1 ⅓ cups white sugar
⅔ cup dark brown sugar
2 large eggs
4 tablespoons instant coffee granules
1 teaspoon vanilla extract
2 ½ cups all-purpose flour

1 ½ cups white chocolate chunks

Steps:

  • Combine butter, sugars, eggs, instant coffee, and vanilla extract in a large bowl. Beat with an electric mixer until fluffy.
  • Mix flour, cocoa powder, baking soda, and salt together in a separate bowl. Pour over butter mixture and beat until combined. Fold in white chocolate chunks using a spatula. Cover dough and chill for 1 hour.
  • Preheat the oven to 325 degrees F (165 degrees C). Grease 2 cookie sheets.
  • Drop tablespoonfuls of dough onto the prepared baking sheets.
  • Bake in the preheated oven until edges are lightly browned, 12 to 15 minutes. Allow to cool slightly before removing from the cookie sheets.

2 cups semisweet chocolate chips, divided
2 tablespoons boiling water
2 tablespoons instant coffee powder
½ cup butter, softened
½ cup white sugar
½ cup packed brown sugar
1 egg
1 ¼ cups all-purpose flour
¾ teaspoon baking soda
½ teaspoon salt
1 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Melt 1/2 cup chocolate chips in microwave or double-boiler, stirring occasionally until smooth. Cool to room temperature. In a small bowl, dissolve instant coffee in boiling water; set aside.
  • In a large bowl, cream together the butter, white sugar, and brown sugar until smooth. Beat in egg, coffee, and melted chocolate. Combine flour, baking soda, and salt; mix into batter. Stir in the remaining chocolate chips and walnuts. Drop dough by heaping teaspoons onto ungreased cookie sheets.

6 scoops Mocha Ice Cream, recipe follows
1 cup toasted sweetened coconut flakes
1 dozen Macadamia Nut-Hawaiian Vintage Chocolate Chunk Cookies, recipe follows
4 ounces Hawaiian vintage chocolate semisweet chocolate, chopped
2 cups heavy cream
4 large egg yolks
1/2 cup sugar
1 tablespoon instant coffee powder
1 teaspoon vanilla extract
1/2 cup packed light brown sugar
1 egg
1/2 teaspoon almond extract
1/2 teaspoon vanilla extract
1 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
6 ounces chocolate chips
3/4 cup roughly chopped macadamia nuts*

Steps:

  • Let the ice cream soften at room temperature until a spreadable consistency, about 5 minutes.
  • In a shallow dish, spread the toasted coconut.
  • Place one 1/2-cup scoop of ice cream in the center of 6 cookies. Press down on the ice cream with the scoop to push the ice cream out to the cookies' edges. Top with the remaining cookies, pressing together to form sandwiches. With a butter knife, smooth the ice cream around the edges. Roll the sandwiches in the toasted coconut and place on a baking sheet. Freeze until just firm, about 10 minutes before serving. (Or, wrap tightly in plastic wrap and keep frozen until ready to serve.)
  • In the top of double boiler set over medium high heat, melt the chocolate. Remove from the heat.
  • In a medium saucepan, bring the cream to a gentle boil. Remove from the heat.
  • In a small mixing bowl, whisk together the egg yolks and sugar until slightly thickened. Whisk 1/2 cup of the hot cream into the egg mixture. Whisk in the coffee powder. In a slow, steady stream, gradually add the egg mixture to the pan of hot cream. Cook over moderately low heat, stirring occasionally, until the mixture thickens enough to coat the back of a spoon and reaches 170 degrees F on an instant-read thermometer, 3 to 5 minutes.
  • Remove the pan from the heat and strain the mixture into a clean bowl through a fine mesh strainer, pressing against the strainer with the back of a spoon. Add the melted chocolate and vanilla. Pour into a container and cover with waxed paper or plastic wrap, pressing down against the surface to keep a skin from forming. Chill in the refrigerator for at least 2 hours.
  • When cold, pour into the bowl of an ice cream machine. Churn and freeze according to manufacturer's instructions. When the ice cream has come together, transfer to an airtight container and place in the freezer until ready to serve.
  • Preheat the oven to 350 degrees F. Grease a baking sheet and set aside. In a large bowl, cream together the butter and sugar. Add the egg, almond extract, and vanilla and mix well.
  • Onto a sheet of waxed paper or into a bowl, sift together the flour, baking soda and salt. Add the dry ingredients to the egg mixture and mix well. Fold in the chocolate and nuts.
  • With a 1/4-cup scoop, portion out the dough onto the baking sheet, leaving 2-inches between each piece. Bake until the edges are golden brown but the centers are still slightly soft, 12 to 15 minutes. Remove from the oven and cool on the baking sheet for 5 minutes. With a spatula, transfer cookies to a wire rack and let cool before assembling the ice cream sandwiches.

2/3 cup (packed) golden brown sugar

1 large egg
2 teaspoons water
1 teaspoon vanilla extract
1 teaspoon instant coffee granules
2 cups semisweet chocolate chips (about 12 ounces)
1 cup pecans, coarsely chopped

Steps:

  • For filling:
  • Stir chocolate chips, cream, and coffee granules in heavy saucepan over medium heat until chocolate melts and coffee dissolves. Cool to room temperature, about 20 minutes. Using electric mixer, beat sugar, butter, and vanilla in bowl until blended. Beat in chocolate mixture. Refrigerate until beginning to firm, about 8 minutes. (Can be made 2 days ahead. Cover and keep refrigerated. To use, let stand at room temperature until just soft enough to spread, about 2 hours.)
  • For cookies:
  • Preheat oven to 325°F. Line 2 baking sheets with parchment paper. Sift flour, cocoa, baking soda, and salt into bowl. Using electric mixer, beat butter and both sugars in bowl until well blended. Add egg, 2 teaspoons water, vanilla, and instant coffee; blend well. Beat in flour mixture. Stir in chocolate chips and pecans. Drop dough by tablespoonfuls onto prepared sheets, spacing 2 inches apart. Bake until tops are just firm to touch and no longer shiny, about 13 minutes. Cool cookies on sheets 10 minutes. Transfer to racks and cool.
  • Place half of cookies, flat side up, on work surface. Spread each with 1 tablespoon filling, leaving 1/4-inch border. Top each with second cookie, pressing to adhere. Arrange on platter; cover and chill at least 2 hours. (Can be made 2 days ahead. Keep chilled.) Serve cookies cold.

Steps:

  • Preheat oven to 400F (200 degrees C).
  • Combine the flour and salt in a small bowl, stir to mix.
  • Beat the butter and sugar in a large bowl until light and fluffy, Beat in egg and vanilla.
  • Add the chocolate, beat again, add coffee and cocoa powder.
  • Gradually add the the flour mixture while making.
  • Fit a cookie press with desired plate and fill the press with dough, press the dough 1 inch apart onto a ungreased cookie sheet. If you don't have a press, I'm sure you could use a pasty bag and pipe shapes.
  • Bake batches for 7 mins or until set (you might want to play around with timings as most ovens are unique). Note these cookies harden whilst they cool, I would also recommend using a mixer unless your super strong as it's quite a lot of dough.

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.

Steps:

  • Let dough stand at room temperature for 10 minutes to soften. Meanwhile, heat oven to 350 degrees F. In large bowl, break up cookie dough; add marmalade and pecans. In small bowl, mix flour, 1/4 cup cocoa, coffee granules, cinnamon, cloves, allspice and red pepper; stir into dough mixture with wooden spoon until well blended.
  • Shape dough into 24 (about 1 1/2-inch) balls. On ungreased large cookie sheets, place balls 2 inches apart. Gently press 1 espresso bean into center of each cookie.

Steps:

  • Heat the oven to 350 F. Line a cooling rack with paper towels. In a medium bowl, comb~e the flour, baking powder, cinnamon and salt. In a larger bowl, beat the butter and espresso powder or coffee until well combined. Add the confectioners' sugar and brown sugar and beat until combined. Stir in the flour mixture about 1/2 cup at a time, mixing well after each addition. Stir in the chocolate chips. Put the granulated sugar in a small, shallow bowl. Scoop out about 1 tablespoon of dough and flatten it slightly into a disc. Dip one side into the granulated sugar and then set the disc, sugar side up, on an ungreased baking sheet. 1/4 cup brewed coffee
1/2 cup unsalted butter or margarine
3/4 cup white sugar

1 teaspoon vanilla extract
1 cup matzo cake meal
1/8 teaspoon salt
1/2 teaspoon kosher for Passover baking powder
1/2 teaspoon cinnamon
3 tablespoons finely ground dark coffee beans, preferably espresso

Steps:

  • Preheat oven to 325 degrees and line 2 cookie sheets with parchment paper.
  • Melt 1/2 cup of chocolate chips with coffee in a double boiler, or in metal bowl in pot of hot water, stirring until smooth. Set aside to cool slightly.
  • Cream together butter or margarine and sugars, beating until light. Mix in eggs, one at a time, then add vanilla. Fold in chocolate mixture.
  • Mix matzo cake meal, salt, baking powder, cinnamon and 2 tablespoons of ground coffee beans in bowl and stir into batter with 1/4 cup of chips. Let sit for an hour, covered.

2/3 cup sugar
1 egg
2 squares (1 oz. each) unsweetened chocolate, melted and cooled
2 tsp. vanilla
1 3/4 cups flour

MOCHA GLAZE:
1 cup (6 oz.) semi-sweet chocolate chips
1 tsp. light corn syrup
1 tsp. shortening
1 cup powdered sugar
4-5 Tbl. hot coffee
2 squares (1 oz. each) white baking chocolate, melted

Steps:

  • 1. In a large bowl, cream butter and sugar until light and fluffy. Add the egg, chocolate and vanilla; mix well. Combine flour and salt; gradually add to creamed mixture and mix well. Cover and refrigerate for 1 hour or until firm. Divide dough into fourths form each portion into a 6-in. roll. Cut each roll into 1/2-in. slices; roll each into a 9-in. rope. Place ropes on greased baking sheets; form into pretzel shapes and space 2 in. apart. Bake at 400° for 5-7 minutes or until firm. Cool 1 minute before removing to wire racks to cool completely. For glaze, in a microwave-safe bowl, melt the chocolate chips, shortening and corn syrup; stir until smooth. Stir in confectioners' sugar and enough coffee to make a smooth glaze. Dip pretzels; allow excess to drip off. Place on waxed paper until set. Melt white chocolate; drizzle with white chocolate; allow excess to drip off. Let stand until chocolate is completely set. Store in an airtight container. Makes 3-4 dozen.

2 1/4 cups all-purpose flour
2/3 cup unsweetened cocoa
1 teaspoon baking soda
1/4 teaspoon salt
1 cup butter, softened
3/4 cup sugar
2/3 cup firmly packed brown sugar
1 teaspoon vanilla extract
2 large eggs
1 (11 1/2 ounce) package semisweet chocolate chunks
1/4 cup unsweetened cocoa
1/4 cup hot strong brewed coffee
1/4 cup butter, melted
1 teaspoon vanilla extract
3 1/2 cups powdered sugar, sifted
powdered sugar (optional)

Steps:

  • In a bowl, mix the first 4 ingredients together; set aside.
  • Using an electric mixer, beat the butter and next 3 ingredients together until creamy.
  • Add eggs, 1 at a time, beating just until blended after each addition.
  • Gradually add in flour mixture, beating on low speed until blended.
  • Fold in chocolate chunks.
  • Drop dough by heaping tablespoonfuls onto parchment paper-lined cookie sheets.
  • Bake in preheated 350° oven for 10-12 minutes or until puffy.
  • Cool on baking sheets 2 minutes; remove to wire racks, and let cool 30 minutes or until completely cool.
  • Make frosting: stir together the first 4 frosting ingredients until smooth.
  • Gradually add powdered sugar, stirring until creamy.
  • Spread cookies with Mocha Frosting.
  • Dust evenly with powdered sugar, if desired.

1 cup butter or margarine, softened
1 cup powdered sugar
1 teaspoon vanilla
1 3/4 cups Gold Medal™ all-purpose flour
1/3 cup unsweetened baking cocoa
1 teaspoon instant coffee granules or crystals
1 1/4 cups white vanilla baking chips (from 11-oz bag)
1/4 cup miniature candy-coated semisweet chocolate baking bits (40 bits)

Steps:

  • Heat oven to 350°F. In large bowl, beat butter, powdered sugar and vanilla with electric mixer on medium speed about 2 minutes or until creamy. On low speed, beat in flour, cocoa and coffee granules 1 to 2 minutes or until well mixed. Divide dough into 2 balls; press each to form disk. Wrap each disk in plastic wrap; freeze 10 minutes.
  • On lightly floured surface, roll 1 dough disk at a time until 1/8 inch thick. Cut with 5-inch gingerbread boy cutter. On ungreased cookie sheets, place cutouts 1 inch apart. Reroll and cut any remaining dough. Bake 9 to 10 minutes or until set. Cool 1 minute; remove from cookie sheets to cooling racks. Cool completely, 15 to 20 minutes.
  • Place white baking chips in small resealable freezer plastic bag; seal bag. Microwave on High 30 seconds. Turn bag over; microwave 15 seconds longer until chips are softened. Squeeze bag until mixture is smooth. (If necessary, microwave 10 seconds longer or until chips are completely melted and mixture is smooth.)
  • Cut very small tip from one corner of bag. Squeeze bag to drizzle melted chips over cookies for mummy wrapping. Add 2 baking bits to each cookie for eyes.

1/4 cup cocoa powder
2 tablespoons organic decaf coffee, espresso grind
1/2 teaspoon baking soda
1/2 teaspoon celtic sea salt
1/2 cup grapeseed oil
1/2 cup agave nectar
1 tablespoon vanilla extract
3/4 cup dark chocolate, 73%

Steps:

  • In a large bowl, combine almond flour, cocoa powder, ground coffee, baking soda and salt.
  • In a smaller bowl, stir together grapeseed oil, agave and vanilla.
  • Stir wet ingredients into dry and then mix in chocolate drops (or chunks).
  • Drop dough by heaping tablespoonfuls onto a parchment lined baking sheet.
  • Bake at 350° for 7-8 minutes.
  • Cool and serve.

EMERIL'S MOCHA CHOCOLATE CHIP COOKIES

These were really good! Got this recipe years ago from an old Emeril Live episode. The spices in this give it a nice zingy aftertaste that I love. Rich and hard to eat just one. I use 1 stick of butter to give it nice taste, and 1 stick of margarine to give the cookies a nice shape. I also use dark chocolate syrup and Ghirardelli chocolate chips (bittersweet).

1 1/2 teaspoons instant coffee powder (either mocha or espresso)
2 tablespoons hot water
2 1/4 cups flour
1 teaspoon salt
1 teaspoon baking soda
1/4 teaspoon ground nutmeg
1 teaspoon ground cinnamon
1/2 lb margarine (2 sticks total) or 1/2 lb unsalted butter (2 sticks total)
1 cup light brown sugar
1/2 cup granulated sugar
2 tablespoons chocolate syrup
1 1/2 teaspoons vanilla extract
2 eggs
18 ounces chocolate chips (1 1 /2 bags)
1 1/2 cups walnuts, chopped

Steps:

  • Preheat the oven to 350 degrees F.
  • Mix instant coffee crystals with water and have ready before mixing up cookie batter.
  • Mix flour, salt, baking soda, nutmeg and cinnamon and put aside.
  • In mixer, beat margarine, sugars, chocolate syrup, and vanilla until smooth.
  • Add eggs one at a time, beat until smooth, approximately 5 minutes.
  • Add dry ingredients, coffee mixture, chocolate chips, and nuts and mix by hand with wooden spoon until mixed.
  • Drop on baking sheet by rounded teaspoons, about 2-inches apart, and bake for 12-14 minutes. Cool and eat!

4 teaspoons instant espresso powder (dry)
2 teaspoons vanilla
1 box Betty Crocker™ Super Moist™ butter recipe chocolate cake mix
1/3 cup butter, softened
2 eggs
1 cup miniature semisweet chocolate chips
1/2 cup toffee bits

Steps:

  • Heat oven to 350°F. In small bowl, stir together coffee and vanilla until coffee is dissolved. In large bowl, mix cake mix, coffee mixture, butter and eggs with spoon until soft dough forms. Stir in chocolate chips and toffee bits.
  • On ungreased cookie sheets, drop dough by rounded teaspoonfuls 2 inches apart.
  • Bake 7 to 10 minutes or until surface appears dry. Cool 1 minute; remove from cookie sheets to cooling rack. Cool completely. Store covered.

1/2 cup butter
4 oz unsweetened chocolate
1/2 cup flour
1/2 teaspoon baking powder
1/2 teaspoon salt
4 eggs, at room temperature
1 1/2 cups sugar
1 1/2 tablespoons instant coffee powder
2 tablespoons vanilla

Steps:

  • Line baking sheets with wax paper. Melt 1 1/2 cups chocolate chips with butter and unsweetened chocolate in top of double boiler over hot, but not boiling water. Combine flour, baking powder and salt. Beat eggs, sugar and coffee in large bowl. Add vanilla and mix on high 2 minutes. Stir in melted chocolate; then stir in dry ingredients. Mix well; then add remaining chips. Drop teaspoons full of batter onto prepared sheets. Bake until cookie surface is cracked and shiny outside, but still soft inside - about 8 minutes. Do not overbake. Cool completely before removing from sheets. Store in airtight container. Notes: Variation: add 2 cups toasted, chopped peacans to batter.
