1 bottle (750 ml) fruity red wine
1 cup brandy
1 cup sugar
1 medium orange, sliced
1 medium lemon, sliced
1/8 teaspoon ground nutmeg
2 cinnamon sticks (3 inches)
1/2 teaspoon whole allspice
1/2 teaspoon aniseed
1/2 teaspoon whole peppercorns
3 whole cloves
Optional garnishes: Orange slices, star anise and additional cinnamon sticks

Steps:

  • In a large saucepan, combine the first 6 ingredients. Place remaining spices on a double thickness of cheesecloth. Gather corners of cloth to enclose spices; tie securely with string. Place in pan., Bring to a boil, stirring occasionally. Reduce heat; simmer gently, covered, 20 minutes. Transfer to a covered container; cool slightly. Refrigerate, covered, overnight., Strain wine mixture into a large saucepan, discarding fruit and spice bag; reheat. Serve warm. Garnish as desired.

My grandmother Margaret loved to entertain. This was one of her favorite beverages for cold, blustery, rainy days. We've served it through the years, usually during the holidays, and it's always a huge hit. If desired, serve flecked with nutmeg.

1 ½ cups boiling water
½ cup white sugar
¼ lemon
8 whole cloves
1 (3 inch) cinnamon stick
1 (1.5 liter) bottle red wine

Steps:

  • Bring water to a boil in a saucepan; dissolve sugar in water. Stir in lemon quarter, cloves, and cinnamon into water; boil for 10 minutes. Strain and return to saucepan.
  • Stir red wine into water-sugar mixture; heat until piping hot, but not boiling, about 5 minutes.

4 cups apple cider
4 -5 slices apples
6 whole cloves
4 -5 dashes ground cinnamon
1 ounce Grand Marnier
3/4 ounce white tequila
cinnamon stick

Steps:

  • To make mulled cider: combine the cider, apple slices, cloves, and ground cinnamon in a pot; heat until boiling; let boil for 5 minutes.
  • Ladle about 4 ounces mulled cider into a coffee mug; add in the Grand Marnier and tequila; garnish with a cinnamon stick.
  • *Spiced Apple Margarita: combine 2 ounces cooled mulled cider with 1 ½ ounces tequila and ¾ ounce Grand Marnier in a cocktail shaker filled with ice; shake and strain into a martini glass; garnish with cinnamon stick and apple slice.

12 ounces apple cider
6 black peppercorns
2 pieces star anise
1 cinnamon stick
1/4 cup sugar
1/2 teaspoon allspice
1/2 teaspoon ground cinnamon, plus more for serving
1 lime wedge plus 4 lime wheels, for garnish
4 ounces mezcal
2 ounces lime juice
2 ounces orange liqueur, such as Grand Marnier
2 large egg whites

Steps:

  • Chill 4 large rocks glasses.
  • Bring the cider, peppercorns, star anise and cinnamon stick to a simmer in a saucepan. Cook for 5 minutes, then allow to steep for 30 minutes. Strain and allow to cool.
  • Combine the sugar, allspice and ground cinnamon on a small plate. Use the lime wedge to moisten the rim of the glasses, then dip in the spiced sugar mixture.
  • Working in 2 batches, in a shaker, combine half of the mezcal, lime juice, orange liqueur and egg white and 1 1/2 ounces of the chilled cider. Shake vigorously. Add ice and shake again. Strain into the rimmed glasses. Garnish each with a lime wheel and a dusting of ground cinnamon. Repeat with the second batch.

6 fluid ounces beer
6 fluid ounces tequila
4 cups ice
1 lime, sliced

Steps:

  • In a blender combine limeade, beer and tequila. Fill blender to the top with ice. Blend until thick and smooth.
  • Salt the rims of 2 large margarita glasses. To do so, pour salt onto a small plate, moisten the rims of the glasses on a damp towel and press them into the salt.
  • Serve the margaritas in the salted glasses and garnish with slices of lime.
