MINESTRONE CASSEROLE

Number Of Ingredients 11

1 pound ground beef
one medium onion, chopped
one clove garlic, minced
one package hamburger helper for lasagna mix 7.25 ounces
one can corn, 16 ounces
one can whole tomatoes, 16 ounces
1 cup sliced celery
1 cup water
2 teaspoons salt
1/2 teaspoon mixed italian herbs
grated parmesan cheese

Steps:

  • 1. brown ground beef in large skillet. Drain off fat. Sauté onion and garlic three minutes or until soft. Add Main dish mix for lasagna, corn, and tomatoes with liquid, celery, water, salt, and Italian herbs, crumbled.
  • 2. Bring to boil. Pour into a 12 cup casserole. Cover casserole. Bake at 400 for 30 minutes or until bubbly hot. Sprinkle Parmesan cheese over top of casserole just before serving. Serves six

1 lb ground beef
1 medium onion, chopped
1 garlic clove, crushed
1 1/4 cups chicken broth or 1 1/4 cups beef broth
1 stalk celery, thinly sliced (about 1 cup)
1 small zucchini, sliced (about 1 cup)
1 cup shredded cabbage
1/2 cup uncooked elbow macaroni or 1/2 cup broken spaghetti
2 teaspoons instant beef bouillon (dry)
1 teaspoon italian seasoning
1/2 teaspoon salt
1 (28 ounce) can whole tomatoes, undrained
1 (8 ounce) can kidney beans, undrained
1 (8 ounce) can whole kernel corn, undrained
grated parmesan cheese

Steps:

  • Cook and stir ground beef, onion and garlic in Dutch oven until beef is brown; drain.
  • Stir in remaining ingredients except cheese; break tomatoes with fork.
  • Heat to boiling, reduce heat.
  • Cover and simmer, stirring occasionally, until macaroni is tender, about 15 minutes.
  • Serve with cheese.

2 cups uncooked mini lasagna (mafalda) noodles (4 oz)
3 tablespoons olive oil
1 cup chopped onion (1 large)
1 cup sliced carrots, (2 medium)
2 medium stalks celery, sliced (1 cup)
1 medium green bell pepper, chopped
1 medium zucchini or summer squash, quartered lengthwise and sliced
2 cloves garlic, chopped
2 cans (15 oz each) red kidney beans, drained, rinsed
1 can (15 oz) diced tomatoes with Italian herbs, undrained
1/2 cup finely shredded Parmesan cheese
1 teaspoon salt
1/4 teaspoon pepper
1/4 cup refrigerated basil pesto

Steps:

  • Heat oven to 350°F. Cook and drain pasta as directed on package using minimum cook time.
  • Meanwhile, in 10-inch skillet, heat oil over medium heat. Add onion, carrots, celery and bell pepper; cover and cook 5 to 8 minutes, stirring occasionally, until carrots are just tender. Uncover; stir in zucchini and garlic. Cook and stir 1 minute longer.
  • Place pasta in ungreased 2 1/2-quart casserole. Stir in carrot mixture, beans, tomatoes, 1/4 cup of the cheese, the salt, pepper and pesto. Cover casserole. Bake 40 to 50 minutes or until hot in center. Top each serving with remaining cheese.
