Mint Chocolate S'mores image

This is one of my son's favorite s'mores variations that we've come up with during his years as a scout. We frequently prepare them during the winter, when the marshmallows and candies are easier to find. They go great with a mug of hot chocolate and a warm campfire after a long day of hiking!

1 peppermint marshmallow
1 chocolate graham cracker
1 creme de menthe thins (such as Andes®)

Steps:

  • Place marshmallow on a stick and heat over an open campfire flame until it begins to brown and melt, 1 to 2 minutes.
  • Break chocolate graham cracker in half; sandwich the hot marshmallow and creme de menthe thin between the halves. Let cool briefly before eating, 1 to 2 minutes.

Raspberry-Mint-Chocolate S'mores image

Time to step up your s'mores game by bringing out some new flavors! Raspberry preserves along with thin mint chocolates squished together with the melted marshmallow should do the trick!

Number Of Ingredients 4

8 squares graham crackers
½ (4.67 ounce) package creme de menthe thins (such as Andes®)
2 tablespoons raspberry preserves
6 miniature (3" dia)s marshmallows

Steps:

  • Lay all 8 of the graham cracker squares onto a serving plate. Place 3 unwrapped creme de menthe thins on each of 4 of the graham cracker square. Spread 1/2 tablespoon raspberry preserves on one side of the remaining 4 graham cracker squares.
  • Heat marshmallows over an open flame until they begin to brown and melt. Place hot marshmallows on top of the creme de menthe thins and top with the jam side of the other graham crackers. Allow marshmallows to cool for 1 minute before eating.
