A girlfriend's mom made this spread years ago for our Teen Club Luncheon back in Iowa in the 50's. I asked her to tell my Mom how to make it. I made the recipe for my kids while they were growing up & they still love it. Sweet relish and eggs round out the flavor of bologna in this simple but delicious spread. Serve it on cocktail toast, or use it in sandwiches. The amount of egg, creamy salad dressing and relish should be adjusted to taste.

4 eggs
1 (16 ounce) package bologna
1 (16 ounce) jar creamy salad dressing
1 cup sweet pickle relish

Steps:

  • Place eggs in a medium saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
  • Grind the bologna and eggs in a meat grinder with a medium blade.
  • In a large bowl, mix the bologna mixture with desired amount of creamy salad dressing and desired amount of sweet pickle relish. Refrigerate 2 to 3 hours, or until chilled.

1-1/2 pounds bologna or ham, ground
1 to 1-1/4 cups mayonnaise
3/4 cup sweet pickle relish, well drained
3 tablespoons chopped onion
1 tablespoon Worcestershire sauce
30 slices bread
15 slices process American cheese
Lettuce leaves, optional

Steps:

  • In a bowl, mix bologna, mayonnaise, relish, onion and Worcestershire sauce. Use about 1/3 cup of the salad for each sandwich, and top with a slice of cheese and lettuce if desired.

4-5 large hard boiled eggs
1 jar(s) sweet gherkin pickles
1 medium yellow onion
2 Tbsp sugar
1/2 jar(s) miracle whip salad dressing
2 Tbsp yellow mustard

1 pound bologna
1/2 cup sweet pickle relish
1/2 onion
2 stalks celery
2 hard boiled eggs
3 Tablespoons sugar
1 teaspoon flour
1/2 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon ground mustard
1/3 cup vinegar
1 teaspoon butter
2 egg yolks

Steps:

  • Grind bologna, and chop onions, celery and hard boiled eggs. (See notes for an easy shortcut.)
  • Combine ground bologna, diced veggies and eggs and pickle relish. Set aside.
  • In a medium saucepan, cook sugar, flour, salt, pepper, ground mustard, vinegar, butter and egg yolks until just boiling and thickened. Let cool.
  • Combine cooked dressing and bologna mixture.
  • Eat on crackers on as a sandwich.

Mom and Dad would buy bulk bologna every time we traveled to Indiana to see family and this was the treat that was made from the ends of the log. Chopped olives, shredded cheese or chopped pickled banana peppers could be added for a different flavor.

BOLOGNA AND CHEESE SALAD

1/2 cup extra-virgin olive oil
2 tablespoons Baynols vinegar
1 tablespoon lemon juice
Sea salt and freshly cracked black pepper
1 head radicchio
1 head endive
2 cups arugula
1 cup toasted pine nuts
Vegetable oil
8 slices mortadella
6 ounces Gorgonzola

Steps:

  • In a small bowl, whisk together oil, vinegar, and lemon juice. Season with salt and pepper and place in refrigerator. Roughly chop all lettuces and place in bowl. Lightly toss in the pine nuts. Heat oil in saute pan over low heat. While oil warms, spread mortadella into individual sheets. Place dollop (little less than an ounce) of Gorgonzola in the center of each slice and fold mortadella up and around the cheese to form a package. Twist once, and insert toothpick to hold bundle in place. Place the packages in the saute pan and cook about 2 minutes until crispy. Flip and cook 2 minutes more. Remove to paper towel lined plate. Keep warm.
  • Pour vinaigrette over salad and toss gently with fingertips. Divide salad between 4 places. Place 2 meat parcels on top and crack fresh black pepper over each plate.

3 lb bologna ---- i use only eckridge bologna. it is cheaper if you just get the 1 pound packs of luncheon meat. works great!
1 large onion
1 jar(s) sweet pickles
2 c miracle whip

Steps:

  • 1. use meat grinder to grind up bologna, sweet pickels and onions. add miracle whip to get to desired consistancy. enjoy!
