This is a family recipe that is a big favorite at our house. By using fresh bread instead of dried bread crumbs, you get a meatloaf that is moist and delicious.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Thoroughly mix ground beef, onion, eggs, bread, milk, green bell pepper, salt, sage, and black pepper together in a bowl. Press into a loaf pan. Spread ketchup over the top of the loaf.
- Bake in the preheated oven until no longer pink in the center, about 45 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

SOFT AND MOIST MEATLOAF

- Pre-heat oven to 350 degrees. Place bread cubes in a large bowl. Beat egg and milk together in a small bowl, then pour over bread cubes. Let stand until bread absorbs milk, about 15 minutes. - 1. In a large plastic ziplock bag, combine all dry ingredients. Then, add the wet ingredients to the bag and mix thoroughly.
- 2. Add ground beef chuck until uniformly mixed. Try not to over mix. Form into a round loaf. (I usually refrigerate for a little while to firm up, but it's not necessary. In fact, you can make the loaf the day before and refrigerate until ready to use.)
- 3. Cut 2 lengths of aluminum foil approximately 29" long. Fold lengthwise 3 times. You will end up with two strips of foil approximately 3 1/2" x 29" long. Spray your crock pot with butter flavored cooking spray. I use a standard-size crock pot, approximately 9" across its round top. Place your two lengths of foil in the form of an "X" in the crock pot. This will act as a sling to lift the meatloaf out easily when it is done cooking. Spray foil with non-stick spray as well. If ends stick out of the top of the crock pot, simply fold them down into the pot.
- 4. Add meatloaf to crock pot. Cover and cook on low for 5-5 1/2 hours. About an hour before the meatloaf is done, combine all of sauce ingredients. Pour sauce on top of meatloaf 35-45 before the end of cooking time.
- 5. When meatloaf is done, lift carefully out of crock pot with your foil sling to a serving platter.
MOIST AND FLAVORFUL MEATLOAF
This recipe makes makes a moist and tender meatloaf without being mushy. I added fresh herbs I had on hand but you can use dried herbs, just use a little less. I made this for friends and family, not realizing some were not meatloaf lovers until they admitted after tasting mine that they were converts! I think the mixture of pork and ground beef makes a real flavor and texture difference. If you don't have creole seasoning (I put Tony Chachere's in almost everything) just sub seasoning or regular salt. The topping is borrowed from Paula Deen after reading rave reviews of her sauce. I was skeptical of the addition of mustard but you don't taste it at all. Be sure to let the loaf rest 5-10 min to set. I use that time to whip my potatoes and reheat my mushroom gravy. Serve with my oven roasted ratatouille also for an easy and complete meal!

- Preheat oven to 350 degrees.
- Saute onion, bell pepper and garlic in a little oil over medium heat until translucent, about 3-5 minutes. Set aside to cool.
- Put all ingredients except milk in a large bowl.
- Stir to combine with one hand while you add milk with the other* until all ingredients are uniformly mixed. Do not squish the ingredients together, this may make the meatloaf tough and dense.
- Form into a loaf placed in baking dish. Stir together topping ingredients and brush on meatloaf.
- Bake 1 hours and 15 minute at 350 degrees.
- Let rest 3-5 minutes before slicing.

- Meatloaf:.
- Preheat oven to 350 degrees.
- Lightly grease a 5x9 inch loaf pan.
- Press the brown sugar in the bottom of the loaf pan.
- In a small sauté pan, melt butter.
- Add chopped onions and cook until soften, about 5 minutes.
- In a mixing bowl, combine ground beef, egg, breadcrumbs, milk and 3 tablespoons of the Heinz 57 sauce. Add cooked onions and season the mixture with salt and pepper.
- Shape mixture into a loaf and press into pan.
- Brush remaining 3 tablespoons Heinz 57 sauce on top of loaf.
- Bake uncovered for about 1 hour or until juices are clear.
- Sauce:.
- Whisk cornstarch in water until blended.
- In a small saucepan over low heat, combine cornstarch mix, Heinz 57, Heinz Kicker Ketchup, A1 sauce, regular ketchup, apple juice and brown sugar. Heat until bubbly. Sauce will be thick.
- Pour sauce over meatloaf to serve.

- Preheat oven to 400 degrees.
- In a non-stick skillet, cook onion and garlic in oil over moderate heat.
- Stire continously until onion is softened, about 2 minutes.
- Place onion and garlic in mixing bowl with salt, pepper, Worcestershire sauce, parsley and ketchup.
- Mix well.
- Stir in oats, yogurt and egg.
- Let stand 5 minutes.
- Add turkey and mix well with your hands.

- 1. Preheat oven to 325 degree F. I don't use a loaf pan. I line a sheet pan with foil and shape my loaf. Spray foil with cooking spray.
- 2. Mix all but the last 3 ingredients well. Shape into loaf. Place in loaf pan or on sheet pan. Bake for 1 hour and 15 minutes.

- Preheat oven to 350°F Coat 4 x 8-inch loaf pan with nonstick cooking spray.
- Heat oil in a large skillet over medium heat. Add leek, onion, and garlic. Sauté until just golden brown. Add flour, stir and cook for 2 minutes.
- Add wine, broth, tomato sauce, basil, oregano, and salt to skillet. Bring to boil, reduce heat to low and simmer uncovered for 15 minutes. Set sauce aside.

- 1. Prep: Pre-heat oven to 325 degrees. In a flat dish or bowl, soak the 4 slices of bread in milk.
- 2. Dump the following ingredients into a large mixing bowl: ground turkey ground beef dried vegetable soup mix A-1 sauce salt and pepper freshly minced garlic and onion finely chopping fresh parsley squeeze excess milk from bread and add to mixing bowl.
- 3. With clean hands, GENTLY squeez the ingredients together until all ingredients are thoroughly incorporated. (Stirring or squeezing hard will toughen the meat mixture.)
- 4. Turn mixture onto a cookie sheet and shape into an oval loaf. This will create large, lovely pieces when slicing the meatloaf. Use a butter knife to create a hole in the center of the loaf and insert the 2 tablespoons of butter. Push meatloaf back together firmly to trap butter. Coat top and sides with a heavy layer of A-1 Suace, topped with another layer of Nance Mustard.
- 5. Cook for 45 to 50 minutes or until a pierced center shows clear juice. Also, the layers of A-1 and Nance mustard should appear as thick glaze. Remove meatloaf from oven and IMMEDIATELY cover with foil, over the top and down the sides to trap the steam. Allow meatloaf to rest 5 minutes. (Juices will return to center of the meatloaf and will not run all over the serving plate.)
- 6. Move meatloaf to a serving plate and garnish with fresh springs of parsley.
- 7. Secrets: The dried vegetable soup mix adds color and herbs. Soaking the bread in milk & adding butter to the center will keep the meatloaf moist and juicy. Finely chopping/mincing the onions, garlic and parsley allows the slices to remain solid & pretty.

- 1. Preheat the oven to 375 degrees. Cut the chill on the ground beef by setting it in a bowl for about 20 minutes.
- 2. Grate the onion and break the bread into little pieces.
- 3. Put the onion and the bread pieces in the bowl with the ground beef. Add the rest of the meatloaf ingredients: eggs, milk, Au jus packet, ketchup, Worcestershire sauce, parsley flakes, garlic powder, salt, and pepper. Gently mix with your hands or a spoon until combined. Don't overmix.
- 4. Put the meat in a 9 x 5 loaf pan lined with a strip of parchment paper. Shape it into a loaf.
- 5. Bake at 375 degrees for 40 minutes.
- 6. While the meatloaf is baking, mix sauce ingredients.
- 7. After 40 minutes spread 1/2 of the sauce over the top of the meatloaf. Bake for another 25 to 30 minutes or until a thermometer inserted reads 160 degrees.
- 8. After it's cooked, remove the meatloaf from the pan by lifting the parchment paper. Top the meatloaf with the leftover sauce or serve it on the side.

While looking for a good recipe for meatloaf on this website, I gathered common ingredients amongst the recipes I looked at and came up with my own version. I never would make meatloaf very often because I never liked the way it came out. I finally came up with a recipe that I now use quite often. Enjoy!

- Preheat oven to 350F/180°C.
- Melt butter in large skillet and cook onions slowly until translucent, about 5 minutes. Add pine nuts if using, and cook until onions are tender. Remove from heat and leave to sit.
- Mix the ingredients for the sauce in a separate bowl and set aside.
- In the meantime, mix salt, dry mustard, garlic powder and breadcrumbs together. Add to beef in a large bowl. Combine Worcestershire with egg and add to beef mixture. Add onions.
- With clean hands (duh!) combine mixture thoroughly and shape into loaf and place in a 9" X 13" glass baking dish. (You can also divide the mixture evenly and make 4 individual loaves which should be about 9 oz. each). Pour the tomato sauce around the loaf and cover with foil.
- Place in oven and bake for 1 to 1 1/4 hours. Remove from oven and let sit 10 minutes prior to serving. Slice into 1/2" pieces and serve with tomato sauce. Goes well with smashed taters and veggie of your choice. :).

- Chop bacon into small pieces and fry until crispy. Remove from pan to drain and reserve 1 tablespoon bacon fat in pan.

I got this from Ellie Krieger's cookbook The Food You Crave. I absolutely love this meatloaf, and so does my family. It may seem kind of mushy in the process of making, but after cooking it holds up well. The sauce is good too, and we never eat meatloaf with sauce. This meatloaf is nice, tender, and moist, and the family didn't miss the ground beef! I made this as "meatballs" or mini-meatloaves for a demonstration I gave to the elderly on heart healthy recipes, and they gobbled them up! Many asked for the recipe - I'm glad a printed out a few dozen copies! A great alternative to the regular ground beef variation.

- Preheat oven to 350 degrees.
- In a small bowl, stir together oats and milk and soak at least 3 minutes.
- In the meantime, Thinly slice 1/4 of the onion into rings and set aside. Finely chop the rest of the onion.

- 1. In a blender, chop your spinach slightly, add the eggs and milk and mix. Pour in a large bowl and add the bread; let it stand until the liquid is absorbed. Stir in the onion, carrots, cheeses and seasonings. Crumble beef over the mixture and mix well.
- 2. Shape into a loaf and place in a baking dish/pan lightly coated with cooking spray place a rack inside the dish/pan. Bake uncovered at 350° for 45 minutes.
- 3. After 45 minutes spoon barbeque sauce over the meat loaf. You can add extra barbeque sauce during the baking time if you want. Bake 30 minutes longer or until the meat is no longer pink. If you have a meat thermometer bake until 160°. Let the meatloaf rest about 10 to 15 minutes before serving.
- 4. Note: I have also done this in a crockpot. Bake on low for about 6 to 7 hours.

- 1. Preheat oven to 350
- 2. Melt butter in large skillet over medium heat
- 3. Add onions and cook until almost tender, you can bellpeppers with the onion as well.
- 4. Add garlic and cook for 1 minutes.
- 5. Pour onions, garlic and butter into a large bowl.
- 6. Add remaining ingredients to the bowl, (except for the glaze ingredients)
- 7. Use your hands to mix together. Fry up a small portion of the meat as a "test patty" to make sure the seasonings are good.
- 8. Place the meat mixture (100% ground beef or 100% ground bison) into a loaf pan
- 9. Mix together glaze ingredients.
- 10. Spread half of the glaze mixture on the meatloaf and Bake for 30 minutes.
- 11. Remove from oven and spread on the rest of the glaze.
- 12. Bake for another 30 minutes or until the meatloaf is ready.
- 13. Let cool for 10 minutes before slicing. and Enjoy!
