MOROCCAN SPICED GOAT STEW

This is a deliciously rich, goat stew, lightly spiced with Moroccan style spices. The perfect midweek supper dish.

Number Of Ingredients 20

For the Roasted Spice Mix:
1 tbsp. cumin seeds
½ tbsp. caraway seeds
1 tbsp. fennel
4 cloves
½ tbsp. cardamom seeds (the tiny black seeds inside the shell)
3 tbsp. Ras al Hanout spice mix (or make your own)
Stew:
2 lb./900 grams/goat shoulder, cut into large chunks
1 small pot yogurt (5 to 6 oz.)
Small handful of fresh mint leaves
2 cloves garlic, crushed
2 oz. /55 grams butter
6 tbsp. vegetable oil
2 medium red onions, finely chopped
2 tbsp. freshly grated ginger
3 tbsp. of the roasted spice mix (recipe above)
2 tbsp. tomato paste
3 cups/750 mL beef stock
Handful fresh coriander/cilantro

Steps:

  • Gather the roasted spice mixture ingredients.
  • Mix cumin seeds, caraway seeds, fennel seeds, whole cloves, cardamom seeds, and ras al hanout together in a small bowl.
  • Heat a large frying pan , sprinkle spice mix in and cook for 1 minute, shaking the pan constantly and taking care not to burn.
  • Once cooked, tip the spice mix into a screw-top jar and set aside.
  • Gather stew ingredients as well as prepared spice mix.
  • Pat the chunks of goat meat dry with a paper towel.
  • Place meat into a bowl. Add the yogurt, mint, garlic, and stir well. Cover, and place in the fridge and leave to marinate for a minimum of 3 hours, or even better, overnight.
  • When ready to cook the meat, heat the butter and 4 tablespoons of the oil in a heavy-bottom pot, add the onions and cook gently for 5 minutes until soft.
  • Add the ginger, 3 tablespoons of the spice mix from the recipe you made earlier, and stir.
  • Then add the tomato paste and stir again.
  • Add the beef stock, bring to a boil, reduce the heat, and simmer for 15 minutes.
  • Pour the sauce into a food processor and blend thoroughly.
  • Pass the sauce through a fine sieve into a bowl, and set aside. Preheat the oven to 325 F/160 C/Gas 3.
  • Reheat the pot over medium-high heat, add the remaining oil, and once hot, add the cubed meat and fry for several minutes until the meat is lightly browned.
  • Pour the pureed sauce over the meat, bring to a boil, and cook, uncovered, for 5 minutes.
  • Cover the pot with its lid and place in the middle of the preheated oven. Cook for 4 hours, stirring occasionally and making sure the meat is always covered with the sauce. If the sauce is drying up, add a little boiling water and lower the heat.
  • After the 4 hours, remove from the oven, the meat should be soft and tender (if not, return to the oven for a little longer). Check the seasoning and season with additional salt, if needed. Before serving, chop the fresh cilantro and add to the stew. Serve with grilled Moroccan flatbreads and/or plain boiled rice to soak up the lovely sauce.

This delicious, healthy North African-inspired stew is a family favorite, served with warm bread or even over couscous. You can make the entire stew ahead of time, let it cool, and refrigerate it for up to 3 days or freeze it for several months. You can also chop the veggies and mix the spices ahead of time, freeze them, and assemble it with the canned ingredients the day you wish to cook it for a wonderful exotic meal in just 30 minutes.

1 teaspoon ground cinnamon
1 teaspoon ground cumin
1 teaspoon kosher salt
½ teaspoon ground ginger
¼ teaspoon ground cloves
¼ teaspoon ground nutmeg
¼ teaspoon ground turmeric
⅛ teaspoon curry powder
1 tablespoon butter
1 sweet onion, chopped
2 cups finely shredded kale
4 (14 ounce) cans organic vegetable broth
1 (15 ounce) can garbanzo beans, drained
1 (14.5 ounce) can diced tomatoes, undrained
3 large potatoes, peeled and diced
2 sweet potatoes, peeled and diced
4 large carrots, chopped
1 cup dried lentils, rinsed
½ cup chopped dried apricots
1 tablespoon honey
1 teaspoon ground black pepper, to taste
1 tablespoon cornstarch
1 tablespoon water

Steps:

  • Combine cinnamon, cumin, salt, ginger, cloves, nutmeg, turmeric, and curry powder in a large bowl.
  • Melt butter in a large pot over medium heat. Cook the onion in the butter until soft and just beginning to brown, 5 to 10 minutes. Stir in kale and spice mixture; cook until kale begins to wilt and spices are fragrant, about 2 minutes.
  • Pour the vegetable broth into the pot. Stir garbanzo beans, tomatoes, potatoes, sweet potatoes, carrots, lentils, apricots, and honey, into the broth; bring to boil, reduce heat to low, and simmer until vegetables and lentils are cooked and tender, about 30 minutes. Season stew with black pepper.
  • Dissolve cornstarch in water; stir into stew and simmer thickened, about 5 minutes.

This is based on a Filipino stew recipe called caldereta. It is usually served with rice. I suggest marinating the meat for at least 6 hours. The serving size for this recipe is 2 to 4 depending on how much bone the meat has. Serve over rice. Masarap!

1 pound bone-in goat meat, cut into large chunks
¼ cup vinegar
¼ cup soy sauce
4 cloves garlic, crushed
1 tablespoon vegetable oil
1 onion, chopped
1 red bell pepper, cut into 1-inch squares
1 cup tomato sauce
2 cups beef stock
1 potato, peeled and cut into large chunks
2 carrots, peeled and cut into large chunks
½ cup green peas
½ teaspoon salt
¼ teaspoon pepper
1 pinch cayenne pepper

Steps:

  • Mix goat meat with vinegar, soy sauce, and garlic in a large bowl; cover and refrigerate from 1 to 8 hours. For best flavor, marinate at least 6 hours. Remove meat from marinade and pat dry with paper towels; reserve marinade and garlic cloves.
  • Heat vegetable oil in a large pot over medium-high heat and brown the goat meat, working in batches if necessary, 10 to 15 minutes. Set goat meat aside. Cook and stir onion, red bell pepper, and garlic cloves from the marinade over medium heat until onion is translucent, about 5 minutes; pour in tomato sauce and bring mixture to a simmer. Allow to cook down slightly, about 5 minutes.
  • Return goat meat to the sauce and pour in reserved marinade and beef stock. Bring to a boil, reduce heat to low, and simmer covered until goat meat is partially tender, 30 to 40 minutes. Stir in potato, carrots, and peas; season with salt, black pepper, and cayenne pepper. Simmer until goat meat is very tender and potato and carrots are cooked through, 20 to 30 more minutes. Adjust seasonings before serving.

4 shallots, diced
1 medium sweet onion, diced
2 lbs goat meat or 2 lbs lamb stew meat, chunked
3 garlic cloves, minced
2 large heirloom tomatoes, chunked
1 cinnamon stick
2 ounces dried apricots, chopped
1 quart chicken soup (pho)
2 cups cooked brown rice
2 teaspoons ground cumin
2 teaspoons ground coriander
2 teaspoons ground ginger
3 teaspoons paprika
2 teaspoons turmeric
1 teaspoon chili powder
2 teaspoons sea salt
black pepper (3 grinds)
baby arugula, washed well
2 cups cubed roasted butternut squash

Steps:

  • Coat meat with well mixed spice mixture.
  • melt butter in skillet, cook onion, garlic and shallots until soft and transparent.
  • take half of onion mixure and half of meat and brown until edges are crispy over med high.
  • repeat with remaining meat and onion mixture.
  • place in crock pot while cooking the other half of meat and onion mixture.
  • place meat, tomatoes, cinnamon, apricots and pho in crock pot and cook on high until the meat is fork tender and falling off the bone.
  • after the meat is tender remove the cover, add the pre-cooked brown rice and cook for one half hour more to thicken.
  • top the stew with roasted squash and greens.

This warming one-pot stew is packed with nourishing ingredients like fibre-full chickpeas and iron-rich lentils

1 tbsp cold-pressed rapeseed oil
1 medium onion, peeled and finely sliced
2 thin leeks, trimmed and cut into thick slices
2 large garlic cloves, peeled and finely sliced
2 tsp ground coriander
2 tsp ground cumin
½ tsp dried chilli flakes
¼ tsp ground cinnamon
400g can of chopped tomatoes
1 red pepper, deseeded and cut into chunks
1 yellow pepper, deseeded and cut into chunks
400g can of chickpeas, drained and rinsed
100g dried split red lentils
375g sweet potatoes, peeled and cut into chunks
juice 1 large orange plus peel, thickly sliced with a vegetable peeler
50g mixed nuts, such as brazils, hazelnuts, pecans and walnuts, toasted and roughly chopped
½ small pack coriander, roughly chopped, to serve
full-fat natural bio-yogurt, to serve (optional)

Steps:

  • Heat the oil in a large flameproof casserole or saucepan and gently fry the onion and leeks for 10-15 mins until well softened, stirring occasionally. Add the garlic and cook for 2 mins more.
  • Stir in the ground coriander, cumin, chilli and cinnamon. Cook for 2 mins, stirring occasionally. Season with plenty of ground black pepper. Add the chopped tomatoes, peppers, chickpeas, lentils, sweet potatoes, orange peel and juice, half the nuts and 400ml/14fl oz water and bring to a simmer. Cook for 15 mins, adding a splash of water if the stew looks too dry, and stir occasionally until the potatoes are softened but not breaking apart.
  • Remove the pan from the heat and ladle the stew into bowls. Scatter with coriander and the remaining nuts and top with yogurt, if using.

Ras el hanout is a fragrant North African spice. It works perfectly with pork sausages in a tomato casserole sauce with dates and onions

2 tsp vegetable oil
8 good-quality pork sausages
2 red onions , cut into wedges
1 garlic clove , crushed
2 tbsp Moroccan spice mix or ras el hanout
100g soft pitted date , roughly chopped
400g can chopped tomato
175ml hot beef stock
1 tbsp cornflour
mashed potato , to serve

Steps:

  • In a large saucepan or flameproof casserole dish, heat the oil and brown the sausages with the onions for 10 mins until golden. Add the garlic and spice mix with 75ml water to prevent them from burning, and cook for 2 mins until fragrant. Add the dates and tomatoes, mix well, then spread out onto 2 plates to cool before pouring into a freezer bag and freezing for up to 3 months.
  • To cook from frozen, put the stew into a large saucepan or flameproof casserole dish with all but 2 tbsp of the stock. Cover with a lid and gently heat to defrost for 25 mins, stirring occasionally.
  • Once the stew is fully defrosted, mix the cornflour with the reserved stock and pour into the pan. Bring to the boil and simmer, uncovered, for 5 mins until thickened and piping hot. Serve with mashed potato.
