18 gingersnap cookies
8 ounces cream cheese, softened
2/3 cup granulated sugar
1/3 cup packed light brown sugar
Fine salt
2 eggs, at room temperature
1 1/4 cup, plus 1/3 cup sour cream
1/3 cup heavy cream
1 15-ounce can pure pumpkin puree
1 tablespoon pumpkin pie spice, plus more for dusting

Steps:

  • 1. Preheat the oven to 300 degrees F. Line 18 muffin cups with paper liners. Place 1 whole cookie in the bottom of each lined cup.
  • 2. In a large bowl, beat the cream cheese, granulated sugar, brown sugar, and 1/4 teaspoon fine salt on medium-high speed until smooth and creamy, 2 to 3 minutes. Scrape down the sides, reduce speed to low and beat in the eggs, 1 at a time, until combined. Beat in 1/3 cup sour cream and heavy cream. Stir in the pumpkin puree and pumpkin pie spice until smooth. Divide evenly among cookie-lined paper cups, filling almost all the way to the top.
  • 3. Bake until the filling is just set, 40 to 45 minutes. A sharp knife inserted into the center will come out moist, but clean. Top each cheesecake with some of the remaining 1 1/4 cup sour cream, about 1 heaping tablespoon, using a spoon to gently spread. Cool completely in tins on a wire rack. Refrigerate until cold, 4 hours, or overnight. Top with a dusting of pumpkin pie spice.

20 gingersnap cookies
2 tablespoons butter, melted
1 package (8 oz) cream cheese, softened
1/2 cup packed brown sugar
1/2 cup canned pumpkin (not pumpkin pie mix)
1 tablespoon sour cream
1/4 teaspoon salt
1 egg
1 teaspoon vanilla
1/2 teaspoon ground cinnamon
1/4 teaspoon freshly grated nutmeg
Whipped cream, if desired
Caramel sauce, if desired

Steps:

  • Preheat oven to 350°F. Spray mini cheesecake pan (12 cups) with cooking spray.
  • In food processor, process gingersnap cookies with on/off pulses until finely ground (about 1 cup). Add melted butter; pulse until mixed. Press crumb mixture firmly into each cheesecake cup to form crust. Bake 8 minutes.
  • Meanwhile, beat cream cheese and brown sugar with electric mixer on medium speed until light and fluffy. Beat in pumpkin, sour cream and salt, scraping bowl frequently. Add egg, vanilla, cinnamon and nutmeg; beat until well blended.
  • Divide mixture evenly into crust-lined cups.
  • Bake 20 to 25 minutes or until set. Cool completely in pan, about 30 minutes. Refrigerate at least 2 hours or overnight.

½ teaspoon ground cinnamon
¼ teaspoon nutmeg
¼ teaspoon ground cloves
24 whole pecans

Steps:

  • Place crushed biscuits into a bowl and pour melted butter over them; mix until combined and the crust mixture holds together.
  • Combine mascarpone cheese, pumpkin puree, sweetened condensed milk, sugar, cinnamon, nutmeg, and cloves in a large bowl. Beat using an electric mixer until filling is smooth and airy.

Steps:

  • Line a 12-cup muffin pan with paper liners and put a gingersnap in each cup.
  • Stir the gelatin into the warm water in a microwave-safe bowl until mostly dissolved; let stand 5 minutes, then microwave in 10-second intervals until melted.

  • LINE 18 muffin wells with paper cupcake liners. Place 1 gingersnap in each.
  • BEAT cream cheese, sugar, corn starch and pumpkin pie spice with an electric mixer. Add eggs and mix well. Add pumpkin and corn syrup; beat 1 minute.

  • Heat oven to 325°F.
  • Combine cookie crumbs and 2 Tbsp. sugar; press onto bottoms of 24 paper-lined muffin cups, adding about 1 Tbsp. crumb mixture to each cup.

1 sleeve graham crackers (about 9 crackers)
½ stick (4 tablespoons) butter, melted
2 tablespoons sugar
2 tablespoons brown sugar
For the filling:
1 (8-ounce) package cream cheese, softened to room temperature
1 (15-ounce) can pumpkin puree
3 teaspoons pumpkin pie spice
1 (1-ounce) package sugar free cheesecake-flavored instant pudding mix (or 1/3 of a non-sugar free instant pudding may be used)
1 (14-ounce) can sweetened condensed milk
1 (12-ounce) container frozen whipped topping, plus extra for garnish if desired

Steps:

  • Place the graham crackers in the bowl of a food processor and pulse the crackers into fine crumbs. Add the melted butter, sugar and brown sugar and pulse until combined. Spoon the crumbs into individual 9-ounce plastic cups (or other individual sized cups for serving). Place in the refrigerator to set while you are preparing the filling. To make the crusts, in a small bowl, combine the gingersnap crumbs, cinnamon, butter and sugar and stir until blended. Divide the mixture among the prepared pans and press evenly into the bottoms. Bake until the crusts are set, about 10 minutes. Transfer the pans to a wire rack and let cool completely. Reduce the oven temperature to 300 F. To make the filling, in a small bowl, stir together the pumpkin, cinnamon, ginger and nutmeg. Set aside. In the bowl of an electric mixer fitted with the flat paddle and set on low speed, beat together the cream cheese and sugar until smooth, 3 to 5 minutes. Add the eggs one at a time, beating well after each addition, and then beat in the vanilla. Add the pumpkin mixture and beat until completely blended, about 1 minute. Pour the batter into the crusts, dividing it evenly among the pans. Bake until the filling is set, about 20 to 25 minutes. Transfer the pan to a wire rack and let cool to room temperature. Refrigerate for at least 3 hours before unmolding. Before serving, make the cinnamon whipped cream: In a medium bowl, beat the heavy cream with the vanilla and cinnamon until soft peaks form. Spoon onto the cheesecakes and sprinkle with the grated nutmeg.

Crust:
7 graham cracker sheets
1/2 tsp ground cinnamon
2 tablespoons sugar
4 tablespoons unsalted butter, melted
Cheesecake mixture:
1 pound cream cheese, softened (two 8 ounce blocks)
2/3 cup sugar
2 teaspoons vanilla extract
2 eggs, at room temperature lightly beaten
1/2 cup sour cream
Pumpkin mixture:
1/3 cup pumpkin puree
1 tsp ground cinnamon
1 teaspoon ground nutmeg
1 1/2 tsp pumpkin pie spice
2 tablespoons + 1/2 teaspoon all purpose flour

Steps:

  • Directions: Preheat the oven to 300 degrees. Line your cupcake pan with liners, set aside. In a food processor, place the graham crackers and pulse till they are a sandlike texture. Place the graham cracker crumbs in a bowl, add 1/2 tsp of cinnamon and 2 tablespoons of sugar. Melt the butter and add to the graham cracker mixture. Put 1 tablespoon of the mixture into the bottom of each cupcake liner. Press down the crumbs with your finger and set aside. In a large mixing bowl fitted with the paddle attachment mix the cream cheese on medium speed for about 3 min until it is smooth without any lumps. Add in 2/3 cup of sugar and 2 tsp of vanilla extract. mix until just combined. in a separate bowl, crack the eggs and lightly beat. Slowly add in the eggs and mix. Add in the 1/2 cup of sour cream and mix until the cheesecake mixture is smooth, making sure to scrape down the sides as you go. To make the pumpkin mixture, combine all the ingredients listed above under "pumpkin mixture" add in 2/3 cup of the cheesecake mixture and mix until the two batters are completely combined and there are no lumps. Fill each cupcake liner with 1 1/2 scoop fulls of the cheesecake batter (using a small ice cream scoop) each liner should be filled almost to the top. Now place 3 dots of the pumpkin batter onto each of the batter filled liners. I used a 1/4 teaspoon to scoop the pumpkin in. Use a toothpick to swirl the two batters together. Bake in the oven for about 27-30 min. Rotate the pan half way through the baking time. Once they are done backing, cool them completely in the fridge overnight - Keep them in the pan ENJOY!

1 ounce(s) sugar free cheesecake-flavored instant package pudding mix (or 1/3 of a non-sugar free instant pudding may be used)

12 ounce(s) container frozen whipped topping, plus extra for garnish if desired

Steps:

  • 1.Place the graham crackers in the bowl of a food processor and pulse the crackers into fine crumbs. Add the melted butter, sugar and brown sugar and pulse until combined.
  • Spoon the crumbs into individual 9-ounce plastic cups (or other individual sized cups for serving). Place in the refrigerator to set while you are preparing the filling.
  • In the bowl of a stand mixer with the paddle attachment, beat the cream cheese until light and creamy.
  • 4.Add the pumpkin, pumpkin pie spice, and pudding mix and beat until completely mixed, scraping down the sides and bottom of the bowl to ensure that all ingredients are well combined.

2 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
1/2 cup sugar
1/2 cup canned pumpkin
1/2 tsp. pumpkin pie spice
1/2 tsp. vanilla
2 eggs
3/4 cup thawed COOL WHIP Whipped Topping

Steps:

  • Heat oven to 350°F.
  • Place 1 cookie in each of 12 paper-lined muffin pan cups. Chop 4 of the remaining cookies; reserve for later use.
  • Beat cream cheese, sugar, pumpkin, pumpkin pie spice and vanilla in large bowl with mixer until blended. Add eggs, one at a time, mixing on low speed after each just until blended. Stir in reserved chopped cookies.
  • Spoon into prepared muffin pan cups.
  • Bake 20 min. or until centers are almost set. Cool completely. Refrigerate 3 hrs.
  • Cut remaining cookies in half. Top each cheesecake with 1 Tbsp. COOL WHIP and 1 cookie half just before serving.
