It was in a great tomato and vegetable sauce. I never have found anything similar so I have been trying to figure out my own version. I still haven't gotten it down,...

Number Of Ingredients 27

SAUCE INGREDIENTS
1/2 c finely chopped onion
1/3 c finely chopped green bell pepper
1/3 c finely diced celery
1 Tbsp butter
6 oz tomato paste
2 Tbsp white vinegar
5 Tbsp brown sugar
1 tsp garlic powder
1 tsp onion powder
1/4 tsp allspice, ground
1 tsp salt
1 tsp molasses
1 Tbsp white corn syrup
1 c water
MEATLOAF INGREDIENTS
1/2 c prepared sauce
1 small chopped onion
1/2 small chopped bell pepper
1 stalk(s) chopped celery
1 lb ground beef
1 lb ground pork
1 pkg mccormick meatloaf seasoning, optional
1/4-1/2 c bread crumbs
2 large eggs, well beaten
1/2 c milk
1 tsp each garlic powder, onion powder, salt, sugar and black pepper (if you don't use mccormick seasoning packet)

Steps:

  • 1. Preheat oven to 350. First prepare sauce: In saucepan with butter saute vegetables until tender. Then add remaining sauce ingredients and bring to a boil until sugar is dissolved. Then lower heat and keep at a very low, slow simmer while preparing meatloaf, allowing sauce to thicken.
  • 2. For meatloaf: I don't saute the vegetables for the meatloaf but you could do so if desired. Mix all ingredients for meatloaf until very well mixed. Spray a loaf pan and put meat mixture into 9 x 5 loaf pan, or you can form into a loaf and bake on a cookie sheet with sides on it. I have a pan that is a double meatloaf pan with the inserts that go in so you can take the meatloaf out of the pan easily. I just use one side and bake the meatloaf for 1 hour. Then, I use the second side for the remaining part of the cooking.
  • 3. After 1 hour remove meatloaf from oven and drain any grease, if possible. Then cover the meatloaf with most of the remaining sauce, saving some to use at the table. Finish baking the meatloaf for another 30 minutes. Remove from oven and allow to sit for about 10 minutes. Then serve, using the remaining sauce on each slice if desired.

Sunny's Cheat Sheet Mini Meatloaves with Sweet Potatoes and Broccoli image

1 pound ground chicken
1/2 cup lightly packed chopped fresh basil
1/2 cup lightly packed chopped fresh parsley
1/3 cup finely chopped white onion
2 tablespoons plain breadcrumbs
1 teaspoon Hungarian paprika
1 teaspoon kosher salt
Freshly ground black pepper
4 ounces shredded Parmesan
3 cloves garlic, grated on a rasp
2 scallions, finely chopped (white and green parts)
1 slice white bread, cut into tiny cubes
1 large egg white, whisked until frothy
1 cup pizza sauce
2 tablespoons honey
1 tablespoon hot sauce
Freshly ground black pepper
One 1.5-pound bag steamable sweet potatoes
2 cups fresh broccoli florets (from about 1 head broccoli)
Zest of 2 lemons plus lemon wedges, for spritzing
Zest of 1 orange plus orange wedges, for spritzing
1/2 teaspoon garlic powder
1/8 teaspoon freshly ground nutmeg
3 tablespoons olive oil
Kosher salt and freshly ground black pepper

Steps:

  • For the meatloaves: Line a sheet pan with nonstick aluminum foil and set aside.
  • Add the ground chicken to a large bowl and break it up. Set aside. Combine the basil, parsley, onion, breadcrumbs, paprika, salt, pepper, cheese, garlic, scallions, bread and egg white in a medium bowl and stir until everything is blended. Add to the chicken and gently mix with your less dominant hand, turning the bowl with the dominant hand and using your fingers on the less dominant hand as a pitchfork, folding as you go, until mixed well. Form into 4 equal parts and and place on the lined sheet pan. Form into bricks of a similar size. Set aside.
  • For the meatloaf topping: Heat the pizza sauce, honey, hot sauce and plenty of black pepper in a small saucepot on medium heat until it comes to a simmer. Simmer until it reduces and thickens slightly, about 10 minutes. Set aside.
  • For the veggies: Preheat the oven to 375 degrees F. Steam the sweet potatoes according to the package instructions, about 6 minutes. Slice into 1-inch-thick coins.
  • Combine the sweet potatoes in a large bowl with the broccoli, citrus zests, garlic powder and nutmeg. Drizzle with the olive oil and toss. Sprinkle with salt and pepper and toss again.
  • Add the vegetables to the sheet pan with the meatloaves by placing the sweet potatoes on first, surrounding the meatloaves, then pouring over the broccoli. Bake for 30 minutes, then remove and brush the meatloaves with the topping. Spritz the vegetables with juice from the orange and lemon wedges. Continue to bake until the internal temperature of the meatloaves registers 165 degrees F, about another 15 minutes.

3/4 lb ground beef
1/4 lb ground pork
1 cup minced onion
1/2 cup minced green pepper
1 tablespoon chopped garlic
2 eggs
1/2 cup heavy cream
3/4 cup breadcrumbs
salt & freshly ground black pepper
2 cups beef broth
2 tablespoons flour
2 tablespoons water

Steps:

  • Preheat oven to 350 degrees.
  • Butter a roasting pan. Mix beef, pork, onions, green peppers, garlic, eggs, cream and bread crumbs together in large mixing bowl. Season mixture with salt and pepper. Shape into a loaf and place on prepared pan. Pour broth over top and place in oven and bake for 1 to 1 1/2 hours, basting occasionally.
  • Remove pan from oven. Using long spatula, remove meat loaf from the pan. Place roasting pan on stove over high heat. In a small bowl, whisk flour with 2 tablespoons water. Whisk slurry into gravy. Bring liquid to boil and cook for a few minutes, stirring constantly. Season gravy with salt and pepper.
  • Slice meatloaf into 8 slices. Serve 2 slices per person with gravy.

Well, I couldn't share my Vegie Soup recipe without sharing my meatloaf recipe.. My family loves meatloaf, the boys request it for their birthday dinners, along with mashed potatoes and meatloaf gravy! Another family fav.

1 1/2 lb lean ground beef
3/4 lb lean ground pork
1 medium onion finely chopped
2 clove fresh garlic finely chopped
2 large eggs
1/2 c oatmeal, uncooked (quick kind)
1 large plop of sour creme
1 pinch salt and pepper
dash(es) worcestershire sauce
dash(es) ketchup
dash(es) olive oil, extra virgin
water if needed

Steps:

  • 1. In a large bowl mix all the ingredients together. The seasonings, worcestershire sauce, ketchup would be to your taste. I rarely measure, just shake and squirt! The amount of water would depend on how lean your meat is, you don't want the mix to be too dry.
  • 2. Grease a loaf pan and put your mixed meatloaf into it, mounding it up from the sides of the pan (a wooden spoon works well for this) Squirt and spread ketchup on top. Place in a 350 degree oven for 1 hour.
  • 3. This recipe is basic. I have been know to add leftover steamed vegies, or cooked rice, tomato sauce instead of ketchup, it just depends on what I have on-hand. So mix it up, it's all good!

3 to 4 tablespoons packed brown sugar
1 teaspoon ground mustard
2 large eggs, lightly beaten
4 teaspoons Worcestershire sauce
3 cups Crispix cereal, crushed
3 teaspoons onion powder
1/2 to 1 teaspoon seasoned salt
1/2 teaspoon garlic powder
1/2 teaspoon pepper
3 pounds lean ground beef (90% lean)

Steps:

  • In a large bowl, combine the ketchup, brown sugar and mustard. Remove 1/2 cup for topping; set aside. Add the eggs, Worcestershire sauce, cereal and seasonings to remaining ketchup mixture. Let stand for 5 minutes. Crumble beef over cereal mixture and mix well. , Press meat mixture into 18 muffin cups (about 1/3 cup each). Bake at 375° for 18-20 minutes. Drizzle with reserved ketchup mixture; bake 10 minutes longer or until meat is no longer pink and a thermometer reads 160°. , Serve desired number of meat loaves. Cool remaining loaves. Transfer to freezer container; close and freeze for up to 3 months. , To use frozen meat loaves: Completely thaw in the refrigerator. Place loaves in a greased baking dish. 1 cup shredded Cheddar cheese
