EASY CHICKEN & MINUTE RICE CASSEROLE

Easy Chicken & Minute Rice Casserole image

Very much a comfort food dish. Easily prepared by ingredients most of us have on hand in our pantry. So easy to make. You can also easily edit the recipe choosing soups you prefer, this is my favorite combination.

Time 50m

Yield 1 casserole, 4 serving(s)

Number Of Ingredients 7

1 (10 3/4 ounce) can cream of chicken soup
1 (10 3/4 ounce) can cream of mushroom soup (could substitute cream of celery)
1 (10 3/4 ounce) can 2% low-fat milk, using one of the soup cans to measure (note, this is ONE can total NOT per can of soup as the soup directions may indicate)
3 -4 boneless chicken breasts, chicken tender strips work too
1 cup uncooked instant Minute Rice
lemon pepper (optional)
salt & pepper

Steps:

  • Preheat oven to 350 degrees (see baking instructions for alternate methods).
  • Mix the 2 cans of soup, 1 can milk, and 1 cup of uncooked rice together. Add salt & pepper to taste.
  • Pour above mixture into a 13x9x2 casserole dish.
  • Cut the chicken into strips (about the width of a chicken tender/finger).
  • Push the chicken strips down into the soup & rice mixture in the casserole dish so they are completely emerged.
  • Sprinkle top with lemon pepper/salt/black pepper.
  • Bake at 350 degrees 35-40 minutes or until chicken is finished. NOTE that cooking time will vary depending on how you choose to cut up the chicken. If using whole chicken breasts cook at 375 degrees for 45 minutes, or until finished.
  • You may also choose to make this in a crock pot, if so, cook on low 7-8 hours.
  • My family loves this recipe and it is SOOOO easy to make, plus I usually have all of these ingredients on hand which makes for a quick meal.
  • I love the flavors of the rice so much that sometimes I will make it without the chicken as a quick and easy side dish!

5 SPICE BEEF & RICE

5 Spice Beef & Rice image

This recipe came from my husband's grandmother, and we modified it a little bit to make it gluten and dairy free. As a kid this was my husband's favorite meal, and he used to walk around singing a little song about it "5 Spice Beef and Rice, Cha Cha Cha!" The five spices are pepper, bay leaf, garlic, thyme and oregano. It's very easy to make, and a good dinner staple.

MINUTE RICE FIVE SPICE CASSEROLE

Minute Rice Five Spice Casserole image

Back around 1950, my grandmother found the recipe off the back of the Minute Rice box. Since then, it has become a family favorite, that we all request at some point in time. It is rather easy, and we usually serve it with cole slaw as the side dish. Plus, it makes wonderful leftovers!

Time 35m

Yield 4-6 serving(s)

Number Of Ingredients 13

1 lb ground beef (lean is great, as you don't need to drain it)
1 teaspoon vegetable oil (or any oil you like)
1 1/2 teaspoons salt or 1 1/2 teaspoons no-salt brand salt
1 medium onion, chopped
1 dash pepper, to taste
1/8 teaspoon garlic powder or 1/8 teaspoon garlic granules
1/8 teaspoon thyme (ground basil also works)
1/8 teaspoon oregano (ground is best)
1 -2 bay leaf (try to take them out before baking)
1 (10 3/4 ounce) can mushroom soup, reduced fat works okay
1 (28 ounce) can diced tomatoes (the larger "family size" is good)
1 cup Minute Rice
8 slices sharp cheddar cheese, reduced fat is good

Steps:

  • Brown meat in oil, add onions and cook until tender.
  • Stir in seasonings, soup, tomatoes, and Minute rice.
  • Simmer 5 minutes.
  • Stir occasionally.
  • Spoon into 1 1/2 quart baking dish. (But I only use a cast iron skillet, since it is both oven and stove top friendly. Plus, my Grandmother always made it in a cast iron skillet, and I did learn from her. She was the best cook for comfort foods.).
  • Criss cross with cheese and broil until cheese melts.
  • Garnish with olives if desired.
  • Instead of olives, we sometimes use jalepenos.
  • Also, this recipe works well when you cook it in a cast iron skillet- you only dirty one dish that way!
