MIXED HERB AND SWEET POTATO MEATLOAF

Always on the lookout for a good meatloaf recipe and this one from Super Food Ideas I find intriguing being coupled with sweet potato.

1 kg ground beef (lean beef mince)
1 brown onion (small finely chopped)
1 garlic clove (minced)
1 large carrot (peeled grated)
2 tablespoons barbecue sauce
1 egg (lightly beaten)
1 tablespoon plain flour (all purpose flour)
2 tablespoons rosemary (chopped fresh leaves)
1/4 cup oregano (chopped fresh leaves)
200 g sweet potatoes (orange peeled and thinly sliced lengthways)
1/4 cup tarragon (chopped fresh leaves)
1/4 cup basil (chopped fresh leaves)
1/4 cup tomato sauce (ketchup)
125 g cherry tomatoes (halved)
2 tablespoons pine nuts
asparagus (steamed to serve)

Steps:

  • Preheat oven to 200C (180C fan forced).
  • Lightly grease a 7cm deep, 13cm x 24cm (base) loaf pan.
  • Place mince, onion, garlic, carrot, barbecue sauce, egg, flour, rosemary and oregano in a large bowl and mix to combine.
  • Spoon half the mixture into prepared pan and using the back of a spoon, press down firmly to level.
  • Arrange half the sweet potato, in a single layer, over the mince mixture and top with tarragon and basil .
  • Arrange remaining sweet potato, in a single layer, over herbs and spoon remaining mince mixture over sweet potato and using the back of a spoon to press down firmly to level.
  • Bake for 45 minutes or until meatloaf is browned and comes away from sides of the pan.
  • Spread top with tomato sauce and top with tomatoes and pine nuts and bake for 15 minutes or until cooked through.
  • Set aside for 10 minutes and serve with asparagus.

2 lbs ground beef
2 teaspoons salt
1 egg
1/2 cup cracker crumb
1/4 cup onion, chopped
1/2 cup green pepper, chopped
1 (8 ounce) can tomato sauce
1 (1 lb) can sweet potato
1 cup molasses or 1 cup dark corn
syrup
cracker crumb, crushed
3 -4 slices bacon

Steps:

  • Mix ground beef, salt, egg, 1/2 cup cracker crumbs, onion, green pepper and tomato sauce. Shape into loaf and place in oblong baking dish.
  • Bake 30 minutes in 350 degrees oven.
  • Drain sweet potatoes and pour molasses over them.
  • Roll each potato in crushed cracker crumbs.
  • Arrange around meat loaf and place bacon on top of loaf.
  • Return to oven and bake additional 20 to 30 minutes.

This is by far my favorite meatloaf recipe. It is moist and savory, and has always been a big hit anytime I've made it. If you want to lighten it up, you can substitute ground turkey, and it still turns out great!

2 lbs ground beef (I usually use 90/10)
1 medium onion, finely chopped
2 eggs
2 teaspoons minced garlic, plus more
garlic, to taste
2 teaspoons thyme
2 teaspoons rosemary
1 1/2 tablespoons parsley
2 1/2 teaspoons Dijon mustard or 2 1/2 teaspoons spiced mustard
1 1/2 teaspoons barbecue sauce
1/2 teaspoon Worcestershire sauce
1/2 cup ketchup
2/3 cup seasoned bread crumbs

Steps:

  • mix all ingredients well, add additional salt and pepper if you like.
  • pat into an ungreased loaf pan, smear top of loaf with a little ketchup and bbq sauce.
  • bake uncovered at 350, 45 minutes to an hour.

A great way to stretch the meat to serve more people, but also adds wonderful flavor and moistness to this easy recipe. Really good if you use left over roasted garlic mashed potatoes.

1 1/2 cups leftover mashed potatoes
1 large onion, chopped
3 garlic cloves, minced
1 tablespoon olive oil
1 teaspoon dried parsley
1/2 teaspoon dried oregano
3 eggs, lightly beaten
1/3 cup seasoned dry bread crumb
2/3 cup ketchup
1 teaspoon salt
1/4 teaspoon pepper
1 1/2 lbs lean ground beef
1/3 cup ketchup

Steps:

  • Preheat oven to 375°F.
  • Place potatoes in a large bowl and set aside.
  • In heavy skillet over medium heat, sauté onion and garlic in olive oil until tender, about 5 minutes.
  • Add parsley and oregano.
  • Add to potatoes along with eggs, bread crumbs, 1/3 cup of the ketchup, salt and pepper and mix well until thoroughly combined.
  • Add ground beef and mix gently just until combined.
  • Place on a casserole pan, shape mixture into an 8 x 4-inch loaf.
  • Spread remaining 1/3 cup ketchup over top of loaf. Bake at 375°F for 70-75 minutes or until center is no longer pink and instant read thermometer reads 160°F when inserted in center of loaf. Let stand, covered, 15 minutes before slicing.
