MRS. JENKINS' CRUNCHY HAM SLICE
This recipe belongs to Mrs. Saralu C. Jenkins, the home ec teacher at Clarkston H.S., in Clarkston, Georgia. I found this recipe in a 1966 cookbook entitled: Our Favorite Meats: Favorites From Home Economics Teachers". This is posted as part of our vintage-cookbook thread!

Steps:
- Preheat oven to 375F.
- Place ham steak in a shallow baking dish or pan, then spread the peanut butter evenly over the meat.
- Mix remaining 3 ingredients together until well blended, then spread over peanut butter.
- Bake in preheated oven for 25 minutes.

HAM AND POTATO CASSEROLE
I had the best Home Ec teacher in Jr & Sr High School, Mrs. Carol Renfro. This woman really knew how to cook and how to teach others how to cook as well. This was one of our first recipes we had to make once we started cooking. I still have my original recipe card (did I really used to write like that?!) and we have this often. I hope you will enjoy this as much as we do! Prep time does not include times to cook ham or potatoes.

Steps:
- Cook potatoes in your favorite method (bake or boil) till done. Allow to cool enough to handle.
- While potatoes are cooling, prepare white sauce.
- Melt butter in medium sauce pan over medium heat.
- Stir in flour to form thick paste. Continue to cook, stirring constantly for 1 minute (this allows the flour taste too cook out).
- Slowly add half 'n half and continue to stir over medium-low heat until sauce this thickened.
- Add mustard, salt, pepper, onion & 1/2 cup cheese to the sauce. Stir to incorporate and remove from heat.
- Preheat oven to 375°F.
- Spray 2 quart casserole with PAM or your choice of no-stick cooking spray.
- Dice the cooked ham (left over ham is great for this recipe).
- Peel and dice the potatoes (approximately 1/2" pieces).
- Place the potatoes in casserole dish in an even layer.
- Spread ham pieces over the top of the potatoes.
- Add remaining cheese to the white sauce and give a final stir (this last addition of cheese should not melt right away) and pour over the ham and potatoes.
- Bake uncovered for 25-30 minutes.

SINFUL COOKIES
My 8th grade Home Ec teacher taught me this one. At first I thought crackers with chocolate...ewww. But they're wonderful cookies. Sweet, crunchy.

- Line a 9 x 13 pan with aluminum foil.
- (This speeds the clean up.).
- Preheat oven to 400°.
- Place saltine crackers in pan in rows.
- I usually can fit about 24 in the pan.
- In a saucepan, bring the butter and sugar to a boil.
- After it begins boiling, boil for 3 minutes.
- Immediately pour the butter-sugar mixture on the crackers.
- Bake in the oven for 7 minutes.
- Take out of the oven, pour chocolate chips over crackers, and smooth them out after they melt.
- Cool in the fridge until the chocolate has hardened.
- Cut into squares.
GINGERED HAM SLICE

Steps:
- Cut slashes in the fat edge of the ham and place in a shallow dish.
- Combine ginger ale, orange juice, brown sugar, oil, vinegar, mustard, ginger, and cloves and mix thoroughly.
- Pour marinade over ham. Cover and refrigerate overnight.
- Grill over hot coals for 10-15 minutes on each side, brushing frequently with marinade.

- Melt butter and golden syrup and choc in the microwave and stir then gently mix in cornflakes, coconut and almonds.
- Press into slice tray and refrigerate until set and cut. Important the mix shouldn't be too dry, but still a bit wet. Otherwise will crumble when cut. Can add more chocolate to get consistency right if necessary or slowly slowly add the cornflakes aiming for amounts above.

POPEYES BISCUITS
I don't know if this is Popeye's recipe, but I've had it for 30 years and it makes great biscuits. My highschool home ec. teacher had it in a church cookbook. I always bake these in an iron skillet and place a pat of butter on top of each biscuit. These biscuits remind me of my grandmother's cathead biscuits.

- Cut sour cream into biscuit mix.
- Add club soda and mix.
- Turn out dough on floured surface.
- Roll dough with rolling pin til about one inch thick.
- Cut dough with biscuit cutter and place in buttered iron skillet.
- Place a pat of butter on each biscuit and bake at 450 for 10 minutes or until browned to your liking.
