1 pound elbow macaroni
1 stick (1/2 cup) unsalted butter
1/4 cup all-purpose flour
1 teaspoon ground mustard
1 teaspoon garlic powder
Large pinch kosher salt
Large pinch freshly ground black pepper
1 cup heavy cream
1/3 cup 2 percent milk
1 cup hand-shredded extra-sharp yellow Cheddar cheese
1 cup hand-shredded Parmesan cheese
1 cup cubed processed cheese, such as Velveeta
1/2 cup sour cream

Steps:

  • Bring a large pot of water to a boil. Add the macaroni and cook until al dente according to the package directions. Drain and set aside.
  • In a medium pot over medium heat, melt the butter. Whisk in the flour, ground mustard, garlic powder, salt and pepper. Slowly add the cream and milk, whisking until combined. Heat the mixture until it bubbles, 3 to 4 minutes. Reduce the heat to low and add the Cheddar, Parmesan, processed cheese and sour cream. Stir until melted. Add the macaroni to the cheese mixture and toss to combine. Bring the mixture back to a light simmer to heat everything through and thicken. Serve warm.

1/4 cup unsalted butter, plus more for greasing the dish
Kosher salt and freshly ground black pepper
1 pound elbow macaroni
1/4 cup all-purpose flour
2 cups whole milk
1/2 cup heavy cream, plus more if needed
4 ounces cream cheese
One 16-ounce block sharp Cheddar, shredded
1 1/2 cups extra-sharp Cheddar, cut into 1/2-inch cubes
1 teaspoon granulated garlic
2 large eggs
1/2 cup sour cream

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9- by 13-inch baking dish with butter.
  • Bring a large pot of salted water to a boil, add the macaroni and cook, stirring occasionally, until al dente, about 7 minutes. Strain in a colander, run cold water over the pasta and set aside.
  • Using the same pot the macaroni was cooked in, melt the 1/4 cup butter over medium heat, add the flour and whisk until smooth. While whisking constantly, slowly add the milk and then the cream. Bring to a simmer, add the cream cheese and the shredded Cheddar except for 1/2 cup and stir until melted. Stir in the granulated garlic, 1/2 teaspoon salt and 1/4 teaspoon pepper. Remove the cheese sauce from the heat and stir in the macaroni. Season with salt and pepper.
  • Whisk together the eggs and sour cream in a small bowl and then fold into the macaroni and cheese. Spread the mixture into the prepared baking dish, fold in the cubed Cheddar and top with the reserved 1/2 cup shredded Cheddar. Bake until the top just begins to brown, about 20 minutes. Loosely cover with foil and bake 10 to 15 minutes more.

1 1/2 tablespoons kosher salt
6 ounces dry elbow macaroni, about 1¼ cups
2 ounces Grana Padano cheese, grated, or Parmesan
2 ounces Jarlsberg cheese, grated, or Gruyère
6 ounces white Cheddar, grated
2 cups heavy cream
Sea salt

Steps:

  • Preheat broiler. In a medium saucepan over high heat, bring 2 quarts water and kosher salt to a boil. Add macaroni and return water to a boil; cook until barely al dente, about 5 minutes. Meanwhile, in a large bowl, stir the grated Grana Padano, Jarlsberg, and Cheddar cheeses to combine. Set aside. Taste a macaroni for doneness: it should be chewy yet firm. Strain macaroni in a colander and set aside.
  • Add heavy cream and a pinch of sea salt to an oven-safe skillet; turn heat to medium-high and bring to a simmer. When cream is simmering, fold in the macaroni. Continue to simmer to reduce and thicken, about 1½-2 minutes. Stir in ¼ of the cheese mixture to combine with noodles. Turn off the heat and stir in another ¼ of the cheese. Place remaining cheese over the top in an even layer (do not stir).
  • Set rack in the oven about 4 inches from the broiler. Place skillet under the broiler until cheese melts and caramelizes into a golden brown crust, 3-5 minutes (keeping an eye on it so it doesn't burn). Remove gratin from oven and let rest 5 minutes before serving.

SOUTHERN MACARONI AND CHEESE



Southern Macaroni and Cheese image

There is macaroni and cheese, and then there is special occasion macaroni and cheese like this one. Unlike most recipes, which start with a roux, this one begins with a milk-and-egg base, which gives the dish an incredibly rich, silky taste. It's adapted from Millie Peartree, the owner of Millie Peartree Fish Fry & Soul Food restaurant in the Bronx, who has been making this dish since she was a little girl. The recipe was passed down in her family for generations, but because of the generous amount of cheese used, the dish was only made for events like Christmas and Thanksgiving. Extra-sharp Cheddar adds tartness and a layer of Colby Jack creates a gooey, molten center. If you can't find a Colby Jack blend, shredded mozzarella or a Mexican-style blend will work in its place.

Steps:

  • Heat oven to 350 degrees. Bring a large pot of generously salted water to a boil. Add macaroni and cook according to package directions until a little under al dente, about 4 minutes. Transfer to a colander and rinse under cold water to stop cooking. Set aside.
  • In a large bowl, whisk milk and eggs. Add cooked macaroni, 2 cups extra-sharp Cheddar, melted butter, 1 1/2 teaspoons salt and 1/2 teaspoon pepper, and stir until well combined.
  • Add half the macaroni mixture to a 9-by-13-inch baking dish in an even layer. Sprinkle 1 1/2 cups Colby Jack evenly on top. Spread the remaining macaroni mixture on top in an even layer. Cover with aluminum foil, transfer to the middle rack of the oven and bake for 30 minutes.
  • Remove from oven. Carefully remove and discard the aluminum foil. Top the macaroni mixture with the remaining 2 cups Cheddar and 1/2 cup Colby Jack. Broil on top rack until cheese is browned in spots, 3 to 5 minutes. (The broiled cheese can go from golden to burnt fairly quickly, so keep a close eye on it.)
  • Remove from oven and let cool until the macaroni and cheese is fully set, 10 to 15 minutes. (The mixture may first appear jiggly, but it will firm up as it cools.) Serve warm.

7-8 oz elbow macaroni, uncooked
2 c small curd cottage cheese
1 c sour cream
1 egg, beaten
3/4 tsp salt
8 oz sharp cheddar cheese, shredded

Steps:

  • 1. Cook the elbow macaroni according to package directions for al dente, keeping in mind that it will cook further in the oven.
  • 2. While the pasta is cooking, combine the cottage cheese, sour cream, egg, salt, and cheddar cheese (reserving some for the top of the dish at the end). I usually make this recipe using fat-free cottage cheese, reduced fat sour cream, and egg beaters.
  • 3. Drain the cooked pasta, return it to the pot, and stir the cheese mixture into the pasta, combining everything thoroughly.
  • 4. Transfer the macaroni and cheese mixture into a casserole dish or an oven-proof dutch oven (or camp-style dutch oven if you're cooking outdoors). Be sure to leave some space for the mac and cheese to expand as it cooks. Sprinkle extra cheddar cheese on top and bake, uncovered, at 350 degrees for about 35 minutes. 1 (8 ounce) box elbow macaroni
1 (16 ounce) package extra-sharp cheddar cheese, shredded (do not use pre shredded it's not as good)
4 1/2 cups milk
4 eggs
1/4 cup butter
salt and pepper

  • Preheat oven to 350.
  • Cook elbow noodles until tender and drain.
  • Beat eggs in a 9x13 baking dish that has been sprayed with Pam.
  • Mix noodles with eggs in baking dish.
  • Spread cheese over the top of noodles.
  • Blend together with milk - one cup at a time, stirring well after each addition.
  • Add salt and pepper to taste and stir again.
  • Place butter pats on top of noodles and bake at 350 for about 50 minutes.

1 1/2 tablespoons unsalted butter, cut into small pieces, plus more for baking dish
3 cups milk
4 tablespoons tomato paste
1 teaspoon coarse salt, plus more for water
1/2 teaspoon freshly ground pepper
1/4 teaspoon cayenne pepper, or to taste
3 cups grated white cheddar cheese
1 cup grated Swiss cheese
1 pound elbow macaroni
Sour cream, for serving

Steps:

  • Preheat oven to 375 degrees. Butter a 2 1/2-quart casserole dish; set aside.
  • Warm the milk and tomato paste in a medium saucepan over medium-low heat. Whisk in the salt, pepper, cayenne pepper, cheddar cheese, and 1/2 cup Swiss cheese; set the cheese sauce aside.
  • Cover a large pot of salted water, and bring to a boil. Cook until pasta is al dente, about 7 minutes. Drain well in a colander. Stir macaroni into reserved cheese sauce.
  • Pour mixture into prepared dish. Top with remaining 1/2 cup Swiss cheese, and dot with butter. Bake until golden brown and bubbling, about 45 minutes. Serve hot with sour cream, if desired.

AUSTIN MAC N CHEESE (RACHAEL RAY)



Austin Mac N Cheese (Rachael Ray) image

This is a fantastic blend of southwest flavors and oozy cheeses. Very good. I would also add 4-6 oz. of cooked chorizo or other hot sausage to make this a one dish meal. To make it more colorful, add chopped red pepper or green onions after you take it from the oven. Rachael Ray is always joking about how she burns stuff in the broiler. The first time I made this, I set it on fire. No joke! The entire top of the macaroni had flames coming off it--I had to hit it with the back of a spoon to stop it. Just make sure you leave it under the broiler for seconds, not minutes!

1 lb macaroni
1 lb tomatillo
1 onion
2 garlic cloves
2 jalapenos
2 cups milk
2 teaspoons honey
1 teaspoon cumin
1 lime
1/2 cup fresh cilantro
3 tablespoons butter
1 cup vegetable broth
1 cup swiss cheese
1 cup monterey jack cheese
2 cups tortilla chips
1 cup monterey jack pepper cheese
1 cup sour cream (optional)

Steps:

  • Husk and rinse tomatillos, cut in half. Put in food processor and pulse until chopped.
  • Peel onion, halve and add to food processor, chop.
  • Clean and seed jalapenos and add to food processor, chop.
  • Add this mixture to a medium saucepan, add cumin and garlic.
  • Season with salt. Simmer mixture over low heat for 10 minutes.
  • Add the juice of one lime.
  • Add finely chopped cilantro.
  • Cook macaroni to al dente. Drain, return to hot pot.
  • In another saucepan, melt butter.
  • Over medium heat, whisk in flour for one minute.
  • Whisk in milk and broth. Season with salt and pepper.
  • Bring to a simmer and cook until thickened.
  • Add swiss and monterrey jack cheeses. Stir until melted.
  • Preheat the broiler.
  • Add the cheese sauce to the pasta and toss to coat.
  • In a 9 x 13 baking dish, add half the pasta.
  • Add the green tomatillo mixture.
  • Top with the other half of pasta.
  • Sprinkle with crushed tostada chips and pepperjack cheese.
  • Broil until browned --keep a very close eye on this.
  • Serve with sour cream if desired.
  • Garnish with chopped red pepper or green onions.
