This old-fashioned chocolate chess pie is from the R.S.V.P. section of a May 1986 issue of Bon Appetit.It was requested from Primo's Cafe in Jackson,Mississippi

1 1/4 cups sugar
1/4 cup unsweetened cocoa powder
1/4 cup butter, melted (1/2 stick)
2 eggs
10 tablespoons evaporated milk
1 1/2 teaspoons vanilla
1/8 teaspoon salt
1 unbaked 8-inch pie shell

Steps:

  • Preheat oven to 350 degrees.
  • Mix sugar cocoa powder and butter in medium bowl.
  • Add eggs and beat well.
  • Blend in milk,vanilla and salt.
  • Pour into pie shell and bake until tested incerted into center comes out clean (center will look soft), 35 to 40 minutes.
  • Cool;serve with whipped cream.

1 c sugar
1/2 c brown sugar, firmly packed
5 Tbsp cocoa
2 Tbsp flour
1/4 tsp salt
1/2 c cream
3 eggs
1/3 c unsalted butter, melted
1 tsp vanilla
1 9 inch baked pie-shell, do not brown

Steps:

  • 1. Pre-heat oven to 325 degrees. Combine sugars, cocoa, flour and salt. Mix well. Blend in cream. Beat in eggs.
  • 2. Add cooled melted buttert and vanill, beating well until smooth. Pour into pre-baked pie shell.
  • 3. Bake until filling is puffed and set, about 45 - 50 minutes. Let cool before cutting.
