HOMEMADE MARSHMALLOW BALD EAGLES

Homemade Marshmallow Bald Eagles image

These cute little eagles made with marshmallows, coconut, and chocolate can be served on their own or used as cupcake toppers. A treat not just for Philadelphia Eagles fans - they are a great dessert on patriotic holidays like 4th of July.

Time 30m

Yield 12

Number Of Ingredients 6

1 (12 ounce) package confectioners' coating (such as Wilton® Candy Melts®)
12 marshmallows
1 (7 ounce) package sweetened flaked coconut
¼ cup semisweet chocolate chips
12 mint sandwich cookies (such as Oreo®)
12 whole cashews

Steps:

  • Place white confectioners' coating in the top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until chocolate is melted, about 5 minutes.
  • Insert a toothpick into the marshmallows and dip them into the melted white chocolate. Then roll in coconut and place on the mint sandwich cookie. Using kitchen shears, cut a slit and place a cashew where the beak should go. Melt the chocolate chips. Using a toothpick, draw a dot with a line over it on each side of the eagle's head for the eyes.

TREASURE ISLAND CHICKEN

Treasure Island Chicken image

A sweet and tangy chicken with sauce left over to use as a gravy. Love to serve this with rice and peas and cover the chicken and rice with the sauce before serving. Got this recipe from Mom.

Provided by Bow8651

Categories     Chicken Breast

Time 1h15m

Yield 6 serving(s)

Number Of Ingredients 9

3 lbs chicken breasts, and legs
4 tablespoons butter
3 tablespoons flour
3 tablespoons sugar
1/2 teaspoon salt
1/4 teaspoon dry mustard
1/2 teaspoon cinnamon
1/2 teaspoon ginger
1 1/2 cups orange juice

Steps:

  • Remove skin from chicken breasts and legs. Place chicken in baking dish bone side up. Amount of chicken you can cook depends on the size of your baking dish. 2 QT dish can make just over 3 lbs, which should be enough to serve 6.
  • Bake chicken at 350 degrees for 30 minutes.
  • After chicken has cooked for about 20 minutes, melt butter in saucepan. Once melted, stir in remaining ingredients. Cook over medium heat and stir sauce until thickened.
  • Remove chicken from oven and dish. Drain fat and wipe down dish. Place chicken back in dish bone side down. Cover with sauce and bake at 350 degrees for another 30 minutes.
  • Remove chicken from oven and dish. Drain sauce from dish into gravy boat. As stated, love to serve with rice and peas, but that all open to interpretation. Cover chicken and rice with sauce at will before serving. Then get down to enjoying the tasty goodness.

3 cups rolled oats
½ cup flaked coconut
2 cups semisweet chocolate chips

Gradually mix in the sifted ingredients until well blended. Using a wooden spoon, stir in the cornflakes, oats, coconut, chocolate chips, and walnuts. Roll the dough into walnut sized balls, and place 2 inches apart on prepared cookie sheets; flatten slightly.
