I've simplified this recipe for Couscous Mesfouf without losing any of its deliciously complex flavor. Prepare all the mix-ins ahead of time and it takes only minutes to make. Enjoy!

2 cups vegetable broth
5 tablespoons unsalted butter
⅓ cup chopped dates
⅓ cup chopped dried apricots
⅓ cup golden raisins
2 cups dry couscous
3 teaspoons ground cinnamon
½ cup slivered almonds, toasted

Steps:

  • Pour the vegetable broth into a large saucepan, and bring to a boil. Add the butter, apricots, dates and raisins. Boil for 2 to 3 minutes. Remove from the heat, and stir in the couscous. Cover, and let stand for 5 minutes. Stir in the cinnamon and toasted almonds, and serve.

Spicy, flavourful, healthy, vegetarian, and a very easy one dish meal! Bright colours and three different textures in one dish. This is (very) slightly adapted from the recipe of the same name at cookthink.com.

1 large sweet potato, peeled and cut into 1 inch cubes
1/4 teaspoon salt
1 tablespoon fresh ginger, minced
1/2 teaspoon ground cinnamon
1/2 lemon, juice only
1 teaspoon honey
1/4 teaspoon chile
1/4 cup raisins (to taste)
1/2 teaspoon olive oil
lemon zest
3/4 cup couscous
3/4 cup boiling water

Steps:

  • Chop sweet potato, put in a pot with barely enough water to cover.
  • Add salt, bring to a boil, then reduce heat and simmer (just under medium temperature, not too low) for 10-12 minutes until tender.
  • Cook couscous by placing in a bowl with equal amount of boiling water and covering immediately. Leave to cook while potato is simmering.
  • Prepare ginger and lemon.
  • Add everything except lemon zest and couscous to water and sweet potato and keep on cooking about 2 minutes.
  • Stir in lemon zest.
  • Fluff couscous, divide between two pasta plates (they hold the sauce better than flat plates) and top with sweet potato. Be generous with the sauce as it will soak into the couscous and add delicious flavour.

From Vegetarian Quick and Easy. This combination of nuts, dried fruits and fresh fruits is hard to resist. If the margarine option is used this recipe is vegan.

1/2 lb couscous
1 1/4 cups hot water
2 tablespoons butter or 2 tablespoons margarine, melted
12 dates, stoned and chopped
12 almonds, whole
1 1/2 cups mixed nuts, finely chopped
2 tablespoons raisins, currants or 2 tablespoons sultanas
1/2 cup sugar (to taste)
1 orange, juice of
1 tablespoon powdered sugar
1 teaspoon ground cinnamon

Steps:

  • Place couscous in a bowl and pour in the hot water, stirring as you do (or prepare according package instructions) and set aside for 10 minutes.
  • Meanwhile, combine nuts (except whole almonds), dried fruit, sugar and orange juice.
  • Set couscous in a sieve above a saucepan of boiling water and steam it for 10 minutes.
  • Rub in melted butter or margarine and then continue to steam for another 5 to 10 minutes.
  • When ready to serve, mix nut and dried fruit mixture into the couscous and turn it out onto a serving dish.
  • Decorate with whole almonds and sprinkle with powdered sugar and cinnamon to serve.

this is an amazing sweet yet savory sidedish. I only made half a recipe, but it made a lot!! also, you may need to add some extra water because the dried fruit soaks up some water. also, start off with only one teaspoon of cinnamon before adding the other. you may find that one is enough for your taste.

This is a nice change to ordinary chicken & couscous. My very picky daughter said this was the best couscous dish I have made. To save time I used my pressure cooker to cook the chicken.

1 1/2 cups dry instant couscous
1 1/2 lbs skinless chicken leg quarters, cut in half
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon ginger
1/4 teaspoon turmeric
1 pinch saffron
1/2 onion, grated
3 cinnamon sticks (about 2 inches long)
3 cups chicken stock
4 tablespoons sweet unsalted butter, divided
1/4 cup icing sugar (confectioners sugar)
2 -3 teaspoons ground cinnamon

Steps:

  • Place the chicken into a pot along with the spices, onion, cinnamon sticks, & 2 tbsp of the butter.
  • Pour in the chicken stock & bring to a boil. Reduce heat, cover & simmer for 45-60 minutes, until the chicken is tender.
  • Take the chicken out of the broth. Turn up the heat & boil until the sauce is reduce to 2 cups. Remove the chicken from the bones. Discard the cinnamon sticks & bones.
  • Pour the 2 cups of sauce in with the dry couscous, stir. Cover & let sit for 8-10 minutes. Uncover & add the rest of the butter, stir until melted.
  • Dump half the couscous onto a serving platter. Flatten into a large circle then arrange the chicken in a single layer over the couscous. Spread the rest of the couscous over the chicken to form another flat circle.
  • Dust a fine layer of confectioners sugar over the couscous & decorate with thin lines of cinnamon. Serve with a small bowl of confectioners sugar & cinnamon on the side.
