MOSTACCIOLI (BAKED PASTA WITH CREAMY SAUCE & ITALIAN SAUSAG
Yummy pasta -- It makes a lot (2 9x13 pans) but could be easily halved. Everyone in my office is RAVING about this this week, and it's great b/c it can be adjusted to your own liking.

Steps:
- Cook both boxes of noodles until they are semi done.
- Drain and set aside, but do not rinse.
- Melt 1 Tbsp butter in a saucepot.
- Add minced garlic (more or less if desired).
- Slowly add heavy whipping cream to melted butter and garlic mixture.
- Bring sauce to a slow simmer, then add 2 cups shredded Parmesan cheese.
- Stir until melted.
- Let sauce simmer on low.
- Break into pieces and brown Italian sausage.
- Add 2 thinly sliced peppers to meat mixture.
- When both are fully cooked, dump them into the sauce.
- Saute sliced mushrooms in 1 Tbsp butter seasoned with salt and pepper.
- When cooked, add to sauce.
- Place tomatoes in a food processor and process until blended with chunks.
- Add fresh basil to taste (don't be stingy - a lot is better).
- Add diced garlic to taste.
- Add olive oil.
- Don't be afraid to start small and add more basil, garlic and oil as you go.
- This tomato mixture can be made a day early; let set in refrigerator overnight.
- Add this dish to the sauce.
- Bring the huge pot to a boil, let it simmer just a minute or two.
- Take the penne noodles and divide them into the two 9x13-inch pans, spreading them out evenly.
- Divide sauce into each pan filled with the noodles and mix it with the noodles.
- Sprinkle Parmesan cheese over the top of both pans.
- Bake, uncovered, at 350 degrees for 20 to 25 minutes.
EASY PASTA BAKE WITH MOSTACCIOLI AND MEATBALLS
This is an incredibly easy dish to prepare for a potluck dinner or a football party, or just for your family at home. It's easy on the wallet too, because it has few ingredients! Great when served with garlic bread.

- Preheat the oven to 350 degrees F (175 degrees C).
- Bring a large pot of lightly salted water to a boil. Add mostaccioli and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain.
- Transfer mostaccioli to a large glass baking dish. The pasta should reach about halfway to the rim of the dish. Cover with as much spaghetti sauce as you like, at least enough to almost cover the pasta.
- Place meatballs in a microwave-save dish and heat in the microwave for about 3 minutes. Spread out on top of the pasta. Cover entirely with mozzarella cheese.
- Bake in the preheated oven until heated through and cheese is completely melted, 15 to 20 minutes.

I discovered this tasty mostaccioli pasta salad in a church cookbook over 15 years ago, then the dog ate the cookbook! The recipe was lost for over a decade until it was recovered through the miracle of crowdsourcing. I'm excited to share it with everyone so this won't happen again! Enjoy! - Bring a large pot of lightly salted water to a boil. Add pasta and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain and put into a large bowl.
- Combine Italian salad dressing, creamy salad dressing, sugar, parsley, salt, pepper, garlic salt, Italian seasoning, celery seed, and mustard seed in a smaller bowl. Pour the dressing over the noodles and stir to combine. Refrigerate until needed.

- Cook pasta according to package instructions.
- During last 2 minutes of cooking add the asparagus.
- Drain pasta& asparagus, rinse in cold water.
- Whisk together the mayo, Italian dressing, vinegar& pepper.
- When cool, in a large bowl, stir the pasta& asparagus with 1/2 cup dressing and remaining ingredients.
- Cover and refrigerate for several hoiurs.
- Just before serving stir in the remaining dressing.

- Bring a large pot of lightly salted water to a boil. Add pasta and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain pasta and reserve 1/2 cup pasta water.
- Meanwhile, trim chicken of fat and slice across the grain into thin strips. Toss the chicken strips with pesto in a bowl, using your hands to make sure chicken is well covered.

Easy recipe but really worth it! When I was young my mom would make this and I would cut my "dates" short to come home to eat this. I am addicted! The longer it marinates the better it is! Get ready to hand this recipe out a lot! Super summer salad but it goes with any kind of protein.

- 1. Cook 16 oz of pasta in salted water with .5oz of yellow food coloring (trust me on this). Not musshy, drain, rinse in cold water, coat in vegetable oil.
- 2. In a blender: add cider vinegar, white vinegar, sugar, pepper, salt, garlic powder, Accent, parsley, onion and cucumber.
- 3. Blend for 2 minutes or until mixture is emulsified.
- 4. Poor over cooked pasta, stir, refrigerate, and let marinate for at least 24 hours stirring occasionally. The longer it marinates the better. It may seem initially like there is too much liquid but the pasta will soak it up.
