Number Of Ingredients 7

1 cup chopped dates
1 teaspoon baking soda
1 cup boiling water
50 g butter, cubed
1 egg, beaten
3/4 cup brown sugar
1 1/2 cups self raising flour

Steps:

  • Set oven at 180 degrees C or 350 degrees F.
  • Combine dates and sodium bicarbonate in a mixing bowl.
  • Pour in boiling water and mix. Let stand for 5 minutes.
  • Add butter and mix until it melts.
  • Add egg, sugar and flour and mix well.
  • Place in a well greased loaf pan and bake for 45 minutes or until cooked.
  • Turn out onto a cooling rack.

Extremely healthy ginger and date loaf. It freezes really well. I usualy cut it into portions and freeze them so in the morning I just grab one for lunch.

1 1/4 cups dried dates
1 cup water
2 tablespoons applesauce
1/2 cup sugar
1/3 cup of chopped crystallized ginger
1 egg, lightly beaten
1 1/4 cups of wholemeal self-rising flour
1/2 teaspoon baking powder

Steps:

  • Place dates, water, apple sauce and sugar in bowl in the microwave on high for 4 minutes. Add ginger and cool.
  • Stir through beaten egg. Sift flours and baking powder and fold into date mixture.
  • Spoon into greased loaf tin.
  • Bak in a moderate oven, 180 degrees for 50 minutes.
  • Cool before slicing.

1 1/2 cups chopped dates
1 1/2 cups cold water
1 tablespoon butter
2 teaspoons vanilla extract
1 large beaten egg
1 1/2 cups brown sugar
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chopped walnuts

Steps:

  • Preheat oven to 350 Degrees F.
  • Grease and line two loaf pans.
  • Combine in a saucepot over med.
  • heat, the date, water, butter, and vanilla.
  • Cook five minutes.
  • Let cool.
  • Add egg, and sugar.
  • Add flour and salt, and soda.
  • Fold in the nuts.
  • Blend well.
  • Pour into prepared loaf pans, and bake 60 minutes--.

This recipe is from the Edmonds Cook Book. My kids love this, especially as an after school snack with a glass of milk. It has a lovely rich caramel flavour. I make mine without the walnuts and it's still great. Prep time includes 1 hour for soaking dates in boiling water.

1 cup chopped dates
1 cup boiling water
1 teaspoon baking soda
1 tablespoon butter
1 cup brown sugar
1 egg, beaten
1 cup chopped walnuts (optional)
1/4 teaspoon vanilla essence
2 cups plain baking flour
1 teaspoon baking powder

Steps:

  • Put dates, boiling water, butter and baking soda into a bowl and stir until butter is melted.
  • Set aside for one hour.
  • Beat sugar, egg, vanilla essence and walnuts (if using) into date mixture.
  • Sift in flour and baking powder and stir until just combined.
  • Pour mixture into a greased 22cm loaf tin and bake in a 180C oven for 45 minutes or until inserted skewer comes out clean.
  • Leave in tin for about 10 minutes before turning out onto cooling rack.

125 ml boiling water
75 g butter
100 g sugar
1 egg
110 g soya flour
20 g shredded coconut

Steps:

  • Combine dates with boiling water, cover and stand.
  • Beat butter and sugar in a bowl with electric mixer untill light and fluffy. Add egg and beat until combined.
  • Stir in sifted flour, coconut and undrained dates.
  • Spread mixture into prepared, greaseproof paper-lined loaf tins.
  • Bake for about 40 mins 180°C.
