CARAMELIZED ONION, MUSHROOM AND SPINACH SANDWICH

2 tbsp unsalted butter
2 tbsp olive oil
2 large onions (thinly sliced)
Salt and pepper (to taste)
8 oz (3 cups) sliced button mushrooms
4 cups baby spinach
¼ cup crumbled feta cheese
8 slices of your favorite bread

Steps:

  • In a large frying pan, heat 1 tablespoon butter and 1 tablespoon oil over medium heat. Add onions and stir to coat with the butter and oil mixture. Spread the onions out evenly over the pan and let onions cook slowly, stirring occasionally, for 10 minutes. Turn heat up to medium high and begin to brown the onions, stirring constantly about 7 more minutes. Season with salt and pepper. Transfer caramelized onions onto a plate and set aside.
  • In another pan, heat the remaining butter and oil over medium-high heat. Add the mushrooms and sauté for 5 to 7 minutes or until liquid has evaporated and mushrooms are tender and lightly browned. Add spinach and stir until lightly wilted. Season with salt and pepper to taste.

Make-Ahead Spinach and Mushroom Breakfast Sandwiches image

We've turned the classic spinach and mushroom omelet into a delicious breakfast sandwich that you can enjoy anytime. The trick is to bake the "scrambled" eggs in the oven, and then cut out rounds for each sandwich that you can then freeze.

Nonstick cooking spray, for the pan, optional
Salted butter, at room temperature, for the pan and/or spreading, optional
10 large eggs
1/2 cup whole milk
Kosher salt and freshly ground black pepper
Extra-virgin olive oil
8 ounces cremini mushrooms, sliced
3 cups stemmed spinach
6 slices Swiss cheese (about 6 ounces)
6 English muffins, split

Steps:

  • Preheat the oven to 375 degrees. Spray a 9-by-13-inch baking pan with nonstick cooking spray or grease with butter.
  • Heat 1 tablespoon of the olive oil over medium-high heat. Add the mushrooms and cook, stirring occasionally, until wilted and beginning to brown; about 5 minutes. Add the spinach, 1 teaspoon salt and a few grinds of pepper. Cook until spinach just begins to wilt, stirring occasionally, about 2 minutes. Remove pan from heat and set aside to cool.
  • Whisk the eggs, milk, 1 teaspoon salt and a few grinds of pepper together in a large bowl. Gently whisk in the cooled mushroom mixture, then pour the egg mixture into the prepared pan. Bake until puffed and set, 15 to 20 minutes. Remove from the oven and let cool.
  • Place the English muffins cut-side up on a baking sheet and brush with some butter if using. Bake until slightly toasty, 3 to 4 minutes.
  • Once the eggs are cool enough to handle, use a large round biscuit cutter (about 3 3/4 inches in diameter) or the rim of a juice glass to cut out 6 rounds of egg. (For ways to use the leftover egg scraps, see Cook's Note.) Using an offset spatula or a butter knife, remove each egg round from the pan and place on bottom half of an English muffin. Top each with a slice of Swiss cheese and the other muffin half. Wrap each sandwich individually with aluminum foil, put in a resealable plastic bag and freeze up to 1 month or refrigerate for up to 1 week.
  • To reheat, unwrap a sandwich and place on a paper towel on a microwave-safe dish. Microwave 1 to 1 1/2 minutes, until the cheese is melted and eggs are warmed through. Alternatively, thaw a foil-wrapped frozen sandwich overnight in the refrigerator, then bake in a 425-degree F oven until warmed through and the cheese is melted, about 10 minutes.

Getting more spinach into our diet is something I've been working on lately, but not everyone likes just plain spinach. This recipe adds spinach to fried onions and mushrooms. The balsamic vinegar is wonderful but substitute a splash of lemon juice if you like. Easily doubled.

1 teaspoon olive oil
1 medium onion, sliced thinly lengthwise (any kind of onion you like)
4 ounces mushrooms, sliced
1 garlic clove, minced
2 cups spinach leaves, loosely packed
1/4-1/2 teaspoon balsamic vinegar, to taste
salt and pepper, to taste

Steps:

  • Preheat a medium saute pan on medium heat.
  • Add olive oil.
  • Add onions and mushrooms, stirring for 5-10 minutes, until golden brown, adding garlic halfway through.
  • Add spinach and stir a minute or two, until spinach is just wilted.
  • Remove from heat and add balsamic vinegar, salt and pepper to taste.

We love this recipe. It's fast, easy, tastes good, and is healthy. I found it on one of my favorite blogs, CuisineNie (aka nieniedialogues.blogspot.com), but, since CuisineNie is now closed, I thought I'd put this recipe back out there. The amounts of onion, mushrooms, garlic, spinach, vinegar, and cheese are all approximate and should be altered according to your tastes. The recipe is pretty flexible; you can use different types of mustard, cheese, etc.. We like this served with canned Progresso lentil soup.

1 large onion
12 ounces fresh sliced white mushrooms
1 garlic clove
1 1/2 tablespoons olive oil

6 slices whole wheat bread
mustard
mayonnaise
2 1/2 cups fresh spinach
1 tablespoon balsamic vinegar
1 1/2 cups mozzarella cheese

Steps:

  • 1. Chop onion and mince garlic.
  • 2. Heat oil in large frying pan and add onion, garlic, and mushrooms. Season with salt and pepper to taste. Sauté until soft.
  • 3. Meanwhile, toast bread and spread mayonnaise and mustard on toasted bread slices.
  • 4. Remove pan from heat and add spinach and balsamic vinegar to pan. Stir until spinach wilts.
  • 5. Divide sautéed mixture evenly onto three slices of bread. Evenly divide cheese onto each of these slices of bread (on top of mushroom mixture). Top with the remaining slices of bread.

8 tablespoons butter, softened, divided
4 large portobello mushroom caps, gills removed and sliced
1/8 teaspoon salt
1/8 teaspoon pepper
3 tablespoons mayonnaise
3 tablespoons finely shredded Manchego or Parmesan cheese
1/8 teaspoon onion powder
8 slices sourdough bread
4 ounces Brie cheese, rind removed and sliced
1/2 cup shredded sharp white cheddar cheese
1/2 cup shredded Monterey Jack cheese
1/2 cup shredded Gruyere cheese
2 teaspoons minced fresh thyme

Steps:

  • In a large cast-iron or other heavy skillet, heat olive oil and 2 tablespoons butter over medium-high heat. Fry mushrooms in a single layer until golden and beginning to crisp, turning halfway through, 10-12 minutes. Sprinkle with salt and pepper. Remove mushrooms; wipe out skillet., Spread 3 tablespoons butter on 1 side of each slice of bread. Place bread, butter side down, in same skillet over medium-low heat; toast until golden brown, 2-3 minutes; remove. In a small bowl, combine cheddar, Monterey Jack and Gruyere. In another bowl, mix together remaining 3 tablespoons butter, mayonnaise, Manchego cheese and onion powder., To assemble sandwiches, top toasted side of 4 bread slices with mushrooms; sprinkle with fresh thyme; add sliced Brie. Sprinkle cheddar cheese mixture evenly over Brie. Top with remaining bread slices, toasted side facing inwards. Spread the butter-mayonnaise mixture on the outsides of each sandwich. Place in same skillet and cook until golden brown and cheese is melted, 5-6 minutes on each side. Serve immediately.
