1 ½ pounds ground beef
1 medium onion, chopped
1 (8 ounce) can tomato sauce, divided
½ cup bread crumbs
1 egg
2 cloves garlic, minced
1 teaspoon dried oregano, divided
1 teaspoon salt
⅛ teaspoon ground black pepper
1 ½ cups shredded mozzarella cheese
2 tablespoons grated Parmesan cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix beef, onion, 1/2 of the tomato sauce, bread crumbs, egg, garlic, 1/2 teaspoon oregano, salt, and pepper in a large bowl. Pat into a 1/2-inch-thick rectangle on a sheet of waxed paper. Sprinkle mozzarella cheese on top.
  • Lift up the short side of the waxed paper to start rolling up the meatloaf. Roll tightly, peeling back paper as you go. Seal edges in place. Transfer meatloaf to a loaf pan.
  • Bake in the preheated oven for 1 hour. Combine remaining tomato sauce and 1/2 teaspoon oregano; pour over meatloaf and sprinkle with Parmesan cheese. Bake until cheese is melted, about 15 minutes more. Let stand for 5 minutes before serving.

1 cup tomato sauce
1 tablespoon apple cider vinegar
1 tablespoon honey
1 lb lean ground turkey
1 cup zucchini, shredded, squeezed gently of excess moisture with kitchen towels
1 cup yellow onion, finely diced
2 cloves garlic cloves, minced
1 egg, whisked
1 tablespoon dijon mustard
1 tablespoon honey
2 tablespoons Sauce
½ cup panko bread crumbs
½ teaspoon salt
½ teaspoon pepper
1 teaspoon dried oregano
1 teaspoon dried basil
2 tablespoons fresh parsley, chopped
2 slices mozzarella cheese
parsley, to taste

Steps:

  • Preheat the oven to 375˚F (190˚C).
  • Make the sauce: In a medium bowl, stir together the tomato sauce, apple cider vinegar, and honey. Set aside.
  • Make the meatloaf: In a large bowl, combine the ground turkey, zucchini, onion, garlic, egg, Dijon mustard, honey, 2 tablespoons of the tomato sauce, bread crumbs, salt, pepper, oregano, basil, and parsley. Mix well.
  • Add half of the meatloaf mixture to a greased loaf pan and flatten to form an even layer.
  • Layer the cheese over the meatloaf layer. Top with the rest of the meatloaf and smooth the top.
  • Top the meatloaf with half of the tomato sauce mixture, using a spoon or rubber spatula to spread evenly. Reserve the rest of the tomato sauce.
  • Bake the meatloaf for 1 hour, or until the internal temperature reads 160˚F (70˚C) when tested with a meat thermometer.
  • When the meatloaf is cooked through, warm the reserved tomato sauce in the microwave or a skillet, then drizzle on top of the meatloaf.
  • Garnish with fresh parsley and serve with your favorite sides. (We used mashed sweet potatoes and asparagus.)

2 tablespoons olive oil
1 cup diced onions
3 cloves finely chopped garlic
1 1/2 lb ground chicken
1 cup Progresso™ panko crispy bread crumbs
1/4 cup milk
1 egg
2 tablespoons grated Parmesan cheese
2 tablespoons chopped fresh parsley
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon crushed red pepper flakes, if desired
6 oz mozzarella cheese, cut into planks
1 cup marinara sauce
1/2 cup Progresso™ panko crispy bread crumbs
1 clove finely chopped garlic
2 tablespoons butter
3 tablespoons grated Parmesan cheese
2 tablespoons chopped fresh parsley

Steps:

  • Heat oven to 400°F. Spray 9x5-inch loaf pan with cooking spray.
  • In 8-inch skillet, heat 1 tablespoon of the oil over medium-high heat. Cook onions, 3 cloves garlic and a dash of salt in oil about 5 minutes or until onions are soft and translucent. Set aside to cool.
  • In large bowl, mix remaining tablespoon olive oil, the ground chicken, 1 cup bread crumbs, the milk, egg, 2 tablespoons Parmesan cheese, 2 tablespoons parsley, the salt, pepper and pepper flakes. Add onion and garlic mixture; mix well.
  • Pat half of meatloaf mixture in pan. Arrange cheese planks down center of meatloaf, leaving 1/2 to 1 inch of cheese-free space around all edges. Cut cheese in half as needed to fit. Cover cheese with remaining meatloaf mixture; press around edges to seal in cheese. Spread half of the marinara sauce over top of meatloaf.
  • Bake about 1 hour or until meat thermometer inserted in center of loaf reads 165°F. Cool 10 to 15 minutes. Meanwhile in 6-inch skillet, toast 1/2 cup bread crumbs, 1 clove garlic and the butter until golden. Scrape into small dish to cool slightly. Stir in 3 tablespoons Parmesan and 2 tablespoons parsley. Top meatloaf with mixture.
  • Serve with remaining marinara sauce.

1 1/2 pounds ground meatloaf mix (equal parts ground beef, pork and veal or turkey)
1 cup dried breadcrumbs
1 cup shredded carrots
1 cup shredded mozzarella
3/4 cup drained, chopped sun-dried tomatoes
2 tablespoons chopped fresh flat-leaf parsley
1 tablespoon finely chopped fresh oregano
2 large eggs, lightly beaten
1 clove garlic, minced
1 medium onion, grated
1/2 cup ketchup
1 tablespoon plus 1 teaspoon Worcestershire sauce
Kosher salt and freshly ground black pepper
2 teaspoons light brown sugar

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment paper.
  • Combine the meatloaf mix, breadcrumbs, carrots, mozzarella, sun-dried tomatoes, parsley, oregano, eggs, garlic, onion, 1/4 cup of the ketchup, 1 tablespoon of the Worcestershire, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large mixing bowl. Using your hands, mix together until well combined.
  • Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf, about 9 inches by 5 inches. Bake for 30 minutes.
  • Stir together the brown sugar, remaining 1/4 cup ketchup and remaining 1 teaspoon Worcestershire in a small bowl for the glaze. Return to the oven and bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 25 minutes more.   • Pour off drippings.
  • Spoon remaining ketchup over loaf.
  • At this time I like to garnish the meat loaf with sliced black olives, or onion slices and a sprinkling of parsley.

  • Let cool for a few minutes before slicing.

1 1/2 pounds of ground turkey {use ground beef, if desired}
1/4 cup milk
1 Tablespoon Worcestershire sauce
1/4 cup ketchup {with an additional 1/4 cup used to top the loaf}
1 to 2 eggs
3/4 cup bread crumbs {store bought or homemade}
2 cloves of garlic, minced
1/2 yellow onion, chopped
1 teaspoon sage leaves
1/2 teaspoon ground mustard
1/2 teaspoon oregano
a dash of salt, pepper
Inside Layer Ingredients
3/4 cup fresh spinach, chopped {if you use frozen, make sure it's thawed}
3/4 cup mozzarella, grated {optional}

Steps:

  • Mix all of the 'Meat Mixture' ingredients into a bowl. Lay out a large piece of aluminum foil and flatten the meat mixture on the foil until it is approximately 12 inches x 6 inches. Next, sprinkle on a layer of fresh spinach, followed by mozzarella. Using the aluminum foil to assist you, begin to roll the meat, removing the foil as you go. Try to pick up the loaf before the final bit of rolling is done and transfer into your baking dish {a 9 x 11 glass baking dish works well}. Completely remove the foil. Cover the meatloaf with 1/4 cup of ketchup by smearing it all over the top. Bake uncovered at 350 degrees for 1 hour 15 minutes - 1 hour 30 minutes. Let rest for a few minutes before slicing. Serve warm.

MIX TOGETHER
1 1/2 lb hamburger
1/2 can(s) 8 oz tomato sauce
1/2 c bread crumbs, dry
1 tsp oregano, dried
1 tsp salt
1 egg slightly scrambled
1 tsp pepper (optional)
MEATLOAF FILLING
8 oz shredded mozarella cheese
4 oz sliced, canned mushrooms, drained

Steps:

  • 1. Preheat oven 375 degrees. Grease or spray a large, glass bread dish or an oblong glass or aluminum dish (9x12). Mix ingredients and place on top of wax paper on the counter. Shape into a rectangle. Drain mushrooms and sprinkle evenly over hamburger. Distribute shredded mozarella on top of the mushrooms, and press gently into the meat.
  • 2. Lift wax paper with both hands on short side and roll until you reach the other end. Wet hands and tuck in the ends and seal. Lift wax paper and slide into dish so seam side is on bottom of dish.
  • 3. Cook for 1/2 hour. Remove and drain any grease off. Take remainder of tomato sauce and pour evenly over top of meatloaf. Bake for 1/2 hour more.
  • 4. Remove and let rest for 10 minutes. Remove meatloaf to a serving platter (I use two spatulas). Slice and serve. Deliciosi!!!

2 pounds ground beef
2 eggs
⅔ cup breadcrumbs
Salt, pepper and smoked paprika, to taste
9 ounces bacon slices
4 ounces mozzarella cheese, chopped
½ cup barbecue sauce

Steps:

  • Preheat the oven to 320° Fahrenheit. Mix ground beef, eggs, breadcrumbs and spices in a large bowl. Line a 9x5 inch loaf pan first with parchment paper and then with ⅔ of the bacon, leaving an overhang. Shape a long log with ⅔ of the meat mixture and fit it inside the loaf pan. Make a groove in the middle and add the mozzarella cheese to it. Cover with the remaining meat mixture. Fold the bacon overhang on top and cover entirely with the remaining ⅓ of bacon. Spread with ⅓ of the barbecue sauce. Bake in the middle of the preheated for 40 minutes. Spread with another ⅓ of the barbecue sauce. Continue baking for another 20 minutes, spread with the remaining sauce and serve hot.

2 pound(s) lean ground beef
2 - eggs, slightly beaten
1 cup(s) crushed saltine crackers
1 cup(s) milk
1/2 cup(s) parmesan cheese
1/2 cup(s) chopped onion
1 1/2 teaspoon(s) salt
1 teaspoon(s) oregano
1 can(s) 8 oz pizza sauce
3 - slices mozzarella cheese, halved
- green pepper rings (optional)
- sliced mushrooms (optional)
2 teaspoon(s) butteror margarine (optional)

Steps:

  • Mix beef, eggs, crumbs, milk, parmesan cheese, onion, salt and oregano. Shape into a loaf and place in a greased 9x5x3 loaf pan. Bake at 350 for 1 1/4 hours or until no pink remains; drain. Spoon pizza sauce over loaf and top with cheese slices. Return to the oven for 10 minutes or until cheese is melted. Meanwhile, if desired saute green pepper and mushrooms in butter; arrange on top of meatloaf.

How to make Sun Dried Tomato and Mozzarella Meatloaf

Number Of Ingredients 13

2 pounds combination of ground beef, pork and veal (ask your butcher for meatloaf blend)
1 small onion diced (small diced)
2 tablespoons dry Italian Seasoning mix
1 teaspoon dried parsley or 2 teaspoons fresh
1 teaspoon garlic powder
1 teaspoon ground pepper
½ teaspoon onion powder
½ teaspoon salt
¾ cup tomato sauce (you will use ½ cup in the meatloaf and ¼ cup for the top)
1 sleeve buttery flavored crackers crushed (I used RItz)
2 eggs
6 sun dried tomatoes sliced thin
1 cup shredded mozzarella cheese (divide into ¾ cup and ¼ cup)

Steps:

  • Preheat oven to 400°F
  • Line a baking pan with crumpled aluminum to prevent sticking and to make clean-up easier
  • In a large bowl, mix meat, onion, Italian seasoning, parsley, garlic powder, ground pepper, onion powder, salt, combine well. Add cracker crumbs, ½ cup tomato sauce and eggs, combine well. Finally add the sundried tomatoes, ¾ cup mozzarella cheese, mix until well blended. Form into a loaf, place in pan, pour ¼ cup tomato sauce over the top.
  • Bake 25 minutes, then sprinkle remaining mozzarella cheese over top. Bake additional 10-15 minutes.

Mini Meatloaves are the perfect grab-and-go snack or dinner idea! A savory meatloaf mixture is wrapped around cheese to create these ooey-gooey delights!

Number Of Ingredients 9

1 lb ground beef
1 egg
1/2 cup milk
1/2 cup breadcrumbs or cracker crumbs (I used Panko)
1/4 cup worcestershire sauce
1/3 cup ranch dressing
1 onion (diced)
1 lb mozzarella (cubed)
salt and pepper to taste

Steps:

  • Mix all ingredients except mozzarella in a large bowl.
  • Once mixed, create a ball of meat mixture and press a cube of mozzarella into it.
  • Cover with equal amount of meat mixture.
  • Repeat until all meat is used up. (you want the balls to fit into a muffin pan)
  • Place mini meatloaves into greased muffin pans.
  • Bake at 350˚ F for 25-35 minutes or until baked through.
