1 pound blue cheese
4 ounces cream cheese
8 tablespoons softened sweet butter
1/4 cup Port
Fresh black pepper
2 cups chopped toasted walnuts

Steps:

  • In a food processor combine and process until smooth the blue cheese, cream cheese, butter and Port. Adjust seasoning and texture with more or less butter or Port. Season with pepper.
  • Transfer to the refrigerator (you can do 2 weeks before serving). 1 hour before serving, bring mixture to room temperature, fold in the nuts and transfer to smaller ramekins.
  • Serve with crackers, celery, fennel or jicama

Hot and savory and almost fondue-like, this blue cheese dip has a zippy flavor that works just as well with tortilla chips as it does with bell pepper strips, and keeps you coming back for more.

1 8-ounce package cream cheese
2 garlic cloves, minced
1 pinch kosher salt
1/4 cup heavy cream or half and half
1/4 cup mayonnaise
1 teaspoon Worcestershire sauce
1/2 teaspoon hot sauce, more for serving if desired
1/4 teaspoon freshly ground black pepper
4 ounces blue cheese (about 1 cup, crumbled)
2 tablespoons chopped chives
Celery sticks, chips or chicken wings, for serving

Steps:

  • Preheat oven to 325 degrees. Place cream cheese in bowl of a food processor and pulse to soften.
  • Using a mortar and pestle or flat part of a knife, mash garlic and salt together until it forms a paste. Place paste in food processor along with cream, mayonnaise, Worcestershire sauce, hot sauce and pepper. Run motor until mixture is smooth. Add blue cheese and chives and pulse just to combine.
  • Scrape mixture into a small (1-quart or smaller) gratin dish or baking pan, and bake until dip is melted and bubbling, 30 to 40 minutes. Sprinkle extra hot sauce on top, if desired, and serve hot or warm, with celery sticks and chips or chicken wings if you like.

1 garlic clove, coarsely chopped
2 1/2 teaspoon red wine vinegar
1 teaspoon finely chopped fresh thyme
1/2 pound smoked (or regular) blue cheese, crumbled
1 cup sour cream
2/3 cup mayonnaise
Freshly ground black pepper
Assorted fresh vegetables for dipping (such as baby carrots, green beans, and endive leaves)

Steps:

  • Sprinkle salt over garlic and chop, occasionally smearing mixture with blade of knife, until paste forms. Whisk garlic paste, vinegar, and thyme in a medium bowl. Add cheese; mash with the back of a fork until cheese is finely crumbled. Stir in sour cream and mayonnaise. Season dip to taste with salt and pepper. Serve with assorted vegetables. DO AHEAD: Can be made 2 days ahead. Cover and chill.
