Whenever I have a fish fry, I have to have hushpuppies on the side. These are served with honey butter, but they are also great with tartar sauce. If you're a purist, I've included a plain version in addition to a fun Low Country twist with fresh okra in the batter.

Vegetable or canola oil, for frying
1 1/2 cups self-rising cornmeal
1/2 cup self-rising flour
1 tablespoon Miss Brown's House Seasoning, recipe follows
1/2 teaspoon baking powder
1/2 sweet onion, cut into large chunks
1 large egg
3/4 cup buttermilk
3/4 cup thinly sliced okra
Nonstick cooking spray, for the cookie scoop
1 stick (8 tablespoons) salted butter, at room temperature
1/4 cup honey
Kosher salt
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon paprika
1 tablespoon kosher salt
1 tablespoon freshly ground pepper

Steps:

  • For the hushpuppies: Pour enough oil to reach 3 inches up the sides of a Dutch oven. Heat the oil to 375 degrees F.
  • Combine the cornmeal, flour, House Seasoning and baking powder in a medium bowl. Pulse the onions in a food processor until finely minced. Add to the cornmeal mixture and stir to combine. Add the egg and enough buttermilk to moisten into a batter. Separate half of the batter to another bowl, then stir the okra into one of the batters. (Make sure the batter isn't too thin. It should hold its shape when scooped out with a spoon.)
  • Arrange some paper towels in a baking sheet and place a wire rack on top. Working in batches, drop heaping teaspoonfuls of each batter into the hot oil using a cookie scoop coated with nonstick cooking spray, and cook until golden brown, 2 to 2 1/2 minutes depending on the size (see Cook's Note). Drain the hushpuppies on the wire rack.
  • Meanwhile, make the whipped honey butter: Beat the butter and honey in a bowl with a hand mixer at medium-high speed until light and fluffy. Season with salt. Serve with the hushpuppies.
  • Stir together the garlic powder, onion powder, paprika, salt and pepper in a small bowl. Store in an airtight container.

Hush puppies are a great Southern tradition along with buttermilk coleslaw and Southern-fried catfish. Why not use all that buttermilk together in all your recipes? Try them all!

1 quart vegetable oil for frying, or as needed
1 cup buttermilk
¼ cup vegetable oil
2 eggs, room temperature
1 cup cornmeal
1 cup all-purpose flour
¼ cup white sugar
½ teaspoon baking soda
½ teaspoon salt
½ cup minced onion
4 green onions, minced

Steps:

  • Heat 1 quart vegetable oil in a deep-fryer or large saucepan to 365 degrees F (185 degrees C).
  • Preheat oven to 200 degrees F (95 degrees C).
  • Whisk buttermilk, 1/4 cup vegetable oil, and eggs in a bowl.
  • Combine cornmeal, flour, sugar, baking soda, and salt in a separate bowl. Fold buttermilk mixture, onion, and green onions into cornmeal mixture until just mixed.
  • Drop 6 to 8 tablespoon-sized balls of batter into the hot oil; fry until each hush puppy is golden brown, turning the hush puppies to cook evenly, 6 to 10 minutes. Remove hush puppies with a slotted spoon and place on brown paper bags to drain. Repeat with any remaining batter.
  • Transfer hush puppies to a baking sheet and keep warm in the preheated oven until ready to serve.

1 c yellow cornmeal (not cornmeal mix)
1/2 c all purpose flour
1 Tbsp baking powder
1/2 tsp salt
1-1/2 Tbsp sugar
1 large egg
1 can(s) (15 oz) cream-style corn
4-6 green onions, diced, using the bulb end as well as the tender green portion of the stems
2-4 Tbsp jarred jalapenos, drained well, chopped, to taste

Steps:

  • 1. AFTER YOU HAVE FRIED YOUR FISH, MAKE SURE OIL IS AT 350 DEGREES F.
  • 2. IMMEDIATELY BEFORE FRYING, IN A SMALL MIXING BOWL, MIX ALL INGREDIENTS TOGETHER, DO NOT REFRIGERATE OR LET SIT FOR ANY LENGTH OF TIME, THE MIXTURE WILL THIN AS IT SITS. DROP BY TEASPOONFULS INTO HOT OIL . TURN FREQUENTLY DURING THE 3-5 MINUTES OF DEEP FRYING. TEST FOR DONENESS BY REMOVING ONE FROM THE HOT OIL AND BREAKING IT OPEN. IT SHOULD BE MOIST BUT NOT UNDONE. DRAIN ON PAPER TOWELS. SERVE HOT.
