- Preheat the oven to 350F. Spray a non-stick muffin pan with a non-stick cooking spray.
- In a large bowl, mix ground meat, egg, onion, milk, bread crumbs, Worchestershire sauce, salt and pepper.
- Put the meat mixture in the muffin cups.
- Spread the ketchup on top of the meatloaf mixture.
- Put the muffin tin in the oven and bake for 35 minutes.

- Heat oven to 450°F. Spray 12 regular-size muffin cups with cooking spray.
- In large bowl, stir Meat Loaf ingredients until well mixed. Divide mixture among muffin cups, pressing evenly into cups.
- Bake 15 to 18 minutes or meat thermometer inserted in center of loaf reads 160°F.
- Meanwhile, in small bowl, mix Tomato Salsa ingredients. Serve with meat loaves.

NEW MEXICO GREEN CHILE MEATLOAF
Growing up in New Mexico, we had access to the Hatch green chile (the best!). I add green chile to a lot of my recipes and it rather sets this meatloaf off. It's very good cold, made into sandwiches the second day.

- Preheat oven to 350 degrees F (175 degrees C). Grease a loaf pan.
- Mix hamburger, tomatoes, green chiles, onion, milk, eggs, crackers, salt, and pepper together in a bowl. Transfer to the prepared loaf pan.
- Bake in the preheated oven until until no longer pink in the center, about 1 hour and 10 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
- Let cool in the pan for 10 minutes before transferring to a serving dish.
