2 cups dry farfalle pasta
2 tablespoons butter
2 -3 garlic cloves (or a dash of garlic powder)
1/4 cup onion, chopped (or a dash of onion powder)
olive oil (for skillet)
2 mushrooms, chopped
1 roma tomato, chopped
1/2 cup torn Baby Spinach
1 teaspoon red pepper flakes (I just use a packet from the local pizza hut)
2 tablespoons parmesan cheese

Steps:

  • Cook pasta according to package directions.
  • While pasta is cooking, melt butter in a pan and saute garlic and onions until golden brown (If using powders add with tomato).
  • Once garlic and onions are golden brown, pour in olive oil (enough to cook with) and add chopped mushrooms and saute until browned.
  • Toss in the tomato (and garlic and onion powders if in a hurry) along with the red pepper flakes and cook until properly done, stirring occasionally.
  • Add torn baby spinach and Parmesan cheese and toss until evenly distributed and spinach is wilted. Once pasta is cooked, drain and toss in with veggie mix.
  • Stir until everything is sufficiently mixed up. Serve immediately with extra Parmesan for sprinkling.

Toss together tagliatelle, mushrooms and spinach in a parmesan and crème fraîche sauce to make a quick and low calorie dinner that takes just 25 minutes

2 tbsp olive oil
1 small onion, finely chopped
150g baby mushrooms, halved
150g tagliatelle
2 garlic cloves, crushed
200g low-fat crème fraîche
15g parmesan or vegetarian alternative, grated
120g baby spinach
½ tsp chilli flakes (optional)

Steps:

  • Heat the oil in a medium saucepan over a medium heat and fry the onion and mushrooms for 10 mins, or until softened and browned slightly. Meanwhile, cook the pasta following pack instructions.
  • Add the garlic to the pan with the mushrooms and cook for 2 mins more. Tip in the crème fraîche and parmesan, stir to combine, then add the baby spinach. Set aside.
  • Remove the pasta from the heat and drain, reserving 25ml of the water. Toss the pasta in the creamy mushroom sauce, put back on the heat and cook over a low heat until the spinach wilts, about 5 mins. Pour in enough of the reserved water to loosen slightly. Season with black pepper and finish with a sprinkle of chilli flakes, if you like.

My husband and I love sauteed spinach, sauteed mushrooms, sauteed onions, and sauteed garlic. So, we put it all together with some tomatoes to add some zip.

2 tablespoons olive oil, divided
1 medium onion, coarsely chopped
1 cup chopped portabello mushrooms
2 cloves garlic, finely chopped
1 medium tomato, chopped
1 (8 ounce) package fresh baby spinach
½ teaspoon salt, or to taste
⅛ teaspoon ground black pepper, or to taste
2 tablespoons grated Parmesan cheese, or to taste

Steps:

  • Heat 1 tablespoon oil in a wok or deep frying pan over medium heat. Add onion and saute until soft, 3 to 5 minutes, depending on how soft you like it. Add mushrooms and saute for 4 to 5 minutes. Add garlic and saute for 1 more minute. Add tomato and cook for 1 to 2 minutes. Remove mixture to a dish and keep warm.
  • Add remaining 1 tablespoon oil to the same pan over medium-high heat. Add spinach, salt, and pepper. Cook, tossing continually, until spinach begins to wilt, 1 to 2 minutes. Add onion mixture and mix until thoroughly incorporated. Continue to toss and stir until spinach is cooked to your desired doneness.
  • Sprinkle with Parmesan cheese to serve.
