ROASTED RED PEPPER AND MUSHROOM TAPENADE

Tapenade is traditionally a caper-olive paste. However, adding roasted veggies not only makes it more atractive, but also lighter and more flavorful. Serve as an appetizer on pita triangles or low-fat crackers.

1 large sweet red pepper, seeded and quartered
8 ounces fresh mushrooms, halved
2 tablespoons olive oil, divided
1 medium onion, unpeeled and halved
2 large garlic cloves, peeled and minced
1/2 cup stuffed green olive
2 tablespoons red wine vinegar
2 tablespoons finely chopped fresh basil or 2 tablespoons parsley
1/4 teaspoon salt
1/4 teaspoon black pepper
1 pinch cayenne pepper
2 (8 inch) round whole wheat pita bread, cut into triangles

Steps:

  • In a mixing bowl, toss red pepper pieces and mushrooms in 1 tablespoon of olive oil, coating well.
  • Place red peppers, mushrooms and onion on a baking sheet with cut sides down.
  • Broil on HIGH on middle rack for 20 minutes or until skins are blackened.
  • Remove from oven and let cool for 5 minutes.
  • Peel red pepper and onion, discarding skins.
  • Cut red pepper and onion into chunks.
  • Place roasted vegetables, garlic, olives, vinegar and remaining 1 tablespoon of olive oil into a food processor and process until finely chopped BUT NOT PUREE'D.
  • Transfer mixture to a bowl and stir in basil, salt, black pepper and cayenne pepper; mix well to blend.
  • Cover and chill in refrigerator until ready to serve on pita triangles or crackers.

1 lb. (2 c.) fresh sausage meat
1 c. minced onions
the turkey liver, minced (we've left this out lately)
1 lb. fresh mushrooms, trimmed, washed, and diced
1 c. pitted black olives, diced
2 "large eggs", lightly beaten
1 small clove garlic, pureed through a press
1/2 t. thyme
1/2 bay leaf, pulverized
4 c. croutons (homemade-type white bread cut in 1/2-inch dice and dried out in oven)
salt and pepper to taste

Steps:

  • Spray 9 x 13 pan with cooking spray bake at same temperature as turkey for 40-60 minutes. Break up sausage meat and saute' slowly in a frying pan until lightly browned; remove to a big mixing bowl, and pour fat into another bowl. Return 2 T. fat to pan and saute onions 6 to 8 minutes, until tender and very lightly browned; add minced liver and saute' with onion for a minute or two. Scrape onions in to bowl with sausage. In another 2 T. of oil, saute' mushrooms until pieces begin to separate from each other, then scrape into mixing bowl. Beat in the olives, eggs, garlic, and herbs. Fold in the croutons, add salt and pepper to taste. **We've made changes over the years to make a bit easier, the mushrooms are supposed to be twisted in the corner of towel or squeezed through a potato ricer to remove the juices. I usually just dice them now in the Cuisinart, that was so time consuming and we found it didn't taste much different!

A Moroccan mushroom spread that has a tomato base. Serve with a baguette that has been sliced into small pieces. Good vegetarian appetizer.

2 cups vegetable stock
2 tablespoons olive oil
1 medium onion, finely chopped
2 garlic cloves, crushed
1 lb button mushroom, finely chopped
2 tablespoons tomato paste
1 cup tomato sauce
1/2 cup basil leaves

Steps:

  • Place the stock in a saucepan and bring to a boil. Reduce the heat slightly and cook until reduced by half.
  • Heat the oil in a frying pan over medium heat and fry onion and garlic until soft. Add mushrooms and cook 1-2 minutes until softened. Add tomatoes, tomato paste, and tomato sauce and reduced stock. Bring to a boil over high heat, reduce heat and simmer 10-15 minutes or until the mixture thickens. Stir in basil leaves.

MUSHROOM AND RED PEPPER-BLACK OLIVE TAPENADE BITES



Mushroom and Red Pepper-Black Olive Tapenade Bites image

Yield 24 stuffed mushrooms

Number Of Ingredients 10

24 button mushrooms, stems removed
Salt and freshly ground black pepper
Extra-virgin olive oil (EVOO), for drizzling
1 jar (8 to 9 ounces) roasted red peppers, drained
1/4 cup fresh flat-leaf parsley leaves (a couple of handfuls)
1/4 cup kalamata olives, pitted (about 20 olives)
2 tablespoons capers, drained
1 large garlic clove, cracked
Zest and juice of 1 lemon (zest it first)
1/2 cup mascarpone cheese, for garnish

Steps:

  • Preheat the oven to 350°F.
  • Toss the mushroom caps in a bowl with some salt, pepper, and a drizzle of EVOO. Arrange the mushrooms on a baking sheet in an even layer with the gill side up. Roast the mushrooms for 10 to 12 minutes, or until they are cooked through.
  • While the mushrooms are roasting, prepare the red pepper-black olive tapenade. Place the roasted red peppers in a food processor with the parsley. Add the olives, capers, garlic, and lemon zest. Pulse the processor and grind into a paste.
  • Once the mushrooms are done roasting, squeeze the juice of the lemon over them. Place about 1/2 tablespoon tapenade in each cap. Use 2 spoons for this: One is to scoop tapenade and the other is to push it off onto the mushroom. Place the mascarpone in a sealable plastic bag. Squeeze the cheese into one of the bottom corners, and with scissors snip 1/4 inch off of that corner. Squeeze a little mascarpone on top of each tapenade-filled mushroom. Serve hot or at room temperature.

WHITE PIE WITH RICOTTA, BURRATA, PECORINO AND MUSHROOM TAPENADE

This is a sauceless option for pie. Don't have truffles? Make it without.

1 1/2 cups plus 3 tablespoons extra-virgin olive oil, plus more if needed
3 large shallots, roughly chopped
Kosher salt and freshly ground black pepper
10 large cloves garlic, roughly chopped
8 ounces Shiitake mushrooms, stemmed and roughly chopped
All-purpose flour, for the surface
One 6-ounce ball pizza dough, at room temperature
1 cup shredded low-moisture mozzarella
4 ounces robiolina cheese, rind removed, or 2 ounces cream cheese
1/4 cup finely grated Parmesan
1/4 cup finely grated pecorino
Kosher salt and freshly ground black pepper
4 ounces fresh burrata
Extra-virgin olive oil, for drizzling
1/2 cup fresh ricotta
Truffles, for serving, optional

Steps:

  • Place a pizza stone in the center rack of the oven. Preheat the oven to 475 degrees F for 1 to 2 hours before you're ready to bake the pizza to get the stone nice and hot.
  • For the mushroom tapenade: Heat 3 tablespoons of the oil in a medium skillet over high heat. Add the shallots, season with salt and cook, stirring occasionally, until they begin to caramelize, 1 to 2 minutes. Add the garlic and continue to cook, stirring occasionally, about 3 minutes. Add the mushrooms and more oil if needed, season with salt and pepper and cook, stirring occasionally, until tender, 5 to 6 minutes.
  • Combine everything in a food processor, steam in the remaining 1 1/2 cups oil and process until roughly pureed. Season with salt and pepper to taste. Set aside or keep in an airtight container in the refrigerator up to 2 weeks. Makes about 3 cups.
  • For the pizza: Generously sprinkle a flat work surface with flour. Use a rolling pin to stretch the dough into an 11-inch circle. Transfer the dough to a lightly floured pizza peel or unrimmed baking sheet so it can slide right onto the pizza stone in the oven. (I use the bottom of a baking sheet.)
  • Top the dough with the mozzarella and dollops of the robiolina. Sprinkle the Parmesan and pecorino over top. Top with a couple grinds of black pepper.
  • Turn off the oven and turn on the broiler. Use the peel or half-sheet to slide the pizza onto the pizza stone. The heat from the stone will cook the bottom of the pizza and the boiler will char and cook the top, mimicking a Neapolitan pizza oven. Bake until the bottom is cooked, the cheese is melted and the top and edges are charred, 5 to 6 minutes.
  • Place the burrata in a small bowl with a drizzle of olive oil and a pinch salt and break it up with a spoon. Place it on top of the hot pizza, along with dollops of the ricotta.
  • Drizzle with the mushroom tapenade and top with truffles if using. Slice the hot pizza and serve immediately.
