4 ounces unsweetened chocolate, chopped
1/4 cup butter, cubed
2/3 cup 2% milk
1 cup sugar
1/4 teaspoon vanilla extract

Steps:

  • Melt chocolate and butter in a metal bowl over barely simmering water. Stir until smooth., Place milk, sugar and vanilla in a blender; cover and process 1 minute to dissolve sugar. Add warm chocolate mixture; cover and process just until mixture thickens to desired consistency, about 30 seconds. Store in refrigerator.

Mom always cooked each of us our favorite cake on our birthday. My little brother's favorite was 4 layer yellow cake with this cooked fudge icing. The only icing I can cook that turns out right every time. My brother liked it so it was slightly hard when done. I love it that way too. I have used this on Boston Cream Pie as well.

2 cups sugar
2 tablespoons corn syrup
3 squares chocolate
1/2 cup milk
1 teaspoon vanilla
2 tablespoons butter

Steps:

  • Cook sugar, syrup, chocolate and milk, stirring constantly to soft ball stage (232 degrees).
  • Remove from heat.
  • Add vanilla and butter, stirring until melted.
  • Cool til lukewarm without stirring.
  • When lukewarm, beat until creamy and thick enough to spread.

3 cups sugar
1/2 cup butter
1 cup whole milk
Dash of salt
4 ounces unsweetened chocolate
1 teaspoon vanilla extract
1 cup chopped pecans or walnuts

Steps:

  • Butter an 8 x 8-inch pan. Combine sugar, butter, milk, salt, and chocolate in medium saucepan. Stirring constantly, cook over medium heat until all ingredients melt and come to a boil. Do not scrape down the sides of the pan. Lower heat, insert candy thermometer, and let boil slowly without stirring for about 10 minutes or until soft ball forms when dropped in a cup of cold water (238 degrees F on a candy thermometer). Remove pan from heat and cool. Add vanilla. Beat steadily until fudge loses its gloss. Add nuts. Pour into pan. Cool for 20 minutes and cut into squares. Store in airtight container or wrap in tinfoil.

This is my Mom's frosting that she always made to go with her brownies, cupcakes, or cakes. She also used it to fill between graham crackers as a treat for all the kids.

1/4 cup margarine (1/2 stick) or 1/4 cup butter (1/2 stick)
2 ounces unsweetened chocolate
1/4 cup milk
1 teaspoon vanilla
2 dashes salt
1 (16 ounce) package powdered sugar

Steps:

  • In a 2 quart saucepan, melt the margarine and chocolate over low heat, stirring constantly.
  • Add milk, vanilla and salt and remove from heat.
  • Stir in powdered sugar to make a rather stiff frosting.
  • Beat until lumps disappear and frosting is smooth. You may have to use a small additional amount of milk.
  • Return pan to stove, heat over low heat stirring constantly until frosting is lukewarm. This makes the frosting more liquid and easier to spread on brownies or cakes.

2/3 c softened butter
1 1/8 c sugar
2 tsp pure vanilla extract
2 eggs
1/2 tsp salt
2 tsp baking powder
2 c sifted flour or pastry flour
1 c whole milk
FUDGEY FROSTING
1/3 c soft butter
2 tsp pure vanilla extract
1/4 c baking cocoa
1 dash(es) salt
2 c confectioner's sugar
milk or cream to consistency

Steps:

  • 1. 1. Preheat your oven to 350 degrees Farenheit. Grease and flour a 9'' by 9'' by 2'' baking pan.
  • 2. 2. Cream together the butter, sugar, salt and vanilla. Add the eggs and mix well.
  • 3. 3. Add the baking powder, some of the flour and blend alternately with the milk.
  • 4. 4. Add the rest of the flour, mix well, the rest of the milk, and beat by hand for two minutes.
  • 5. 5. Pour batter into prepared baking pan and bake for 35 minutes. This will be moist do not over bake. Allow cake to cool.
  • 6. 6. Make the Fudgey Frosting-Combine all frosting ingredients in a bowl except milk or cream, then add milk or cream little by little until you get the right consistency for spreading. Frost cake when cooled. Enjoy!

¼ cup all-purpose flour
1 cup milk
½ cup shortening
¾ cup white sugar
½ cup butter, softened
2 teaspoons vanilla extract

Steps:

  • In a small saucepan mix the flour and the milk and cook over low heat until it forms a smooth paste with no lumps. Place in refrigerator and let cool completely.
  • With an electric mixer beat the shortening, butter or margarine and the sugar until light and fluffy. Beat in the cooled flour paste and mix until smooth. Stir in the vanilla. Use to frost any cooled cake. Makes enough to frost one 9x13 inch sheet cake or two 8 or 9 inch layer cakes.
