MINCEMEAT COOKIE BARS
My daughter won the grand champion title at the Alaska State Fair with these bars when she was 10. The topping is delicious but a bit crumbly; for neatly edged cookies, freeze before cutting. -Mary Bohanan, Sparks, Nevada

Steps:
- Preheat oven to 400°. Line an 8-in. square baking pan with foil; grease foil with butter. In a large bowl, whisk flour, sugar, baking soda and salt. Stir in oil and milk. Reserve 1 cup for topping. Press remaining crumb mixture onto bottom of prepared pan. Spread with mincemeat. Stir pecans into reserved crumb mixture; sprinkle over top. Bake 30-35 minutes or until topping is golden brown., Cool completely in pan on a wire rack. Cut into bars.

Steps:
- HEAT oven to 400°F. Combine flour, sugar, baking soda and salt in large bowl. Add oil and milk, stirring until mixture is evenly moistened and crumbly. RESERVE 1 cup crumb mixture. Press remaining crumb mixture firmly into bottom of ungreased 13 x 9-inch baking pan. Top evenly with mincemeat. Sprinkle evenly with remaining crumb mixture and nuts. BAKE 30 to 35 minutes or until golden brown. Cool completely in pan on wire rack. Chill if desired. Cut into bars.

- Preheat the oven to 400 degrees F (200 degrees C). Grease two 9x13 inch baking pans.
- In a large bowl, mix together the butter, brown sugar, molasses and 1 teaspoon vanilla until well blended. Combine the flour, salt, baking soda, cinnamon and cloves; stir into the molasses mixture. Stir in hot water, almonds, raisins and mincemeat. Spread the dough evenly into the bottoms of both pans. It will be thin but the mixture will puff up when baking.
- Bake for 12 to 15 minutes in the preheated oven, or until firm. Cool in pans on wire racks. In a small bowl, mix together the confectioners' sugar, hot milk, 1/2 teaspoon vanilla and 1/2 teaspoon almond extracts until smooth. Spread over warm bars. Allow to cool before cutting into squares.

- In a large bowl, cream shortening and sugar until light and fluffy. Add 1 egg at a time, beating well after each addition. Combine flour and baking soda; gradually add to the creamed mixture and mix well. Beat in mincemeat. Stir in chocolate chips., Spread into a greased 15x10x1-in. baking pan. Bake at 375° for 15-20 minutes or until dark golden brown. Cool on a wire rack. Cut into bars. Dust with confectioners' sugar. Freeze option: Freeze cooled bars in freezer containers, separating layers with waxed paper. To use, thaw before serving.

Good at holiday time - good any time. Mincemeat filling can be replaced with any flavor canned pie filling.

- In large mixing bowl stir together: flour, oats, brown sugar and baking soda. Melt butter or margarine over low heat and stir in until well blended. Set aside 2 cups of this mixture.
- Distribute remaining oat mixture evenly into an ungreased 15 X 10 X 1 inch baking pan and pat down. Bake this in a 350 degrees F (175 degrees C) oven for 12 minutes.
- Stir lemon OR orange peel into mincemeat OR fruit-pie filling. Spread filling carefully over the HOT baked crust. Sprinkle the reserved oat mixture over the filling. Pat oat mixture very gently onto filling.
- Bake for 20 to 25 minutes or until top is golden. Cool pan on rack. Drizzle with icing.:
- To Make Icing: Mix together 1 cup confectioners' sugar, 1/4 teaspoon vanilla, and 1 to 2 tablespoon milk. Add milk a little at a time to obtain drizzling consistency.

- 2. Add flour, soda and brown sugar, mix well.

- Preheat oven to 425.
- Combine flour and sugars; cut in butter until crumbly. Stir in nuts.
- Reserving 1 1/2 cups crumb mixture, press the rest on the bottom and halfway up sides of a 13x9 inch baking pan.

How to make Mincemeat Bars

- For Cookie Mix: COMBINE flour, sugar, baking powder and salt in large bowl. Cut in shortening with pastry blender or 2 knives until mixture resembles coarse meal. To measure, spoon mix into measuring cup and level with a spatula.
- Extra Cookie Mix can be stored in covered container up to 6 weeks at room temperature. For longer storage, place in freezer.
- For Bars: HEAT oven to 350°F. Spray 15x10x1-inch baking pan with no-stick cooking spray. Combine cookie mix, oats and eggs in large bowl, stirring with a spoon until mixed. Reserve about 3/4 cup of the mixture. Pat remaining mixture in bottom of prepared pan. Spread mincemeat evenly over base. Finely crumble reserved oat mixture on top of mincemeat.
- BAKE about 45 minutes or until lightly browned. Remove from oven and cool. Mix powdered sugar and ginger. Stir in enough milk to make drizzling consistency (about 5 teaspoons). Drizzle over bars in pan. Cut into bars.
