3 ounces blue cheese, crumbled
1/2 cup mayonnaise
1/2 cup sour cream
1/4 cup milk (optional) or 1/4 cup buttermilk (optional)
1 tablespoon fresh lemon juice
1 garlic clove, minced
black pepper

Steps:

  • Using a fork, mash blue cheese into mayonnaise and sour cream.
  • Stir in lemon juice and garlic, then season to taste with black pepper.
  • Add milk to make dip thinner if you like.
  • Chill 30 minutes to blend flavors.

I have discovered Blue Cheese Dressing & Dip nirvana! I have yet to find a ready made that I like. I came up with this when serving Buffalo Chicken Wings last week. Why start from scratch when you can cheat?! :D Super simple and full of garlicy goodness & blue cheese. Great as a salad dressing, raw veggie dip, Buffalo Chicken Wings, etc. I have listed the full 12 ounce jar of Marie's Caesar dressing and 5 oz container of blue cheese. Use as much or as little of each ingredients as you like. The bottom line is, estimate how much you will need & make it to your liking. Thin it with mayo & milk if you are looking for a thinner dressing. Make it thicker ( dressing & blue cheese only) for dipping. Serving size is arbitrary based on the ingredients amounts you decide to use.

12 ounces creamy caesar salad dressing, jar Marie's All Natural brand found in the refrigerated section
5 ounces crumbled blue cheese, I prefer Treasure Cave Brand
1 tablespoon milk, used to thin the dressing
1 tablespoon real Hellmann's mayonnaise, lite works, used to stretch the amount of dressing (optional)
pepper, as needed

Steps:

  • Decide how much Caesar dressing you will need.
  • Add enough blue cheese crumbles to suit your taste. I like LOTS!
  • If your dressing is too thick, add milk to thin or mayonnaise to stretch the amount of dressing. Mix, check for seasoning & adding more blue cheese or creamy caesar.
  • Add pepper to taste.
  • Combine all ingredients, but don't smooth out the chunks of blue cheese. That would be criminal!
  • Serve and enjoy!

BLUE CHEESE DIP

1 pound blue cheese
4 ounces cream cheese
8 tablespoons softened sweet butter
1/4 cup Port
Fresh black pepper
2 cups chopped toasted walnuts

Steps:

  • In a food processor combine and process until smooth the blue cheese, cream cheese, butter and Port. Adjust seasoning and texture with more or less butter or Port. Season with pepper.
  • Transfer to the refrigerator (you can do 2 weeks before serving). 1 hour before serving, bring mixture to room temperature, fold in the nuts and transfer to smaller ramekins.
  • Serve with crackers, celery, fennel or jicama

CREAMY BLUE CHEESE DIP

I like to use Maytag blue cheese for this party dip, but any blue cheese will do nicely. Serve this creamy delicious dip with chopped fresh vegetables, wedges of toasted pita bread, or roasted chicken nuggets.

1 (8 ounce) package cream cheese, softened
6 ounces blue cheese, crumbled (1 1/2 cups, I prefer Maytag blue cheese)
3 tablespoons butter, softened
1/3 cup sour cream
1 teaspoon minced garlic
2 1/2 tablespoons heavy cream

Steps:

  • Mix together cream cheese, Maytag blue cheese, butter, sour cream, garlic, and heavy cream in bowl of food processor or blender, and process till smooth.
  • Place in a serving dish and refrigerate several hours or more.
  • Can be made ahead the day before to serve for parties.
