Ice
6 ounces light rum
12 mint sprigs, or spearmint, 8 roughly broken apart
6 tablespoons fresh lime juice
4 tablespoons sugar
Club soda
4 slices lime

Steps:

  • Place ice in beverage shaker then add in the rum, 8 broken up mint sprigs, lime juice and sugar. Shake well and serve over ice in a high ball glass. Top off each glass with a splash of club soda.
  • Garnish each with a slice of lime and a sprig of mint.

This is an authentic recipe for mojito. I sized the recipe for one serving, but you can adjust it accordingly and make a pitcher full. It's a very refreshing drink for hot summer days. Be careful when drinking it, however. If you make a pitcher you might be tempted to drink the whole thing yourself, and you just might find yourself talking Spanish in no time! Tonic water can be substituted instead of the soda water but the taste is different and somewhat bitter.

10 fresh mint leaves
½ lime, cut into 4 wedges
2 tablespoons white sugar, or to taste
1 cup ice cubes
1 ½ fluid ounces white rum
½ cup club soda

Steps:

  • Place mint leaves and 1 lime wedge into a sturdy glass. Use a muddler to crush the mint and lime to release the mint oils and lime juice. Add 2 more lime wedges and the sugar, and muddle again to release the lime juice. Do not strain the mixture. Fill the glass almost to the top with ice. Pour the rum over the ice, and fill the glass with carbonated water. Stir, taste, and add more sugar if desired. Garnish with the remaining lime wedge.

1 tsp granulated sugar
small handful mint leaves, plus extra sprig to serve
60ml white rum
soda water, to taste

Steps:

  • Muddle the lime juice, sugar and mint leaves in a small jug, crushing the mint as you go - you can use the end of a rolling pin for this. Pour into a tall glass and add a handful of ice.
  • Pour over the rum, stirring with a long-handled spoon. Top up with soda water, garnish with mint and serve.

This is a fabulous Mojito recipe that makes enough for 4 glasses. I usually double or triple the recipe and serve it in a glass pitcher that is garnished with mint leaves. Perfect for Cinco de Mayo! This Mojito can be made with either white or gold rum but don't leave out the bitters. ¡Vivas!

12 -15 small fresh mint sprigs, plus 4 more for garnish
1/4 cup sugar, plus
2 tablespoons sugar, sifted (can use superfine sugar)
1/2 cup fresh lime juice, chilled
3/4 cup white rum or 3/4 cup golden rum, chilled
8 dashes Angostura bitters
2 cups club soda, chilled
crushed ice

Steps:

  • In a large container or bowl, muddle mint with sugar until the mint is coarsely chopped and the sugar has turned a shade of green.
  • Add lime juice, rum and bitters and stir until sugar dissolves.
  • Strain into a small pitcher.
  • Pour into iced tea or mojito glasses that are filled about 1/3 with crushed ice and top each drink with 1/2 cup of the club soda. Garnish with mint sprigs and serve.
