PESTO MOZZARELLA SKEWERS
A beautiful and tasty way to use the widely available fresh mozarella balls. I use homemade Pesto, but you can find it in jars in the Gourmet section. Arranged on toothpicks, these bite-size appetizers are festive and colorful.

Steps:
- Mix pesto, olive oil, salt and pepper.
- Place drained mozzarella balls in a ziplock bag and add pesto mixture.
- Gently squeeze things around in the bag so that all the balls are nicely coated.
- Place a coated mozzarella ball and a cherry tomato on each toothpick.
- To serve, arrange them in a circle on platter and garnish with olives or with fresh basil leaves.

CAPRESE SKEWERS
An elegant and easy take on a classic caprese skewer dish. Great for an appetizer at a dinner party. Serve with a small bowl of balsamic vinegar and good quality olive oil for dipping.

Steps:
- Wrap each mozzarella ball with a basil leaf.
- Thread a tomato half, a basil-wrapped mozzarella ball, and another tomato half onto a skewer. Repeat until all tomatoes are on skewers. Sprinkle with salt and pepper.

MOZZARELLA SKEWERS
Steps:
- 10-inch bamboo skewers, soaked in water at least 1 hour prior to grilling
- Stir together salad dressing, herb marinade packet, and 1/2 cup water. Set aside.
- Place cheese and vegetables in a resealable bag and pour in marinade. Seal and marinate in refrigerator for 1 to 4 hours.
- Thread the skewers by alternating vegetables, cheese, and bread.
- Brush bread with some of the leftover marinade mixture and save the rest for garnish.
- Set up grill for direct cooking over medium heat. Lightly oil the grilling grates and place the skewers on the grill. Cook for 2 to 3 minutes per side, turning once. Bread should be toasted and cheese softened. Serve right off the grill drizzled with additional marinade.

MUSSEL-MAN KEBABS / SKEWERS
Something quick and different for the BBQ for all the mussel lovers out there. Preparation time does not include marination time. You could also cheat and use pre-prepared mussels.

Steps:
- Cook mussels in boiling water until they open, discard any that don't open.
- Remove meat from shells and trim beard.
- Place mussel meat with a little juice into a small bowl and cover with Worcestershire sauce.
- Leave in refrigerator around 30 minutes to marinate, lightly turning occasionally.
- Wrap each mussel with a slice of ham (just tear apart with your fingers) and thread onto the skewers.
- Place on BBQ plate or grill over low-medium temperature and pour over remaining marinade.
- Cook for a few minutes each side until ham is lightly browned.

Steps:
- Using a skewer, put 1/2 tomato, cut side up, followed by a piece of mozzarella, basil, second piece of mozzarella and finish with another tomato half. Season skewers with salt, pepper, oil and vinegar.
