These easy Granola Bites are our favorite on-the-go snack, packed with whole grains and protein, and all your favorite add-ins!

Number Of Ingredients 7

1 1/2 cups oats (regular or quick oats)
1 cup ground flaxseed
2/3 cup crispy rice cereal ((like Rice Krispies))
1 cup creamy peanut butter (, or other nut butter or sunflower butter)
1 cup mini chocolate chips, raisins, dried cherries, coconut, chopped nuts or a combination
1/2 cup honey (, or agave )
2 teaspoons vanilla extract

Steps:

  • Combine all ingredients in a large bowl until well mixed.
  • Scoop into balls using a cookie scoop, spoon, or your hands and place in an airtight container, with pieces of parchment paper between stacked layers, if needed.
  • Storing: Refrigerate in an air-tight container for up to two weeks or freeze for several months.

Mini Pumpkin Pies are made in a muffin tin! This easy recipe uses sweetened condensed milk and couldn't be more simple - it's an easy portable pumpkin pie. We love these with whipped cream!

1 pie crust recipe (from scratch or from a package of 2)
1 cup pumpkin puree
5 ounces sweetened condensed milk (about 1/2 of a 14 ounce can)
1 large egg
1/2 teaspoon salt
1 teaspoon pumpkin pie spice

Steps:

  • Preheat oven to 350°F.
  • Unroll your pie crust and use a 4-inch round cookie cutter or glass or jar lid to cut circles of dough, re-rolling as needed. You'll get about 8-9 circles.
  • Spray a regular size cupcake pan with nonstick cooking spray and press one circle into each cavity.
  • Whisk together pumpkin, sweetened condensed milk, egg, salt, and pumpkin spice. Divide the mixture evenly between the pie crusts.
  • Bake for about 25-35 minutes or until the center of the pies are solid and the crusts are golden around the edges.
  • Cool completely before removing from pans. Use a butter knife to gently help loosen each pie.
  • Store in an airtight container in the refrigerator for up to 3 days or freeze for up to a month.

Ree's snacking granola can be eaten in many ways. It's great sprinkled over yogurt for breakfast and elevates simple vanilla ice cream to a divine dessert. But, as a simple snack, it's perfect on its own.

2 cups old-fashioned rolled oats
1/2 cup chopped pecans
1/2 cup pumpkin seeds
2 tablespoons sesame seeds
3 tablespoons pumpkin pie spice
1/2 cup maple syrup
1/4 cup brown sugar
3 tablespoons melted salted butter
Nonstick baking spray, for the baking tray
1 cup coconut flakes

Steps:

  • Preheat the oven to 375 degrees F.
  • To a large bowl add the oats, chopped pecans, pumpkin seeds, sesame seeds and 2 tablespoons of the pumpkin pie spice. To a medium microwave-safe bowl, add the maple syrup, brown sugar and butter. Microwave for 20 to 40 seconds until the sugar has dissolved. Pour the butter mixture over the oats and mix. Sprinkle the granola onto a lightly greased baking tray, spread into an even layer and bake in the oven for 8 minutes, or until the nuts are lightly toasted. Add the coconut flakes and toss to combine. Return to the oven until everything is toasted and golden, another 3 minutes.
  • Remove from the oven, sprinkle with the remaining 1 tablespoon pumpkin pie spice, then allow to cool completely, 1 hour. Enjoy, storing what's left in an airtight container for up to 1 week.

Create an assortment of pumpkins and jack-o'-lanterns for your next Halloween party. These easy-to-make snacks are as cute as can be.

1 cup powdered sugar
4 to 5 teaspoons orange juice
1 pouch (8.4 oz) Nature Valley™ protein soft baked honey almond granola bites
Orange nonpareils, if desired
1/4 cup mini pretzel twists, cut to make stems
1 roll Betty Crocker™ Fruit Roll-Ups™ chewy fruit snack (from 5-oz box), cut for leaves (green variety)
Betty Crocker™ black decorating gel (from 0.68-oz tube)

Steps:

  • Line work surface with cooking parchment paper. In small bowl, mix powdered sugar and 4 to 5 teaspoons orange juice, mixing to desired dipping consistency. Dip each granola bite into glaze, coating top and sides, shaking excess off and leaving bottom of granola bite unglazed. Sprinkle with orange nonpareils. Place on parchment paper.
  • Let stand 15 minutes. With tip of toothpick, poke tiny hole on top of each granola bite; carefully add pretzel stem. Using photo as a guide, decorate with fruit snack leaves and gel as desired.
