This is a recipe that I came up with to sell at our local festivals. And wow what a hit. Try it the kids just love it.

Number Of Ingredients 11

1 lb ground beef
1 large onion, chopped
2 garlic cloves, chopped
1 (16 ounce) can crushed tomatoes with juice
3 tablespoons chili powder
2 teaspoons salt
1 tablespoon sugar
1 tablespoon Worcestershire sauce
1 (15 ounce) can red kidney beans (do not drain)
Fritos corn chips
grated cheddar cheese

Steps:

  • Brown beef with onions and garlic.
  • Drain off excess fat.
  • Add tomatoes, chili powder, sugar, salt and Worcestershire sauce.
  • Cover and simmer 1 hour.
  • Add beans, juice and all.
  • Simmer uncovered for 15 minutes or until thick.
  • Serve over Frito corn chips, rice or use for chili dogs.
  • Top with grated cheddar cheese for a special treat.

GENUINE FRITO PIE

Growing up in the 50's in the south, Frito Pie could be found at every drive-in, ballpark and greasy spoon cafe. It isn't put in a casserole, it isn't baked in the oven. It's eaten right out of the Frito package with a plastic spoon. The greasier the chili, the better the Frito Pie.

1 (6 1/2 ounce) individual bag Fritos corn chips
3/4 cup greasy chili
1/4 cup shredded cheddar cheese
2 tablespoons onions, finely minced
1 teaspoon prepared yellow mustard
1 plastic spoon

Steps:

  • Crunch pack of Fritos. You don't want them in crumbs but you want them broken up a bit. Slice open side of package. Pour in greasy chili. Squeeze in one hearty squirt of mustard. Sprinkle onions on top. Top it all with cheese.
  • Grab a plastic spoon and stick it in the middle and you're ready to enjoy a genuine Frito Pie.

SOUTHWEST FRITO PIE

I found this recipe in TOH Magazine, by Janet Scoggins, and I am posting for safe keeping, as I want to try it out for our football snacking time. It sounds perfect for me, as it probably isn't overly spicy/hot. I am not a fan of having my mouth on fire/numb and unable to taste things, but for those of you less whimpy, add hot peppers or cayenne pepper to taste and also any other toppings of choice.

2 lbs lean ground beef (90% lean)
3 tablespoons chili powder
2 tablespoons all-purpose flour
1 teaspoon salt
1 teaspoon garlic powder
2 cups water
1 (15 ounce) can pinto beans, rinsed and drained (optional)
4 1/2 cups corn chips
2 cups shredded lettuce
1 1/2 cups shredded cheddar cheese
3/4 cup chopped tomato
6 tablespoons finely chopped onions
sour cream and minced fresh cilantro (optional)

Steps:

  • In a Dutch oven, cook beef over medium heat until no longer pink; drain. Stir in the chili powder, flour, salt and garlic powder until blended; gradually stir in water.
  • Add the beans, if desired. Bring to a boil. Reduce heat; simmer, uncovered, for 12-15 minutes or until thickened, stirring occasionally.
  • To serve, divide chips among six serving bowls. Top with beef mixture, lettuce, cheese, tomatoes and onion; garnish with sour cream and cilantro, if desired.

1 cup prepared chili
1/4 cup shredded cheddar cheese
2 teaspoons chopped onions (optional)
mustard (optional)

Steps:

  • Assemble by heating chili until warm either in a pot on the stove or in a microwave.
  • Place corn chips in a bowl, pour over chili then top with the cheese, and onions if desired.
  • Finish with a squirt of mustard.

2 slices bacon, cut into 1 inch pieces
1 garlic clove, crushed
1 medium onion, chopped
1 lb ground chuck
1 teaspoon salt (to taste)
2 tablespoons chili powder
1/2 teaspoon ground cumin
1/3 cup tomato paste
1 1/2 cups water
1 cup canned pinto beans, drained and rinsed
5 cups Frito corn chips
1/2 lb cheddar cheese (or Monterey Jack cheese)
onion, chopped
jalapeno, diced

Steps:

  • Cook bacon in large skillet until fat is rendered.
  • Add onion and garlic and cook until onion is softened.
  • Add ground chuck and cook over medium high heat, stirring and breaking up lumps until browned, 3-4 minutes.
  • Pour off excess fat and add salt, chili powder, cumin and tomato paste.
  • Slowly add water and simmer 10 minutes, adding more water if necessary.
  • Add beans until heated through.
  • Divide corn chips among individual wide shallow bowls, top with chili. Sprinkle with cheese on top. Garnish with onion and jalepeno if desired.

1 pound ground beef
1 medium onion, chopped
2 cans (15 ounces each) Ranch Style beans (pinto beans in seasoned tomato sauce)
1 package (9-1/4 ounces) Frito corn chips
2 cans (10 ounces each) enchilada sauce
2 cups shredded cheddar cheese
Thinly sliced green onions, optional

Steps:

  • Preheat oven to 350°. In a large skillet, cook beef and onion over medium heat 6-8 minutes or until beef is no longer pink and onion is tender, breaking up beef into crumbles; drain. Stir in beans; heat through., Reserve 1 cup corn chips for topping. Place remaining corn chips in a greased 13x9-in. baking dish. Layer with meat mixture, enchilada sauce and cheese; top with reserved chips., Bake, uncovered, 15-20 minutes or until cheese is melted. If desired, sprinkle with green onions.

1 lb ground turkey
1 (1 1/4 ounce) packet taco seasoning
1 (15 ounce) can black beans
1 (10 ounce) can enchilada sauce
1 onion
2 bell peppers
1 (6 ounce) can black olives, sliced
2 cups frozen corn
1 (10 ounce) bag corn chips, chili cheese flavored
1 1/2 cups cheddar cheese, shredded
2 tomatoes, diced (optional)
2 avocados, diced (optional)
hot sauce, to taste
sour cream, to taste

Steps:

  • Sautee ground turkey and season with taco seasoning according to packet directions. Set aside.
  • Dice onion, bell pepper, tomatoes, and avocados. Slice olives. Crush 1 cup corn chips for topping and set aside.
  • In a medium bowl combine remaining corn chips, cheese, cooked meat, black beans, enchilada sauce, sauteed vegetables, olives and corn. Once well blended, place in 2 quart casserole dish.
  • Top meat mixture with crushed corn chips.
  • Bake at 375F for about 20 minutes or until heated through.
  • Serve on a bed of shredded lettuce and top with diced tomatoes and avocados, hot sauce and sour cream to taste.
