ANDES MINT CHOCOLATE CHIP FUDGE



Andes Mint Chocolate Chip Fudge image

A giant Andes mint in fudge form. So good and dangerously easy! No candy thermometer required.

Number Of Ingredients 7

2 and 1/2 cups semi-sweet chocolate chips, divided
1 14 oz can sweetened condensed milk, divided
1 and 1/2 cups white chocolate baking chips
1 teaspoon peppermint extract (or more, go by your taste preference)
2 drops green food coloring
1 teaspoon canola or vegetable oil
1/2 cup mini chocolate chips and/or Andes Creme De Menthe Baking Chips

Steps:

  • Line an 8×8 baking pan with parchment paper. Spray paper with non-stick spray and set aside.
  • In a small saucepan over low heat, melt 1.5 cups chocolate chips with 3/4 cup sweetened condensed milk, stirring occasionally. Spread melted chocolate mixture into pan and chill for 5-10 minutes.
  • In another saucepan, melt white baking chips and remaining condensed milk, stirring until completely smooth. Remove from the heat and add peppermint extract and food coloring. Spread mint layer over chilled chocolate layer. Chill for 5-10 minutes as you make the final layer.
  • Melt remaining 1 cup of chocolate chips with 1 tsp oil in the microwave in 30 second increments. Stir until completely smooth. Spread over chilled mint layer. Top with mini chocolate chips and/or Andes baking chips. Refrigerate at least 2 hours or until fudge is completely set (could take up to 4 hours).
  • Cut into squares. Store in an airtight container in the refrigerator up to two weeks.

This mint chocolate fudge swirl is the perfect treat for the holidays. Each bite is a smooth, creamy, mint-chocolatey taste of heaven!

10 oz milk chocolate bar ((such as Hershey bars, broken into pieces))
10 oz Andes Mint Chips ((or chocolate & mint chips))
10 oz plain white chocolate (try to find actual chocolate bars, not bark)
12 oz white chocolate chips
1/2 c butter (divided)
8 oz marshmallow fluff ((1 jar) divided)
4 1/2 c sugar
12 oz evaporated milk
1/2 tsp creme de menthe (or mint extract )

Steps:

  • In a large mixing bowl, combine milk chocolate bar pieces,Ande's Mint Chips, 4 Tbsp. butter, and half of the marshmallow whip. Set aside.
  • In a separate large mixing bowl, combine white chocolate bar pieces, white chocolate chips, 4 Tbsp. butter and remaining marshmallow whip. Set aside.
  • Note: If you are wanting to make the swirls green (as pictured), add some green GEL food coloring (NOT water-based) to the white chocolate bowl.
  • In a LARGE saucepan (it will boil up high), combine sugar, evaporated milk and creme de menthe. Bring to a rolling boil over medium heat. Stir CONSTANTLY for 4 MINUTES.
  • Pour about a cup of cooked mixture into each bowl of chocolate at a time, stirring as constantly as you can for each bowl (you might want a helper for this part). Try to divide the cooked mixture between the two bowls as evenly as you can.
  • Stir each bowl until all chocolate is melted and smooth.
  • Pour about 1/3 of each type of fudge at a time into a greased 9x13 glass baking dish.
  • Using a knife, swirl the two types of fudge together to make a pretty, swirled design.
  • Cover tightly and refrigerate until hardened (several hours or overnight).
  • Keep refrigerated until ready to serve.

Mint Chocolate Fudge is a delicious and easy treat to make. Good luck eating only one piece!

1 1/2 cups milk chocolate chips
1 1/2 cups white chocolate chips
14 ounces sweetened condensed milk (be sure not to buy evaporated milk)
1 teaspoon mint extract
green food coloring

Steps:

  • Line an 8x8 pan with foil so that it is sticking out over the edges.
  • Seperately, and following the instructions on the bag, melt the chocolate in the microwave. A lot of the melting will occur from stirring the chocolate, stir very well after every 30 second interval, and be careful not to over heat the chocolate. It will likely be melted after less than a minute.
  • Add half of the sweetened condensed milk to one bowl of melted chocolate and half to the other.
  • Add the mint extract to the chocolate bowl, and add the green food coloring to the white chips. Stir until fully combined.
  • Remove both pans from the heat and add a few spoonfuls at a time of each one to the pan. Continue adding randomly until both sauce pans are empty. Shake the 8x8 pan a little to make it even. Very gently run a butter knife a few times through to give it a swirled effect.
  • Refrigerate overnight. Pull the foil (with the fudge) out of the pan and away from the fudge. Cut off the rough edges (just a very small amount to make a clean edge). Then cut the block of fudge into four large pieces. Cut each fourth into 9 pieces for a total of 36 pieces of fudge. Serve or store in an airtight container.

THIS WAS A PLEASANT MISTAKE AT FIRST. NOW ITS A FAMILY TRADITION. IF YOU LIKE CHOCOLATE MINTS AND HAVE EVER TASTED A "RESENS" CHOCOLATE CARAMEL YOU WILL ENJOY THESE LITTLE BEAUTIES. BUT BE WARE THIS MAKES FIVE POUNDS AND YOU HAVE TO HAND WRAP EACH AND EVERY ONE. LOL

4 cup(s) white sugar
1/2 cup(s) butter
1 can(s) evaporated milk
3 - squares each of both white and dark almond bark. broken and shaved for fast melting
1 teaspoon(s) vanilla
1 - bag of mint chocolate chips
1 1/2 - bags of marsh mellows

Steps:

  • you will need the following: a 8 qt pan. a large wooden spoon with long handle, one 13 x 9 glass baking dish lined with tin foil and sprayed heavily with pam. a candy thermometer. several measuring cups
  • the key is to have everything you need before you start. because once you start you can not leave this unattended.
  • in large pot bring to boil sugar,milk,vanilla and butter. add marsh mellows and stir constantly at this point as to not burn. over medium to high heat. stir in almond bark and then mint chips. beat till smooth. bring temp to 240-250 on candy thermometer
  • the mix will be glossy
  • once between 240-250 pour in to prepared dish. allow to cool completely in fridge. will look like fudge. cut into strips of 1 inch wide then into cubes 1/2 inch. wrap in foil and put into caning jars or tin boxes for gifts.
  • i was able to get 5 quart size jars and a small zip bag out of this mix.
