1 medium onion, chopped
2 teaspoons olive oil
1-1/2 cups shredded cooked chicken
2/3 cup barbecue sauce
1 can (4 ounces) chopped green chilies
1-1/2 teaspoons garlic powder
1/4 teaspoon pepper
1 package (13 ounces) whole wheat English muffins, split
1-1/2 cups shredded part-skim mozzarella cheese

Steps:

  • In a large nonstick skillet, saute onion in oil until tender. Stir in the chicken, barbecue sauce, chilies, garlic powder and pepper. Spread over cut sides of muffins; sprinkle with cheese. , Place on baking sheets; broil 4-6 in. from the heat for 2-3 minutes or until cheese is melted.

Two 13.8-ounce cans premade pizza crust dough
4 tablespoons olive oil
2 cups shredded mozzarella cheese (about 8 ounces)
2 cups shredded cheddar cheese (about 8 ounces)
1 bell pepper, cored, seeded, diced
1 red onion, chopped
2 teaspoons minced garlic
3 boneless, skinless chicken breast halves, grilled and diced
1/2 pound bacon, diced and cooked until crisp
1/2 pound bacon, diced and cooked until crisp

Steps:

  • Preheat the oven to 350 degrees F.
  • Press out the pizza dough to a 1/2-inch thickness and punch out rounds using a 3-inch biscuit cutter. Transfer to two baking sheets and brush the crusts with 2 tablespoons of the olive oil. Sprinkle with 1 cup of the mozzarella and 1 cup of the cheddar. Top with the bell pepper, red onion, garlic, chicken and bacon. Sprinkle the remaining 1 cup mozzarella and 1 cup cheddar over the pizzas and drizzle with the remaining 2 tablespoons olive oil. Bake until the crusts are lightly browned, about 25 minutes.

I really love BBQ Chicken Pizza... and I really love crescent rolls. I decided one day to combine my love of both and see what I came up with... this recipe! I use Recipe #95569 for the chicken, which works great here. Hope you like it.

1 (8 ounce) can refrigerated reduced-fat crescent rolls
1 cup cooked chicken, shredded & mixed with BBQ sauce
2 tablespoons cilantro, finely chopped
2 tablespoons red onions, finely chopped
1/2 cup mozzarella cheese, shredded
cream cheese (optional)
cooking spray

Steps:

  • Spray a cookie sheet with cooking spray. Preheat oven to 350 degrees.
  • In a small bowl, mix cilantro, onion, and mozzarella. Put aside.
  • Seperate crescent roll dough, pushing 2 triangles together to make 4 rectangles total.
  • If using cream cheese, spread a tiny bit in the center of each rectangle. (This will make it creamy and yummy and delish!).
  • Place about 1.5 tbsp shredded chicken on center of each rectangle.
  • Sprinkle cilantro, onion, and cheese mixture on top of each rectangle.
  • Fold rectangle sides up, making little pizza pockets.
  • Bake for 15 minutes.
  • When done cooking, let stand for 5 minutes.
  • Eat and enjoy - you may have to use a fork for these as they're very gooey and yummy!

2 packages (1/4 ounce each) active dry yeast
1 cup warm water (110° to 115°)
1/4 cup whole wheat flour
3 tablespoons olive oil
1 tablespoon honey
1 teaspoon salt
2-1/4 to 2-3/4 cups all-purpose flour
TOPPINGS:
3/4 pound boneless skinless chicken breasts, cut into 1/2-inch pieces
1/2 medium red onion, thinly sliced and separated into rings
2 tablespoons olive oil, divided
3 garlic cloves, minced
1 cup barbecue sauce
2 cups shredded smoked Gouda cheese
1 cup shredded Asiago cheese
1/2 cup pickled pepper rings
Minced fresh basil leaves, optional

Steps:

  • In a large bowl, dissolve yeast in warm water. Add the whole wheat flour, oil, honey, salt and 1-1/2 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough., Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. On a lightly floured surface, divide dough into four portions. Roll each into a 10-in. circle; build up edges slightly. Cover and let rest for 10 minutes., Meanwhile, in a large skillet, saute chicken and onion in 1 tablespoon oil until chicken is no longer pink. Add garlic; cook 1 minute longer. Brush both sides of dough with remaining oil. Grill dough, covered, over medium heat for 1-2 minutes or until the crust is lightly browned. Remove from the grill. , Layer the grilled side of each pizza with the chicken mixture, cheeses and pepper rings. Return pizzas to grill. , Cover and cook for 4-5 minutes or until crust is lightly browned and cheese is melted, rotating pizzas halfway through cooking to ensure an evenly browned crust. Sprinkle with basil if desired.
