MCDONALD'S EGG MCMUFFIN

Number Of Ingredients 6

4 tablespoons softened butter (butter has divided uses)
4 English Muffins
4 slices Canadian Bacon
4 eggs
1/2 cup water
4 slices American cheese

Steps:

  • Split open English Muffins and place them into a toaster, toast the English Muffins.
  • In a non-stick skillet over medium heat, cook Candian bacon on both sides for about 1 to 2 minutes in two teaspoons of butter. The bacon should begin to just brown.
  • While the Canadian bacon is cooking, remove the English muffins from the toaster and spread softened butter on both halves.
  • Place the 1 slice of Canadian bacon on each English Muffin bottom.
  • Add about 1 tablespoon of butter to the same skillet where you cooked the bacon.
  • Place the quart-sized canning lids screw size up (or you can use an egg ring) into the skillet.
  • Spray the canning lid with non-stick spray. Crack an egg into each of the rings.
  • Break the yolk with a folk. Pour about 1/2 cup of water into the skillet, and place a lid on top. Cook until the eggs are set, it should take about two minutes.
  • Gently remove the eggs from the rings, and place one egg on each piece of Canadian bacon.
  • Top each egg with one slice of American cheese, top cheese with the top of the English muffin.
  • Wrap each egg McMuffin with foil or parchment paper. Wait about 30 seconds before serving.

I love McDonald's Sausage McMuffin, but this healthy creation is just as tasty (Boca burgers are scrumptious with the right fixings!).

1 boca veggie burger
1 egg
1 slice cheese (American is nice)
2 slices whole wheat bread
1 teaspoon mayonnaise
1 teaspoon smart balance margarine (non-hydrogenated butter subtitute) or 1 teaspoon olive oil
1 pinch salt
1 pinch pepper

Steps:

  • Toast bread.
  • Heat Smart Balance or oil in non-stick pan on medium high.
  • Meanwhile, microwave Boca burger in package (just open it on one side) for 2 minutes.
  • When pan is hot, crack egg into it and break yolk with edge of shell.
  • Sprinkle egg with salt and pepper.
  • Turn egg over with plastic spatula when ready (usually about 30-45 secs).
  • Cook until yolk reaches desired consistency (I like it a little gooey but mostly firm).
  • While egg is cooking, spread mayo on one side of toast and put Boca burger on top.
  • Put cheese on other piece of toast.
  • When egg is done, put put it on top of cheese (if cheese doesn't melt, put the whole thing in the microwave for about 10 seconds).
  • Put sandwich together and eat before it gets cold!
  • Optional: add some hot sauce for extra kick.

2 tablespoons mayonnaise
1 teaspoon creamy dill mustard
1 white onion, quartered
1 (14 ounce) package Steak-ums, chopped steak (7-steaks)
4 eggs
1 teaspoon butter
salt
ground black pepper
4 plain bagels
8 slices kraft singles process American cheese

Steps:

  • Combine mayonnaise with the dill mustard in a small bowl. Set this aside until you are ready to use it.
  • Heat 1 teaspoon of vegetable oil in a medium skillet over medium heat. Separate the onion slices and saute in the oil until light brown. Remove and set aside.
  • Break up the sandwich steak into the hot pan and cook until brown. Drain off fat. Add the grilled onions to the meat and stir.
  • (Tip: To make the eggs it's best to make one at a time in a small 6 inch skillet.) Beat one egg in a small bowl with a whisk until it is smooth, but not foamy. Add a pinch of salt and pepper to the egg.
  • Heat a small 6 inch skillet over low heat. Add 1/4 teaspoon of butter to the pan. When the butter has melted add the egg to the pan. Swirl the pan so that the egg spreads evenly.
  • As the egg begins to cook, use a spatula to pull in a couple of the edges so that raw egg flows from the top onto the hot pan. Cook for 2 to 3 minutes, then fold over one of the edges of the egg using a spoon or fork. Fold it down about an inch. Fold the opposite end over as well. Then fold the remaining two edges over, creating a small rectangular or square mini-omelette. Flip the little omelette over and turn off the heat.
  • Slice bagels in half and place faces up on a baking sheet. Grill the faces of the bagel halves in your oven set on broil until golden brown. (Tip: You may also use a toaster oven for this step, but be sure to place the sliced bagel halves onto a small baking sheet or on aluminum foil.).
  • When the bagels are toasted, spread about 1/2 tablespoon of the sauce onto the face of the top bagel half. Place a slice of cheese onto the face of each bagel half.
  • Divide the meat into four portions and stack one portion onto the cheese on the bottom bagel half.
  • Place the finished omelette onto the meat on the bottom half of the sandwich. Finish by flipping the top half of the sandwich over onto the bottom. Heat for 15 seconds in microwave if needed to warm.

2 teaspoons minced green peppers
2 teaspoons minced white onions
4 eggs
1 teaspoon butter
salt
fresh ground black pepper
8 ounces breakfast sausage
4 plain bagels
4 slices kraft singles American cheese
4 slices kraft singles monterey jack cheese
2 tablespoons mayonnaise
1 teaspoon creamy dill mustard

Steps:

  • First prepare the sauce by combining the mayonnaise with the dill mustard in a small bowl. Set this aside until you are ready to use it.
  • To prepare the eggs it's best to make one at a time in a small 6-inch skillet. If you have more than one of these small pans, you can save a little time.
  • First preheat pan over low heat. Add 1/4 teaspoon of butter. Add 1/2 teaspoon of minced green pepper along with 1/2 teaspoon minced white onion to the pan and saute for a couple minutes, or until softened.

  • Slice a bagel in half and place it with the faces up on a baking sheet. Grill the faces of the bagel halves in your oven set on broil until golden brown. You may also use a toaster oven for this step, but be sure to place the sliced bagel halves onto a small baking sheet or on aluminum foil.
  • When the bagels are toasted, spread about 1/2 tablespoon of the sauce onto the face of the top bagel half. Place a slice of American cheese onto the face of the top bagel half. Place a slice of Monterey Jack cheese over the face of the bottom bagel half. Place a sausage patty on the cheese on the bottom bagel half. Place the finished omelet onto the sausage on the bottom half of the sandwich.
  • Finish by flipping the top half of the sandwich over onto the bottom. Heat for 15 seconds in microwave if needed to warm.
