This is a yummy, healthy snack mix that my sis and me came up with from items we generally have in our pantry. It is best when made from all organic ingredients as this way you know youre eating the best quality possible. It is a nice alternative to crisps or other fatty/sugar laden snacks. Feel free to use other seeds, fruits and nuts of your choice. If you feel like being indulgent add some chocolate chips.

4 tablespoons sunflower seeds (organic preferred)
4 tablespoons pumpkin seeds (organic preferred)
4 tablespoons raisins (or golden raisins or currants, organic preferred)
2 tablespoons dried mango, pieces (organic preferred)
16 pretzel sticks, broken into smaller pieces (I use yeast free whole spelt ones)

Steps:

  • Mix all the ingredients in a bowl and store in an airtight container if not using right away.
  • Enjoy! :).

250g mixed seed (sunflower, pumpkin, linseed)
1 tsp rapeseed oil
1 tsp ras-el-hanout
¼ tsp low-sodium salt
1 tsp reduced salt soy sauce
1 tsp agave syrup
pinch cayenne

Steps:

  • Preheat the oven to 160C/ 140 fan/ Gas mark 3.
  • Mix all the ingredients together in a bowl and spread onto a baking sheet. Cook for 15 - 20 mins until dry and golden. Stir once during cooking. Allow to cool and store in a sealed container for up to 3 weeks.

Everyone in my family LOVES these brownies! I make them without nuts to suite taste here, so this recipe reflects that. You could certainly elect to add chopped pecans or walnuts to your bottom layer though.

1 (18 1/4 ounce) package yellow cake mix
1/2 cup butter (1 stick)
1 (8 ounce) package cream cheese
3 large eggs
1 (16 ounce) bag powdered confectioners' sugar

Steps:

  • Mix cake mix, butter, and one egg in a bowl until blended. Mixture will be thick.
  • Press mixture into bottom of lightly greased 13x9 pan and set aside.
  • Mix remaining eggs, cream cheese, and powdered sugar in bowl with mixer set to medium speed until smooth.
  • Poor over cake mixture.
  • Bake at 325 for 40 minutes, adding 5 minutes to time if needed.
  • Cool for 1 hour, then slice into bars or squares.
