6 boneless, skinless chicken breasts (about 3 1/2 pounds)
4 envelopes Italian dressing mix
2 tablespoons vegetable oil
2 tablespoons unsalted butter
1 pound white mushrooms, sliced
Kosher salt
One 10 3/4-ounce can cream of mushroom soup
6 ounces cream cheese
3/4 cup dry white wine
2 tablespoons chopped fresh flat-leaf parsley

Steps:

  • Preheat the oven to 350 degrees F.
  • Coat the chicken breasts in the dressing mix.
  • Heat the oil in a large nonstick skillet over medium-high heat until very hot. Add the chicken and cook undisturbed until well browned, about 4 minutes. Turn the chicken, add the butter to the pan, and cook until the chicken is just golden brown on the reverse side, 3 minutes more. Transfer the chicken to a large baking dish.
  • To the skillet, add the mushrooms and a pinch of salt; cook, stirring occasionally, until golden brown, about 5 minutes. Spoon the mushrooms on top of the chicken.
  • In a medium saucepan combine the soup, cream cheese and wine. Stir over medium-high heat until well blended and heated through. Pour the sauce over the chicken and mushrooms.
  • Bake, uncovered, until the chicken is cooked through, 1 hour. Sprinkle with parsley and serve.

MOM'S COMPANY CHICKEN

I am sure we all have this recipe or knows someone who does! We grew up with this being my Mom's "go to" recipe when company was coming (otherwise her chicken would have been swimming in tomato sauce)

6 boneless, skinless chicken breasts
8-10 slices swiss cheese
1 can(s) cream of chicken or cream of mushroom soup
1/2 c good dry white wine
1/4 c cream or milk
1/2 pkg stuffing mix (like pepperidge farms or arnolds)
1 c melted butter

Steps:

  • 1. Spray a rectangular pan with Pam. Prehaet oven to 350
  • 2. Put the chicken breasts in the baking dish. Top with the swiss cheese slices.
  • 3. Mix the soup, wine and cream together. Pour over the chicken and cheese. Sprinkle with the stuffing mix (right on top of the chicken) Pour the melted butter over the top and bake uncovered for an hour (or until the chicken is done)

This was my mom's fall back recipe for company...it never failed and it tasted great. Mom was not a very creative cook so we girls were impressed. This is rich but really does make a difference to use the whipping cream.

1 cup(s) heavy whipping cream
1 teaspoon(s) nature's seasoning
- paprika

Steps:

  • Preheat oven to 350degrees.
  • Wash and dry chicken breasts, if very large cut in two. Place in a baking dish sprayed with cooking spray. Season with the natures seasoning.
  • Mix the soup and whipping cream and pour over the chicken pieces. Sprinkle paprika lightly over the top. This gives it a nice color when cooked.
  • Bake for 1 hour. The sauce is wonderful so serve with rice to enjoy every bite.

4 skinless, boneless chicken breast halves
2 (10.75 ounce) cans condensed cream of chicken soup
¼ cup mayonnaise
1 teaspoon curry powder
½ cup grated Parmesan cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place chicken in a 9x13 inch baking dish. In a medium bowl, combine the soup, mayonnaise, curry powder and cheese. Mix well and pour mixture over chicken.
  • Cover dish and bake at 350 degrees F (175 degrees C) for 35 to 40 minutes or until chicken is cooked through and no longer pink inside. Remove cover for last 10 minutes of baking to lightly brown the top.

1 (10 3/4 ounce) can condensed cream of mushroom & garlic soup
1 (4 ounce) carton of whipped cream cheese with chives
1/2 cup white wine
8 boneless chicken breasts
1 teaspoon oregano
parsley or green onion

Steps:

  • Mix the soup, cream cheese and wine together.
  • Arrange the chicken in a greased 9 x 13-inch casserole dish.
  • Pour mixture over the chicken, turning chicken to coat well.
  • Crush oregano and sprinkle over the top. Salt and pepper to taste.
  • Cover with foil and cook in oven for 1/2 hour at 350 degrees. Remove foil and cook another 1/2 hour. Baste the chicken with the sauce.
  • Serve over hot noodles or rice. Sprinkle with chopped parsley or green onions.

1 whole chicken, cut up
4 -5 medium potatoes, peeled & cut in 1/2 lengthwise
2 (10 3/4 ounce) cans cream of mushroom soup
1 medium onion, sliced
2 -3 cups shredded cheddar cheese
salt and pepper

Steps:

  • Peel potatoes and slice in half lenthwise. Lay flat side down in a 9 x 13 lightly buttered pan sprinkle with salt and pepper and sliced onions.
  • Season chicken pieces the way you like and brown lightly in a large fry pan. Lay chicken pieces on top of potatoes spread the soup over chicken and follow with the shredded cheddar cheese.
  • Bake at 350 for 1-1/2 to 2 hours. You may need to cover with foil after the first 1 hour if top browns to quickly.
