These were a family favorite, when we were growing up. My son loves them, and they sre still my favorite comfort food. The meat mixture can be made ahead, and frozen, it holds up well to a microwave.

1 can campbell vegetable soup (abc's &123's)
1 1/2 lbs browned ground beef
1 small onion, chopped fine
1 teaspoon yellow mustard
2 tablespoons ketchup
2 tablespoons barbecue sauce (optional)
6 -8 hamburger buns, buttered

Steps:

  • Saute onion with browned ground beef, untill clear.
  • add undiluted can of soup, ketchup, mustard and barbeque sauce.
  • Simmer, covered, untill heated through.
  • Just before serving, place opened, buttered buns face down on top of meat mixture in pan and cover for up to 30 seconds to warm buns and melt butter.
  • serve with chips.

Sloppy Joes are a classic recipe that is made of ground beef mixed with a sweet, tangy, and savory sauce. Pile the Sloppy Joe filling high on a bun, add some pickles and dinner is ready!

1½ lb ground beef
1 tbsp oil
1 cup yellow onion (finely diced)
3 garlic cloves (minced)
2 tbsp worcestershire sauce
3 tbsp brown sugar
½ heaping cup ketchup
1 tbsp + 1 teaspoon mustard
1 tsp kosher salt
pepper to taste

Steps:

  • Add the oil to a large skillet over medium high heat. Cook the ground beef, crumbling, until cooked thru, about 7 minutes.
  • Drain the fat off of the cooked beef and set aside.
  • In the same skillet, over medium heat, add the onions and garlic and saute, until the onions are translucent, about 3-4 minutes.
  • Add the beef back to the onions and stir to combine.
  • Over low heat add the worcestershire sauce, brown sugar, ketchup, mustard, salt and pepper. Stir to distribute the sauce evenly.
  • Pile high onto buns and serve. (we like brioche buns the best)

1 lb. ground beef
¼ cup finely diced onion ((frozen is fine))
1 clove garlic, minced (or ⅛ teaspoon dried garlic powder)
¾ cup ketchup
1 tablespoon Worcestershire sauce
1 tablespoon brown sugar
1 tablespoon cider vinegar
1 teaspoon yellow mustard
1 teaspoon kosher salt
Dash of black pepper
For serving: sandwich buns

Steps:

  • In a large skillet over medium-high heat, brown the ground beef, onion and garlic until the meat is no longer pink. Drain.
  • Whisk together the remaining ingredients to make the sauce. Add to the skillet with the beef, onion and garlic.
  • Simmer uncovered over low heat for 10-15 minutes, stirring regularly, until the mixture reaches desired consistency. You can keep the skillet covered if you like the sauce "sloppier." If the sauce is too thick, gradually stir in a small amount of warm water or beef broth. If the sauce is too thin, gradually sift in a small amount of flour while stirring vigorously to thicken.

This is weeknight comfort food at its finest. We created a homemade sauce that is tangy and flavorful but also quick and easy. We used both ketchup and canned tomato sauce for lots of tomato-y zip and just a touch of brown sugar for a bit of sweetness and slight caramel finish. Green bell pepper is a key addition; it really enhances the other ingredients, elevating the flavor profile into the realm of a true sloppy joe.

2 tablespoons unsalted butter
1 medium onion, diced
1 green bell pepper, diced
1 clove garlic, minced
1 pound lean ground beef
12 ounces (1 1/3 cup) tomato sauce
3/4 cup ketchup
2 tablespoons brown sugar
2 tablespoons Worcestershire sauce
1 tablespoon yellow mustard
1 tablespoon red wine vinegar
1 teaspoon paprika
Pinch of cayenne pepper

Steps:

  • Melt the butter in a large skillet over medium-high heat. Add the onions and peppers and cook, stirring occasionally, until softened and starting to caramelize in some spots, 6 to 7 minutes.
