PASTA WITH MUSSELS IN TOMATO SAUCE

Semolina linguine is a traditional and wonderful pasta to use. But you can make the dish with whole-wheat or gluten-free pasta; both are getting better and better. Look for a flat noodle like tagliatelle, fettuccine or linguine. If you use whole-wheat or gluten-free pasta, make sure not to overcook it. My rule of thumb is to check for doneness a minute before the suggested cooking time on the package; noodles should be cooked al dente.

1 can chopped or whole tomatoes (14.5 ounces)
3 fat garlic cloves; 1 crushed, 2 minced
1 shallot, chopped
1/2 cup dry white wine
2 pounds mussels, rinsed, scrubbed and beards removed
2 tablespoons extra-virgin olive oil
1/4 teaspoon red pepper flakes
2 teaspoons chopped fresh thyme or marjoram, or both
Pinch sugar
Salt to taste
3/4 pound linguine or other pasta
1/4 cup chopped flat leaf parsley

Steps:

  • Pulse tomatoes with juices in food processor just a few times to break down into a coarse purée; set aside. Bring large pot of water to boil for pasta.
  • Meanwhile, in a wide skillet or saucepan with lid, combine crushed garlic clove and shallot with white wine. Bring to a boil and add mussels. Cover and cook, shaking pan from time to time, 2 to 4 minutes, or until mussels open up. Check mussels after 2 minutes; transfer open mussels to a bowl using tongs. Cover pan again, wait another minute, and repeat until all mussels have opened.
  • Leave mussels to cool in bowl until easily removed from shells. Remove half from shells and leave other half intact. Taste a mussel; if it is sandy, give them all a very quick rinse and drain in a colander. Transfer to a bowl and keep covered while you make tomato sauce.
  • Place a strainer over another bowl, line with cheesecloth and strain the liquid in the pan into bowl. Reserve 1/2 cup. Rinse and dry pan.
  • Heat olive oil over medium heat in pan and add minced garlic and red pepper flakes. Cook, stirring, just until fragrant, about 30 seconds to 1 minute. Add tomatoes, thyme or marjoram (or both), and sugar.
  • Turn heat up to medium-high and cook, stirring often, 5 to 10 minutes, until tomatoes have cooked down slightly. Add 1/2 cup broth from mussels, stir together and bring to a simmer. Taste and add salt as needed (you may not need to add any). Tip all mussels, shelled and unshelled, into sauce, cover and turn heat to very low or remove from heat if not serving right away. Keep warm while you cook pasta.
  • Warm a large bowl for the pasta. When water for pasta comes to a rolling boil, salt generously and add pasta. Cook al dente, following the directions on the package. Drain and toss in the warm bowl with tomato sauce, mussels and parsley. Serve right away.

I love seafood and always have a bag, or two, of mussel meat in the freezer. It's fairly inexpensive and is usually found in a case by the fresh fish. This cooks up really quickly, so have everything prepped before starting.

1 ½ ounces linguine pasta
4 ounces frozen mussel meat
4 teaspoons unsalted butter, divided
3 ounces cremini mushrooms
freshly ground black pepper to taste
1 large clove garlic, minced
¼ cup dry white wine
1 pinch red pepper flakes
⅓ cup light whipping cream (18%)
½ lemon, zested

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook linguine at a boil until tender yet firm to the bite, about 11 minutes.
  • Place mussel meat in a fine-mesh strainer and rinse thoroughly with cold water.
  • Melt 1 teaspoon butter in a medium skillet over medium-low heat. Gently warm the mussels until they release their water, about 3 minutes. Remove to a bowl and set aside.
  • Wipe out the skillet with paper towels. Melt remaining 3 teaspoons butter in the skillet. Cut any large mushrooms into smaller pieces. Add to the skillet and sprinkle with pepper. Cook until starting to soften, 3 to 5 minutes. Add garlic and cook for 1 minute. Pour wine into the skillet, add red pepper flakes, and cook until wine has reduced by half, 2 to 3 minutes. Pour in cream and add mussels. Heat until warmed through, 1 to 2 minutes.
  • Use tongs to lift linguine out of the pot and add to the skillet with some of the cooking water. Toss to coat with sauce. Plate and garnish with lemon zest.

This is a great pasta recipe with mussels. You can use all mussels or half mussels and half clams. Use as little or as much chile as you can stand.

3 tablespoons olive oil, divided
¼ onion, chopped
1 clove garlic, minced
1 cup tomato sauce
salt and ground black pepper to taste

25 mussels, cleaned and debearded
1 splash dry white wine
20 clams in shell, scrubbed
½ teaspoon red pepper flakes, or to taste
2 tablespoons chopped fresh parsley, or to taste

Steps:

  • Heat 1 tablespoon olive oil in a saucepan over medium heat and cook onion until soft and translucent, 3 to 5 minutes. Add minced garlic and cook until fragrant, about 30 seconds. Add tomato sauce, season with salt, and simmer over low heat until thickened, about 15 minutes.
  • Heat 1 tablespoon olive oil in a skillet and cook peeled garlic for 1 minute. Add mussels and cook until they open, about 8 minutes. Transfer mussels to a bowl. Pour in white wine and allow to evaporate. Remove garlic, but save cooking liquid.
  • Heat 1 tablespoon olive oil in a separate skillet and cook clams until they open, about 8 minutes. Remove 1/2 of the mussels and 1/2 of the clams from their shells. Discard any unopened shells. Add all mussels and clams, with and without shells, and cooking liquid to the tomato sauce. Season with red pepper flakes and simmer for a few minutes.
  • Meanwhile, bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Drain and add spaghetti to tomato sauce. Mix in parsley and season with salt and pepper. Serve with Parmesan on the side.

3 to 4 ounce can drained smoked mussels, or oysters
2 1/2 ounce can smoked sardines packed in oil
1 tablespoon capers
Large handful chopped parsley
2 tablespoons lemon juice
2 tablespoons olive oil
1/4 cup sliced scallions
Salt and crushed red pepper flakes

Steps:

  • Bring large pot of water to a boil and boil pasta. Meanwhile prepare the ingredients: Coarsely chopping the mussels, sardines, capers and parsley and adding them to the bottom of a mixing bowl. Add lemon juice and olive oil and season to taste with salt and crushed red pepper.
  • When pasta is done, drain and shake dry and add to the bowl; toss with scallions, reserving some for garnish. Serve warm.
  • Refresh leftovers with vinaigrette.

12 ounces campanelle pasta (or other short pasta)
1 pound mussels, scrubbed and debearded

Steps:

  • Butterfly the shrimp: Peel the shrimp, then cut along the curved side with a small sharp knife, about three-quarters of the way through. Devein the shrimp and set aside.
  • Bring a large pot of salted water to a boil. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion and celery and cook until softened, about 4 minutes. Add the wine and cook until reduced, 1 to 2 minutes. Season with 1/2 teaspoon salt and the red pepper flakes. Add the tomatoes and bring to a simmer; cook until slightly thickened, 10 to 12 minutes.
  • Meanwhile, add the pasta to the boiling water and cook as the label directs for al dente. Reserve 1/2 cup cooking water, then drain.

2 tablespoons extra-virgin olive oil, plus more for pasta water
2 shallots, minced
4 cloves garlic, minced

1/2 pound clams
2 sprigs tarragon, leaves stripped
1 sprig thyme, leaves stripped
1 sprig fresh rosemary
1/2 cup dry white wine
12 ounces fresh fettucine

Steps:

  • In a large stock pot, bring salted water to a boil. Debeard mussels. Set aside.
  • In a large saute pan, over high heat, combine the butter and olive oil. Add the shallots and garlic and cook for 1 to 2 minutes until translucent. Do not brown. Add the chili flakes and stir to combine.
  • Add the reserved mussels, clams, tarragon, thyme, and rosemary and continue to saute until herbs begin to turn fragrant. Deglaze with white wine and season with salt and pepper. Cover the pan and continue to cook over high heat until the shellfish have opened, about 3 to 4 minutes.
  • Meanwhile, add a couple tablespoons of salt and a drizzle of olive oil to the boiling water. Add the pasta and cook until al dente. Drain. Remove cover from saucepan containing the shellfish and discard the sprig of rosemary. Taste the sauce and adjust seasoning, if necessary. Add the cooked pasta, chopped parsley and tarragon, and Parmesan. Toss with sauce and shellfish until well blended. Serve immediately.

2 1/2 lbs mussels
2 garlic cloves
4 tablespoons flat leaf parsley, leaves
7 ounces unsalted butter
1 tablespoon extra virgin olive oil
1/2 cup white wine
2/3 cup heavy cream

Steps:

  • Scrub the mussels. Peel and finely chop the garlic. Finely chop the parsley.
  • Heat half the butter with the oil, then add the garlic and mussels.
  • Pour in the wine, season, cover and cook over a high heat until the mussels open.
  • Drain the mussels, keeping the cooking liquid. Remove the mussels from the shells, and discard the shells and any that haven't opened.

4 pounds mussels (preferably cultivated),cleaned and steamed , then shucked

Steps:

  • Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then sauté chorizo and shallots, stirring, until chorizo is golden brown on edges, about 4 minutes. The best part of a big pot of mussels is arguably the broth, especially when it features plenty of garlic and wine. Here, the mussels and their broth - combined with ripe summer tomatoes - make a heady, rich sauce for pasta. A topping of toasted garlicky bread crumbs run through with fried capers gives the mixture texture and tang. This is just as good warm as it is hot, so feel free to make it up to an hour in advance, adding the herbs just before serving.

8 ounces calamarata, rigatoni or other short pasta
4 tablespoons extra-virgin olive oil
2 tablespoons drained capers, patted dry
3 garlic cloves, 1 minced, 2 thinly sliced
1/3 cup panko bread crumbs
Large pinch of red-pepper flakes
2 cups diced ripe, fresh tomatoes (2 medium tomatoes)
Freshly ground black pepper, as needed
Fresh lemon juice, to taste
1/2 cup dry white wine
3 large sprigs fresh oregano or marjoram
2 pounds mussels, rinsed and debearded
1 tablespoon unsalted butter, at room temperature, cut into small pieces
1/4 cup torn fresh basil or mint

Steps:

  • Bring a medium pot of heavily salted water to a boil. Add pasta and cook according to package directions until 2 minutes shy of al dente. Drain.
  • As pasta cooks, prepare the bread crumbs: In a large pot, heat 3 tablespoons oil over medium heat. Add capers and minced garlic, and let sizzle for 30 seconds. Add bread crumbs, and fry until both crumbs and capers are golden brown, about 2 minutes. Scrape the crumbs and capers onto a plate, and season to taste with salt.
  • Add remaining tablespoon oil to pot and let it get hot. Add sliced garlic and red-pepper flakes, and let sizzle until garlic is golden at the edges, 1 to 2 minutes. Stir in tomatoes and a pinch of salt and pepper. Cook until tomatoes have softened and start to lose their shape, about 6 minutes. Use a slotted spoon to transfer tomato solids to a small bowl, add lemon juice to taste, and set aside.
  • Add wine and oregano to the pot and bring to a simmer. Add mussels, cover and cook over medium heat, shaking the pot occasionally, until mussels have opened and are cooked through, about 4 to 7 minutes. Transfer mussels with a slotted spoon to a large bowl, and let cool slightly. Discard any unopened mussels.
  • Simmer the mussels liquid until reduced to a glaze, about 5 minutes. Discard oregano sprigs.
  • When mussels are still hot (but not too hot to handle), pull meat from shells and add to the pot with reduced mussel broth (discard shells). Add pasta, tomatoes and butter, and toss well. Taste and add more lemon juice and salt if needed.
  • Transfer mixture to a shallow serving bowl and toss with herbs. Top with bread crumb-caper mixture and serve.

1 pound of mussels, beards removed
2 cups fresh Italian plum tomatoes diced or one 14 ounce can of diced tomatoes with juice
10 ounce can of clams with juice
4 large cloves of garlic, peeled and minced
26 ounce jar of Bertolli's pasta sauce with olives
1 pound of penne pasta

Steps:

  • In a large pot of boiling water cook pasta according to package directions. In the mean time, in a large non-stick skillet, saute the garlic in olive oil until fragrant. Add shrimp and cook until just pink in the center. Set aside. In a large pot of boiling water, cook the mussels until they open, about 6 minutes. Discard any that do not open. While the mussels and pasta are cooking, using the same skillet used to cook the shrimp, heat the pasta sauce, clams with juice, diced tomatoes with juice. Bring to a simmer, do not boil. When the mussels are done, shuck and add to sauce. Just before the pasta is done, add the shrimp to the sauce to heat. Serve sauce over pasta.

1/2 pound rigatoni or other cut pasta
2 tablespoons extra virgin olive oil, more for drizzling
2 cloves garlic, peeled and smashed
1/4 teaspoon red chili flakes, or to taste
1 cup cooked cannellini or borlotti beans, drained
2 tablespoons dry white wine
1 cup chopped fresh parsley

Steps:

  • Put mussels in a large pot with a lid. Cover, turn heat to medium-high and when you hear the mussel liquid boiling, reduce heat to maintain a steady bubble; you will hear it and see steam escaping. Shake pot now and then; when mussels open, remove them. Let cool slightly and shuck, reserving cooking liquid. When liquid has cooled, strain it.
  • Meanwhile, bring a pot of salted water to a boil, cook pasta until not quite done (figure about 2 minutes short of where you would usually cook it), drain and set aside.
  • Put oil in a large skillet over medium-high heat; add garlic and chili flakes and cook for about 1 minute. Add beans, wine, pasta and mussels; reduce heat to medium-low and stir to combine. Add as much reserved mussel liquid as mixture can accommodate without becoming too soupy. Cook, stirring gently, until pasta is fully cooked and everything is warmed through; add more liquid if you like. Adjust seasoning as needed, drizzle with a bit more olive oil if you like, sprinkle with parsley and serve.

¼ cup olive oil
salt to taste
½ (16 ounce) package angel hair pasta
½ cup Chardonnay white wine
1 pound fresh mussels
½ cup salted butter
1 head garlic, peeled and minced
1 shallot, minced
1 small French baguette, halved lengthwise
1 teaspoon smoked paprika, or to taste
1 teaspoon dried basil, or to taste
3 jalapeno peppers, diced, or more to taste
½ cup grated Parmesan cheese
2 teaspoons salt

Steps:

  • Fill a medium pot halfway with water and bring to a boil. Add 2 tablespoons olive oil and salt. Carefully break pasta in half and place into the boiling water. Cook until tender yet firm to the bite, about 4 minutes. Drain in a colander and toss with remaining olive oil. Set aside and allow pasta to cool.
  • Fill a large pot 1/3 of the way with water. Add 1/4 cup wine and bring to a boil. Carefully add mussels and cook until shells have opened up, about 5 minutes. Remove from heat, measure 3/4 cup cooking liquid into a bowl, and cover the pot.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Melt 1/3 of the butter in a saucepan. Saute 1/3 of the garlic and shallot until translucent, 3 to 5 minutes. Spread over the baguette halves. Spoon melted butter evenly over both halves.
  • Bake in the preheated oven until hot, about 5 minutes. Broil until top is browned, about 2 minutes. Sprinkle paprika and basil on top.
  • Melt remaining butter in the same saucepan. Saute remaining garlic, shallot, and jalapeno peppers until soft, about 5 minutes. Stir in remaining 1/4 cup wine and reserved cooking liquid. Cook and stir until sauce is reduced by half, about 5 minutes. Add pasta; toss well to combine.
  • Remove pasta from heat. Add Parmesan cheese and salt. Toss together. Divide pasta among serving plates. Arrange mussels around the pasta. Serve with sliced garlic bread.

3 pounds mussels, well washed
Salt and freshly ground black pepper
8 ounces rigatoni or other cut pasta
2 tablespoons extra-virgin olive oil, plus more for drizzling
2 cloves garlic, peeled and smashed
1/4 teaspoon red chile flakes, or to taste
1 cup cooked cannellini or borlotti beans, drained
2 tablespoons dry white wine
1 cup chopped fresh parsley

Steps:

  • Put mussels in a large pot with a lid. Cover, turn heat to medium-high and when you hear the mussel liquid boiling, reduce heat to maintain a steady bubble; you will hear it and see steam escaping. Shake pot now and then; when mussels open, remove them. Let cool slightly and shuck, reserving cooking liquid. When liquid has cooled, strain it.
  • Meanwhile, bring a pot of salted water to a boil, cook pasta until not quite done (figure about 2 minutes short of where you would usually cook it), drain and set aside.
  • Put oil in a large skillet over medium-high heat; add garlic and chile flakes and cook for about 1 minute. Add beans, wine, pasta, and mussels; reduce heat to medium-low and stir to combine. Add as much reserved mussel liquid as mixture can accommodate without becoming too soupy.
  • Cook, stirring gently, until pasta is fully cooked and everything is warmed through; add more liquid if you like. Adjust seasoning as needed, drizzle with a bit more olive oil if you like, sprinkle with parsley and serve.

Easy and flavorful. A rich creamy broth which can be served over angel hair pasta and crusty bread slathered with a herb butter. Now you can make your own butter, however, you can also buy a stick of herb butter right from any major grocery store which is great to keep on hand. The mussels open in a light creamy broth with tons of flavor, served in a large bowl so the bread and pasta can soak up all the good sauce. A fair amount of ingredients, but nothing hard. This recipe is for 8, but you can easily cut it in half.

1 lb angel hair pasta
4 lbs mussels (I use anywhere between 3-4 lbs, about 1/3-1/2 lb per person)
1 large fennel bulb, core removed and thin sliced
1 large onion, cut in quarters and thin sliced
1 large leek, thin sliced
2 tablespoons minced garlic
1 (15 ounce) can diced tomatoes
1 1/2 cups white wine
1/2 cup brandy (I just get one of those little "airline" bottles if you don't keep any on hand, works great)
2 cups vegetable stock
1 cup heavy cream
1/2 teaspoon red pepper flakes
1/4 cup fresh parsley, fine chopped
1/4 cup fresh chives
1 lemon (1/2 squeezed, 1/2 cut in slices)
1/8 cup butter
salt
pepper
8 teaspoons herb butter (as I mentioned, I buy mine right at the grocery store, or you can make your own favorite)
8 slices Italian bread (toasted)
1/2 teaspoon paprika

Steps:

  • Base Flavors -- In a large sauce pan or pot, add the butter and melt on medium high heat. Add the garlic, fennel, onion and leek and cook until slightly tender (about 4-5 minutes). Deglaze the pan with the brandy (and remember to remove from the heat when you add alcohol), then add the wine and broth, tomatoes, red pepper, lemon juice, salt (go lightly mussels have a salty quality) and pepper. Let the broth warm up and cook another 5 minutes on medium (not boiling, just a light simmer).
  • Mussels -- Add in the mussels and cover. They will take around 10 minutes for that many mussels, stir occasionally. Cook until they all open.
  • Just remember - Don't add any mussels to the pot that are already open (and when tapped, they don't close), and if they are cracked, toss them.
  • Finishing -- As the mussels cook, toast up the bread and slather with the herb butter and a dash of the paprika. Cook the pasta according to directions (angel hair takes only minutes).
  • Mussels -- Finish the mussels by adding in the parsley, chives and cream. Keep on medium and cook another minute or two until the sauce is warm. Stir to get all the flavors mixed throughout.
  • Serving -- Just serve the mussels in a large serving bowl with all the broth. Make sure each person has a bowl for their pasta and plenty of the broth from the mussels and crunchy bread to soak up all that flavor. OUTSTANDING!
  • NOTE: As one reviewer mentioned they didn't make the bread, but did suggest that you do. The pasta and bread is key for this. It is a thinner sauce almost like a Japanese noodle bowl so the pasta and bread are used to soak up all the sauce and flavors. Even though it is creamy, the sauce is thinner which is why the bread and pasta are key for this.

Mussels:
2-3 lbs mussels
1 tbsp olive oil
1 tsp garlic
1/2 cup white wine
Sauce:
3 (15-ounce) cans diced tomatoes in juice (one or 2 can be fire roasted tomatoes)
6 tablespoons olive oil
2 bay leaves
2-4 cloves garlic, to taste
1/2 or 1 onion diced
1/2 medium carrot, finely diced
1 stalk celery, finely diced
2 teaspoons dried oregano
3 tablespoons tomato paste
1/2 cup white wine
1 teaspoon kosher or sea salt
1 teaspoon freshly ground black pepper
2 teaspoons crushed red pepper
2 (8-ounce) bottles clam juice or 1 15 ounce can of BumbleBee Italian Style White Clam Sauce

Steps:

  • Sauce: In a 5-quart Dutch oven heat the olive oil over medium heat until it is fragrant. Add the onions, carrots, and celery and cook 3 minutes. Add red pepper, garlic, bay leaves and oregano. Cook the vegetables until they are very brown, about 15 to 20 minutes. Stir occasionally, just enough to prevent them from scorching. Add the crushed tomatoes with their juice, the tomato paste, salt and pepper, and the white wine and clam juice and bring to a boil. Lower the heat, and simmer, partially covered until the sauce level has reduced by 2 or 3 inches and the sauce is thick enough to coat the back of a spoon. Cook the sauce for about 1 hour, stirring occasionally so it doesn't stick. Remove from heat, cool down in the pot, then when at room temperature, transfer to a sealed plastic container and refrigerate until ready to use. This sauce will keep 10 days in a well-sealed container in the refrigerator. Mussels and pasta: Cook garlic and a bit of onion in oil, add white wine and mussels and steam 5-7 minutes. Meanwhile, cook pasta. Toss everything and serve.

8 ounces Calamarata, rigatoni or other short pasta
4 tablespoons Extra-virgin olive oil
2 tablespoons Drained capers, patted dry
2 Garlic cloves, 1 minced, 2 thinly sliced
1/3 cup Panko bread crumbs
1 Large pinch of ted-pepper flakes
2 cups Diced ripe, fresh tomatoes (2 medium tomatoes)
1 Freshly ground black pepper, as needed
1 Fresh lemon juice, to taste
1/2 cup Dry white wine
3 Large sprigs fresh oregano or marjoram
2 pounds Mussels, rinsed and debearded
1 tablespoon Unsalted butter, at room temperature, cut into small pieces
1/4 cup Torn fresh basil or mint

Steps:

  • Bring a medium pot of heavily salted water to a boil. Add pasta and cook according to package directions until 2 minutes shy of al dente. Drain.
  • As pasta cooks, prepare the bread crumbs: In a large pot, heat 3 tablespoons oil over medium heat. Add capers and minced garlic, and let sizzle for 30 seconds. Add bread crumbs, and fry until both crumbs and capers are golden brown, about 2 minutes. Scrape the crumbs and capers onto a plate, and season to taste with salt.
  • Add remaining tablespoon oil to pot and let it get hot. Add sliced garlic and red-pepper flakes, and let sizzle until garlic is golden at the edges, 1 to 2 minutes. Stir in tomatoes and a pinch of salt and pepper. Cook until tomatoes have softened and start to lose their shape, about 6 minutes. Use a slotted spoon to transfer tomato solids to a small bowl, add lemon juice to taste, and set aside.
  • Add remaining tablespoon oil to pot and let it get hot. Add sliced garlic and red-pepper flakes, and let sizzle until garlic is golden at the edges, 1 to 2 minutes. Stir in tomatoes and a pinch of salt and pepper. Cook until tomatoes have softened and start to lose their shape, about 6 minutes. Use a slotted spoon to transfer tomato solids to a small bowl, add lemon juice to taste, and set aside.
  • Simmer the mussels liquid until reduced to a glaze, about 5 minutes. Discard oregano sprigs.
  • When mussels are still hot (but not too hot to handle), pull meat from shells and add to the pot with reduced mussel broth (discard shells). Add pasta, tomatoes and butter, and toss well. Taste and add more lemon juice and salt if needed.
  • Transfer mixture to a shallow serving bowl and toss with herbs. Top with bread crumb-caper mixture and serve.

1 pound angel hair pasta
2 cups chopped tomatoes, canned or fresh
1/2 cup chopped Italian parsley

  • 1. Wash the mussels and remove the "beard." Place the mussels, with just the water that clings to them, in a covered pot over high heat until they just open, about 2 to 3 minutes. Remove from the heat and set aside. 2. Meanwhile, bring a gallon of well-salted water to a boil. 3. Remove the mussels from their shells. Discard the shells, reserve the mussels in a bowl and reserve the juice in the pot. 4. Heat the juices over medium-high heat and reduce the quantity by half. 5. Add the pasta to the boiling water. 6. Add the tomatoes to the mussel juice and simmer. Season with salt and pepper. Add the parsley. 7. Cook the pasta until it is al dente, about 6 to 8 minutes. 8. In a large bowl, toss the pasta with the tomato mixture and the mussels. Serve immediately.
