These sound wonderful. Recipe from Parenting magazine and says that this is a great way to introduce fish to your kids. I think some green onion and garlic powder would be perfect in this recipe, but I'll leave that up to you!

Number Of Ingredients 12

cooking spray
1 lb cod fish fillet (may sub sea bass or other firm white fish)
1/2 teaspoon salt
pepper
1 cup canned white beans, drained
1/2 cup fresh parsley leaves
1/4 cup breadcrumbs
1 egg, beaten
8 small buns
4 romaine lettuce leaves, cut in half
2 tomatoes, cut into 8 slices
8 teaspoons tartar sauce

Steps:

  • Preheat oven to 375 degrees. Spritz baking pan with cooking spray, and add fish.
  • Season fish with 1/4 t salt and pepper to taste.
  • Bake approximately 7-10 minutes, until fish is flaky and opaque. Remove fish from oven, but leave oven ON.
  • While fish is baking, In a food processor puree white beans, parsley, 1/4 t salt, and bread crumbs. Process for 1 minute then place in a large bowl.
  • Stir in beaten egg, then crumble in the fish and gently mix with your hands until incorporated.
  • Form mixture into 8 small patties.
  • Coat an oven proof skillet with cooking spray and put over medium heat. Add burgers. Cook until brown on one side, about 5 minutes. CAREFULLY flip cakes over and place skillet in the oven for 5 minutes.
  • Serve on mini buns with lettuce, tomatoes and tartar sauce.

Give it the Bass-o-matic treatment in a food processor, then chill and fry. salmon, tuna, amberjack, halibut and other steak-like fish would be fine substitutes for the mahi mahi. Prep time doesn't include the chilling.

1 lb mahi mahi fillet, cut into chunks
1/4 cup cilantro leaf
2 tablespoons hoisin sauce
2 tablespoons mayonnaise
1/4 cup sliced green onion
2 teaspoons minced fresh ginger
1 garlic clove, minced
salt and pepper
2 tablespoons vegetable oil
2 teaspoons sesame oil

Steps:

  • Combine the fish, cilantro, hoisin, mayonnaise, green onions, ginger, garlic, salt and pepper in a food processor. Pulse until finely chopped. Pat into 4 patties. Chill for 1 to 4 hours. (Or 20 minutes in the freezer.).
  • Heat vegetable oil and sesame oil in a large skillet over medium heat. Add the fish burgers and cook for 3 minutes per side or until just cooked through.
  • Serve on toasted buns with mayonnaise and extra hoisin, topped with lettuce and tomato.

I got this recipe from my coworker - loved it and then made it for my boyfriend. Now he loves it and I make it at least twice a month. You can eat this plain or as a burger. I recommend eating them with hamburger buns, mayo, lettuce and onions.

1 pound fresh tuna steaks, minced
1 carrot, grated
½ cup onion, chopped
½ cup chopped fresh chives
2 eggs
⅓ cup panko crumbs or breadcrumbs
1 tablespoon mayonnaise
garlic salt to taste
freshly ground black pepper to taste
1 tablespoon olive oil

Steps:

  • In a large bowl, mix together tuna, carrot, onion, chives, eggs, panko crumbs, and mayonnaise. Season with garlic salt and black pepper. Form into patties.
  • Heat oil in a skillet over medium heat. Arrange patties in the pan (only as many as will fit easily in the pan). Cook, uncovered, 10 minutes per side, or until golden brown.
