then top with cheese.
  • Place under the grill (medium-high) until golden and bubbly.
  • Slice into 3 fingers and serve.

These sound a bit odd but are SO yummy. My family have been serving these for years at BBQs and I can't believe this hasn't already been suggested as a recipe! Anyway, give it a try and, hopefully, you'll love it as much as we do! I've said it serves 4 (2 a piece), but in my family this would only serve 2!

2 ripe bananas (you may need less depending on their size)
8 slices smoked streaky bacon (it needs to be streaky)

Steps:

  • Skin the bananas, cut the ends off and slice into approximately 4 pieces (you ideally need to cut them to the approximate width of your bacon, so depending on the size of your bananas you could get more or less slices).
  • Wrap each slice of banana in one piece of streaky bacon. Hold in place with a cocktail stick.
  • BBQ until bacon is cooked through (we like ours well cooked so the bacon is crispy).
  • Serve!

1 can pineapple tidbits
1 cup brown sugar
4 tablespoons margarine
1 cup water
12 pieces egg roll wraps
1/2 cup oil

Steps:

  • Peel and slice bananas into four lengthwise.
  • Wrap bananas in eggroll wrapper and fry until golden brown.
  • Set aside.
  • Boil sugar and water for 20 minutes or until thick.
  • Add pineapple tidbits.
  • Simmer until mixture thickens.
  • Add margarine.
  • Stir to melt.
  • Pour on fried bananas.

3 bananas, cut into 1/2-inch slices, or more to taste
10 slices bacon, cut in half

Steps:

  • Wrap each banana slice with a piece of bacon.
  • Fry wrapped banana in a skillet until bacon is desired crispness, 15 to 30 minutes. Remove wrapped bananas from skillet with a toothpick and place on a serving dish.
