For years I've taken these crispy, crunchy snacks to work. They get high marks from everybody in the teachers lounge. -Eileen Ball, Cornelius, North Carolina

1 cup unsalted butter, softened
2-1/2 cups shredded extra-sharp cheddar cheese
2 cups all-purpose flour
3/4 teaspoon salt
1/2 teaspoon cayenne pepper
2-1/2 cups Rice Krispies
Pecan halves, optional

Steps:

  • Beat butter and cheese until blended. In another bowl, whisk flour, salt and cayenne; gradually beat into cheese mixture. Stir in Rice Krispies. If necessary, turn onto a lightly floured surface and knead 4-6 times, forming a stiff dough., Divide dough in half; shape each into a 7-in.-long roll. Wrap and refrigerate 1 hour or overnight., Preheat oven to 350°. Unwrap and cut dough crosswise into 1/4-in. slices. Place 1 in. apart on parchment-lined baking sheets. If desired, top each slice with a pecan half. Bake until edges are golden brown, 14-16 minutes. Remove from pans to wire racks to cool. To Make Ahead: Dough can be made 2 days in advance. Freeze option: Freeze wrapped logs in an airtight container. To use, unwrap frozen logs and cut into slices. Bake as directed.

These are addictive! They can be made to anyone's taste by adjusting the amount of heat.

Number Of Ingredients 9

1 pound shredded Cheddar cheese
1 cup butter, softened
2 cups all-purpose flour
2 cups crisp rice cereal
½ teaspoon salt
2 dashes Worcestershire sauce
1 pinch garlic powder
¼ teaspoon cayenne pepper
freshly ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine cheese, butter or margarine, flour, crispy rice cereal, salt, Worcestershire sauce, garlic powder, cayenne pepper, and black pepper. Mix well and form small balls out of the dough (the dough will yield approximately 55 balls). Flatten each ball of dough with your fingertips until the dough is very thin and arrange the discs on a cookie sheet.
  • Bake for 12 minutes; or until the Cheese Crispies are golden and slightly brown around the edges. Enjoy!

2 cups shredded cheddar cheese
1/2 cup grated Parmesan cheese
1/2 cup butter, softened
3 tablespoons water
1 cup all-purpose flour
1/4 teaspoon salt
1 cup quick-cooking oats
2/3 cup roasted salted sunflower kernels

Steps:

  • In a bowl, combine cheddar and Parmesan cheeses, butter and water until well mixed. Combine flour and salt; add to cheese mixture. Stir in oats and sunflower kernels. Knead dough until it holds together. Shape into a 12-in. roll. , Cover; chill for 4 hours or overnight. Allow to stand at room temperature for 10 minutes before cutting into 1/8-in. slices. Preheat oven to 400°. , Place on greased foil-lined baking sheets. Bake until edges are golden, 8 to 10 minutes. Slide crackers and foil off baking sheets to wire racks to cool.

1 cup shortening
1 cup sugar
1 cup packed brown sugar
2 large eggs
1 teaspoon vanilla extract
3 cups quick-cooking oats
1-1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon

Steps:

  • In a large bowl, cream shortening and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the oats, flour, baking soda, salt nutmeg and cinnamon and mix well; gradually add to creamed mixture. , Drop by tablespoonfuls 2 in. apart onto ungreased baking sheets. Flatten with a fork. Bake at 350° for 10-12 minutes or until lightly browned. Remove to wire racks to cool.

1 package (10 ounces) miniature marshmallows
3 tablespoons canola oil
2 teaspoons coffee extract
5 cups Rice Krispies
1 cup chocolate-covered espresso beans, coarsely chopped and divided
2 cups dark chocolate chips, melted

Steps:

  • In a microwave or in a large saucepan over low heat, melt marshmallows and oil; stir until smooth. Remove from heat; stir in extract. Stir in cereal and 1/2 cup of espresso beans. Press mixture into a lightly-greased 13x9-in. baking pan using wax paper or a lightly-greased spatula. Cool to room temperature. Spread melted chocolate on top and sprinkle with remaining 1/2 cup of espresso beans. Cut into bars.

1 (1/4-ounce) package active dry yeast
1/2 cup warm water (110° - 115°)
1 cup warm milk (110° - 115°)
2 cups sugar, divided
1/2 cup vegetable oil
1-1/4 teaspoons salt
2 eggs
1-1/2 teaspoons lemon extract
5-1/2 to 6 cups all-purpose flour
6 tablespoons butter or margarine, softened, divided
1 tablespoon ground cinnamon

Steps:

  • In a large mixing bowl, dissolve yeast in water let stand for 5 minutes. Add milk, 1/2 cup sugar, oil, salt, eggs, extract and 2 cups flour beat well. Add enough remaining flour to make a soft dough. Turn onto a floured board knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. Punch the dough down. On a floured surface, roll out to a large rectangle 1/4 in. thick. Spread with 2 tablespoons butter and sprinkle with 1/3 cup of the remaining sugar. Fold dough in half lengthwise roll out to 1/4-in. thickness. Spread with 2 tablespoons butter and sprinkle with 1/3 cup sugar. Fold in half widthwise roll to 1/4-in. thickness. Spread with remaining butter and sprinkle with 1/3 cup sugar. Fold in half lengthwise roll out to an 18-in. x 10-in. rectangle. Combine the cinnamon and remaining sugar sprinkle half over the dough to within 1/4 in. of all edges. Starting with the shorter side, roll up tightly and pinch to seal. Cut into 1/2-in. slices and place on greased baking sheets (four to six slices per sheet). Cover with waxed paper and flatten with palm of hand. Sprinkle with remaining cinnamon-sugar. Let stand for 30 minutes. Bake at 400° for 12-15 minutes.
