1 (16 ounce) can tomato sauce
1/2 cup chopped onion
1 teaspoon minced garlic
1 teaspoon dried basil
1/2 teaspoon dried rosemary
1/4 teaspoon oregano
1 teaspoon sugar
2 tablespoons olive oil
salt
pepper

Steps:

  • Heat olive oil over medium heat in medium-sized saucepan.
  • Saute onions and garlic until brown.
  • Add tomato sauce and stir.
  • Lower heat to medium-low.
  • While stirring, add rosemary, basil and oregano.
  • Allow sauce to bubble.
  • Sprinkle with sugar and mix again.
  • Season to taste with salt and pepper.
  • Use immediately, or transfer to plastic container for storage.

1/4 Cup Olive Oil
4 Med Carrots (Chopped)
2-3 Medium Spanish Onions (chopped)
3 Tblsp Brown Sugar
4 Tblsp Minced Garlic (fresh)
102 oz Whole Canned Tomatoes
56 oz Crushed Tomatoes
28 oz Tomato Puree
1 tsp. Baking Soda
2 Pork Bones (Optional - not needed for flavor)
2 Cups Fresh Basil (Whole Loosely Packed)
12 oz Romano Cheese
1-2 Tblsp Salt (reduce to 1 for less)
3 Tblsp Garlic Powder
2 Tblsp Dried Oregano
1 Tblsp Dried Basil
1 tsp Black Pepper
1 tsp Red Pepper Flakes (Optional for a little kick)
1 Stick of Butter (optional)

Steps:

  • Warm a large stock pot over med-high heat. Add the carrots, onions, brown sugar and let cook until onions become clear. Add the minced garlic and stir the mixture to promote heating. Allow the garlic to become just brown. Add the whole, crushed and pureed tomatoes and lively stir breaking up the whole tomatoes. Stir in 1 teaspoon baking soda. Reduce heat to medium, stirring frequently. Add optional pork bones if desired and allow to cook for 1 hour. Add Basil, Romano Cheese, garlic powder and optional crushed red pepper flakes. Turn heat to med-low and allow to cook for another 3 hours. Remove from heat, mix in the optional butter, and you're through! If you don't care for chunks in your sauce, run it through a food mill to make it more consistent throughout. Add meatballs or cooked ground beef if desired.
