Basic Cream Cheese Pie (Mom's Cheesecake) image

This is a simple version of cheesecake, using a store bought graham cracker crust. You can dress it up if you wish, by topping it with a little fruit or pie filling.

8 ounces cream cheese, softened and cut into pieces
1 egg
1/4 cup sugar
1 teaspoon vanilla
3/4 cup sour cream (8 oz.)
2 tablespoons butter, melted
1 graham cracker crust, pre-made

Steps:

  • Preheat oven to 325.
  • Combine in blender: egg, sugar, sour cream, vanilla. Blend.
  • While still blending, add cream cheese pieces and pour in the melted butter.
  • Pour into crust and bake for 30 minutes.

2 large eggs
1 sheet refrigerated pie pastry
1 teaspoon ground cinnamon, divided
1-3/4 cups ricotta cheese
4 ounces cream cheese, softened
3 tablespoons confectioners' sugar
1-1/2 teaspoons cornstarch
1/2 teaspoon vanilla extract
1/2 teaspoon salt

Steps:

  • Separate one egg. In a small bowl, lightly beat egg white; set aside. In another small bowl, combine egg and egg yolk; set aside., On a lightly floured surface, unroll pastry; cut in half. Roll out one half of pastry into an 8-in. circle. Transfer to a 7-in. pie plate; trim pastry even with edge. Brush with egg white; sprinkle with 1/2 teaspoon cinnamon., In a large bowl, combine the cheeses, confectioners' sugar, cornstarch, vanilla, salt and egg mixture. Pour into prepared pastry., Roll out remaining pastry to fit top of pie. Place over filling. Trim, seal and flute edges. Cut slits in pastry. Brush remaining egg white over pastry; sprinkle with remaining cinnamon., Bake at 350° for 45-50 minutes or until a knife inserted in the center comes out clean. Cool completely on wire rack. Refrigerate leftovers.

My mom's favorite pie cookbook is the old Farm Journal's "Complete Pie Cookbook" from 1965... and her copy is well-used and loved, full of clippings and hand-written notes. This recipe is based on the one from there, with modifications to her taste. Simple, easy, and delicious, it's a favorite on the mornings after Thanksgiving and Christmas!

1 unbaked 9-inch pie shell
6 slices bacon, cooked until crisp and crumbled (or roughly chopped)
3/4 cup chopped sweet onion (about 1 medium onion)
1 1/4 cups grated cheddar cheese (original recipe calls for Swiss cheese)
1/4 cup grated parmesan cheese (which Mom omits, but I like)
3 eggs, beaten
1 1/2 cups light cream or 1 1/2 cups half-and-half cream
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper

Steps:

  • Preheat oven to 375 degrees F.
  • Cook the bacon until it is crisp, remove it from the pan and set it aside, then drain the fat while reserving 1 tablespoon of it in the pan.
  • Add the onion and gently cook it until it is tender, but is not browned.
  • In a bowl, combine the eggs, light cream or half & half, salt, and pepper.
  • Crumble or roughly chop the bacon to your preference.
  • Place the pie shell in a pie plate.
  • Place the bacon, onion, and cheese in the bottom if the pie shell/crust, then pour the egg mixture over.
  • Bake in the preheated 375 degree F oven for about 45 minutes, or until the quiche is firm and lightly browned.
  • Let rest for 5 minutes, then serve immediately. Makes 6 servings.

2 eggs, beaten
2 tablespoons lemon juice
1 teaspoon vanilla
3/4 cup sugar
1 teaspoon grated lemon rind
1 prepared graham cracker pie crust
1 cup sour cream
3 1/2 tablespoons sugar
1 teaspoon vanilla

Steps:

  • Combine filling ingredients and beat until light and frothy.
  • Pour into graham cracker crust and bake at 350 for 25 to 30 minutes.
  • Remove from oven and cool 5 minutes.
  • Combine topping ingredients, and pour topping over pie.
  • Return to oven and bake 10 minutes longer. Cool and place in refrigerator for approximately 5 hours (if you can wait that long).
  • Optional: When pie is cool, put a can of red pie cherries or pie blueberries, or fresh strawberries, etc on top.

1 cup soft butter (about 200g) or 1 cup margarine (about 200g)
2 1/2 cups self rising flour
8 ounces nonfat sour cream or 8 ounces yogurt
1/4 cup chopped green onion
2 tablespoons butter
1/2 lb crumbled feta or 1/2 lb bulgarian cheese
1/4 cup grated romano cheese
1/2 cup grated edam cheese (any other cheese you have inn the house) or 1/2 cup another hard cheese (any other cheese you have inn the house)
4 ounces fat free cream cheese
1/2 cup fat free sour cream
2 -3 eggs
1/2 cup half-and-half or 1/2 cup heavy cream
salt (optional)
black pepper
2 tablespoons parmesan cheese
2 tablespoons sesame seeds
black pepper

Steps:

  • prepare dough by mixing ingredients together by hand until well blended.
  • refrigerate until filling is ready.
  • Cook the green onion in the butter/margarine over low heat until just cooked, and let cool at room temperature.
  • place the cheeses, cream cheese, sour cream and milk in a food processor.
  • pulse until blended.
  • The mixture does not need to reach a totally creamy consistency.
  • Mix in 2- 3 eggs depending on how thick you want the filling to be.
  • Season to taste with salt and pepper.
  • flatten out 2/3 of the dough in a 9X13 inch pan, and preheat oven to 350.
  • Pour filling into pan over crust.
  • roll the remaining dough between your palms into strips and lay over the filling back and forth (make a lattice pattern).
  • Top with parmesan, sesame seeds and black pepper.
  • Bake for approximately 35-40 minutes, or until golden brown and slightly puffy.

On occasion, I find cheesecake to be way too rich. Don't get me wrong, its absolutely delicious. However, I often want the flavor and creaminess without the heaviness. This is the answer! My mom made this for years and it was always our favorite. I know it will be your favorite go-to recipe too!!

CRUST
1/4 lb butter, softened
4 Tbsp sugar
1 c all purpose flour
1/2 tsp baking powder
1 egg
FILLING
8 oz cream cheese
5 Tbsp sugar
3 eggs
1 Tbsp flour
2 tsp lemon juice
1 tsp vanilla extract
2 c milk, low-fat or whole
cinnamon to taste

Steps:

  • 1. Preheat oven to 275 degrees. In a mixer, add all crust ingredients (butter, sugar, flour, baking powder and egg) and mix on medium speed until well blended. Spread evenly over bottom and sides of an 8x8 glass dish.
  • 2. Pour filling into crust in dish. Sprinkle generously with cinnamon. Bake @ 275 degrees for 1 hour. Let cool in oven - cover and refrigerate for several hours or overnight.

1 tablespoon sugar
6 sprigs fresh thyme
2 packs graham cracker
¼ cup powdered sugar
6 tablespoons butter, melted
1 teaspoon ground cinnamon
12 oz cream cheese, room temperature
2 eggs, room temperature
¾ cup sugar
1 teaspoon vanilla
1 cup sour cream
3 ½ tablespoons sugar
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350˚F (180˚C).
  • Add the grapes to a parchment paper-lined baking sheet and sprinkle with sugar and thyme.
  • Bake for 45-55 minutes. Cool completely.
  • In the bowl of a food processor, add the graham crackers and pulse until finely crumbled.
  • Transfer the graham cracker crumbs to a bowl with the powdered sugar, melted butter, and cinnamon, and stir to combine.
  • Press the graham cracker mixture into an 8- or 9-inch (22-cm) pie dish, pressing an even layer on the bottom and sides of the dish.
  • Bake for 10 minutes.
  • Let crust cool completely before filling.
  • In a bowl, add the cream cheese, eggs, sugar, and vanilla extract, and blend until smooth with a hand mixer.

GRAHAM CRACKER CRUST
1 pkg graham crackers (not the box! - just one package from the box)
2 Tbsp brown sugar
6 Tbsp melted butter
PIE FILLING
2 eggs
1 tsp vanilla
1/3 c sugar
9 oz cream cheese, room temperature (do not use fat free!)
SOUR CREAM TOPPING
1 c sour cream
4 Tbsp sugar

Steps:

  • 1. Put the graham crackers in a food processor with 2 TBL brown sugar. Pulse until completely crumbly. OR put the crackers in a zip top baggie and crush them with a rolling pin. Put the crumbs in a bowl and add the sugar. Then add 6 TBL melted butter to the graham cracker mixture. Press the mixture into a pie tin and bake for 5 minutes at 350 degrees. Let cool while you make the filling.
  • 2. With a hand mixer or stand mixer, combine pie ingredients until very smooth and creamy. Pour into prepared crust. Bake for 20 minutes at 350 or until firm. If it is very jiggly or looks wet in the center, bake for another 5 minutes or so. Let the pie cool for 5 minutes.
  • 3. Whip the topping ingredients and gently pour over the top of the pie, covering the filling completely. Bake for another 5 minutes. Cool completely and refrigerate for several hours before serving.
