1 cup milk
3 beaten eggs
4 cups shredded sharp cheddar cheese
1 (7 ounce) can diced green chilies or 1 (7 ounce) can jalapenos, if you want hot

Steps:

  • Place cheese and chilies in the bottom of a greased 9x13-inch pan.
  • Beat Bisquick, milk and eggs together. Pour over cheese and bake in oven for 20-30 minutes at 350 degrees or until golden brown.
  • Cut into squares.

6 beaten eggs
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 tablespoon cayenne pepper sauce
3 (4 oz) cans with juice diced green chiles
1 1/2 cups grated Monterey Jack cheese
1 1/2 cups grated sharp cheddar cheese

Steps:

  • Preheat the oven to 300 °F.
  • Spray a 12 by 8-inch baking dish with cooking spray.
  • In a bowl, add the eggs, salt, pepper and cayenne pepper sauce. Mix together well.
  • Add the chiles and both cheeses to a large bowl. Pour the liquid ingredients into the cheese mixture and stir well. Pat the mixture down into the prepared baking dish and bake until the center is firm, about 45 minutes. Allow to cool, then cut into small squares and serve.

2 cups shredded Monterey or pepper jack cheese
2 cups shredded cheddar cheese
1 (7 ounce) can chopped green chilies, drained
3/4 cup whole milk
1/2 cup all-purpose flour
2 large eggs
Cajun seasoning and chopped parsley, for garnish, optional

Steps:

  • Preheat oven to 350 degrees F.
  • For easier removal, butter or line an 8 x 8 inch baking dish, preferably glass, with a sheet of parchment paper, leaving overhang on edges.
  • Combine the shredded cheeses and add half of them to the baking dish. Top with the green chilies and add the remaining cheese to the top. Gently press into pan.
  • Whisk together the milk and eggs, add flour and whisk well. Drizzle evenly across the top of the cheese.
  • Bake, uncovered, at 350 degrees F for about 30 minutes or until lightly browned on top. Remove and let cool.
  • Garnish with a light sprinkle of Cajun seasoning and parsley if desired. Let cool and cut into bite-sized squares. Best when served slightly warm or at room temperature.

1 (8 ounce) package cream cheese
1 egg
1/2 teaspoon cumin
3/4 cup cheddar cheese, grated
3/4 cup monterey jack cheese, grated
1 (4 ounce) can green chilies, chopped, drained

Steps:

  • Preheat oven to 375.

1 stick butter or margarine
10 eggs, slightly beaten
1/2 c flour
1 tsp baking powder
1/2 tsp salt
1 c chopped green chile (canned is ok)
1 pt small curd cottage cheese
1 lb shredded cheddar & monterey jack

Steps:

  • 1. Melt butter and cool. Pour into large bowl; add eggs, beating slightly. Add in all other ingredients and mix well.
  • 2. Pour into a buttered 13" x 9" x 2" pan. Bake at 400 degrees for 15 minutes - THEN lower to 350 degrees for 30 minutes.

1 tsp baking powder
dash of salt (optional)
3 c shredded jack or cheddar, or both
2 4 oz cans of chopped green chiles

NOW -- I pay much more attention to grits recipes, expecially when there is an unexpected, added twist. These go well with ANY beef and/or vegetables, and are just a little different. Times do not include chill time.

1 lb grated monterey jack cheese
1 lb grated cheddar cheese
2/3 cup evaporated milk
5 eggs
1 teaspoon flour
1/2 teaspoon garlic salt

Steps:

  • 350º.
  • 9"x13" pan.
  • Spray pan with Pam. Layer 1/2 cheddar cheese 1/2 green chilies, all the Monterey Jack, remaining 1/2 green chilies, remaining 1/2 cheddar cheese. Beat eggs with milk and flour. Pour over cheese mixture. Sprinkle with paprika and bake for 45 minutes. Cut into squares.

This is a family favorite and it is very easy to make. We originally discovered it as an appetizer, but I think it is great for brunch. I also make it just for myself and freeze the squares to have for lunch in the future. The recipe is very open to substitutions. Fresh green chiles can be used if you happen to live where you can get them and the recipe can probably be made without them or with any amount according to your tastes.

1 (4 ounce) can diced peeled green chilies, drained
8 ounces grated monterey jack cheese or 8 ounces sharp cheddar cheese
1 cup biscuit mix
1 cup light cream (evaporated milk also works)
4 eggs
1/4 teaspoon salt
1/4 cup sliced pimento stuffed olive

Steps:

  • Sprinkle chiles and cheese in the bottom of a lightly greased 9-inch square baking pan.
  • Combine biscuit baking mix, cream or milk, eggs, and salt in a medium-sized bowl.
  • Beat until thoroughly blended.
  • Pour over chili-cheese mixture.
  • Bake in a 375º for 30 minutes or until puffed, golden, and a skewer inserted in center comes out clean.
  • Let stand 10 minutes before slicing.
  • Garnish with olive slices, if you wish.
  • To freeze ahead: Freeze squares in a single layer on a large baking sheet.
  • Transfer to a plastic bag when frozen.
  • To reheat: arrange squares in a single layer on a large baking sheet and bake at 350º for 15 minutes.
