1/4 cup (1/2 stick) unsalted butter
1 teaspoon vanilla extract
1/3 cup sifted all purpose flour (sifted, then measured)
1/3 cup sifted unsweetened cocoa powder (preferably Dutch-process; sifted, then measured)
4 large eggs
2/3 cup sugar
Hazelnut crunch
5 ounces imported gianduja bars (hazelnut-flavored milk chocolate, such as Callebaut), chopped
1 cup crisp rice cereal
1/3 cup hazelnuts, toasted, husked, finely chopped*
Mousse
10 ounces imported gianduja bars (hazelnut-flavored milk chocolate, such as Callebaut), chopped
1 1/4 cups chilled heavy whipping cream
1/8 teaspoon (scant) salt
3 tablespoons water
3 tablespoons Tuaca (sweet citrus-flavored liqueur) or Frangelico (hazelnut-flavored liqueur)
Additional unsweetened cocoa powder
Powdered sugar

Steps:

  • For cake:
  • Position rack in bottom third of oven and preheat to 350°F. Line bottom of 9-inch-diameter cake pan with 2-inch-high sides with parchment paper. Melt butter in saucepan over medium heat. Remove from heat. Spoon off foam from top of butter and discard. Spoon clear yellow butter into small metal bowl, leaving water and milk solids in bottom of pan. Add vanilla to butter in bowl; set clarified butter aside.
  • Sift flour and cocoa powder together 3 times into medium bowl. Whisk eggs and sugar in large metal bowl to blend. Place bowl with egg mixture in large skillet of barely simmering water; whisk constantly until egg mixture is lukewarm (105°F), about 2 minutes. Remove bowl from water. Place bowl with clarified butter in hot water in same skillet over low heat to keep warm.
  • Using electric mixer, beat egg mixture until cool and tripled in volume, about 5 minutes. Sift 1/3 of flour-cocoa mixture over egg mixture and gently fold in with rubber spatula. Fold in remaining flour-cocoa mixture in 2 more additions. Fold 1 cup of cake batter into warm clarified butter until incorporated. Using rubber spatula, gently fold butter-cake batter mixture into remaining cake batter.
  • Transfer batter to prepared pan. Bake until tester inserted into center of cake comes out clean and top springs back slightly when gently pressed, about 30 minutes. Cool completely in pan on rack. (Can be made 1 day ahead. Cover; store at room temperature.)
  • Run knife between pan sides and cake to loosen. Invert cake onto rack; remove parchment. Using long serrated knife, trim top of cake horizontally, forming 3/4-inch-high cake layer. Using bottom of 8-inch-diameter springform pan as guide, trim around sides of cake to form 8-inch round cake. Set cake aside.
  • For hazelnut crunch:
  • Line bottom of 8-inch-diameter springform pan with parchment paper. Pour enough water into large skillet to reach depth of 1 inch; bring to simmer. Remove skillet from heat. Place gianduja in medium metal bowl; set bowl in hot water in skillet. Stir until gianduja is melted and smooth. Stir in cereal and nuts. Spread crunch evenly over parchment in pan. Place cake atop crunch layer, pressing to adhere. Chill until crunch is firm, about 1 hour.
  • For mousse:
  • Place gianduja in metal bowl. Pour enough water into large skillet to reach depth of 1 inch; bring to simmer. Remove from heat; place bowl with gianduja in hot water in skillet. Stir until gianduja is smooth. Remove bowl from water; cool gianduja to lukewarm.
  • Using electric mixer, beat cream and salt in another bowl until very soft peaks form (when bowl is tilted, cream should be fluffy but still pourable and flow to one side). Mix 3 tablespoons water into melted gianduja. Pour whipped cream over and fold into gianduja just until incorporated (mousse will be very soft).
  • Brush top of chilled cake with liqueur. Spread mousse over cake in pan. Cover and chill overnight. (Can be prepared 2 days ahead. Keep chilled.)
  • Run knife between cake and pan sides to loosen. Soak kitchen towel in hot water; wring out water. Wrap hot wet towel around pan sides and hold 30 seconds. Carefully remove pan sides from cake; smooth mousse with knife if necessary. Place cake on pan bottom on rack set over baking sheet. Sift cocoa powder lightly over top of cake. Using stencils such as snowflakes or stars, sift powdered sugar over top of cake. Transfer to platter and serve.
  • *Many supermarkets sell pre-husked hazelnuts. if you can't find them, here's how to husk whole hazelnuts: Scatter nuts on rimmed baking sheet and toast at 350°F until skins darken, 12 to 15 minutes. Wrap warm hazelnuts in kitchen towel and rub together to remove skins.

Steps:

  • Whisk yolks and salt to blend in medium bowl. Bring milk to simmer in medium saucepan. Gradually whisk hot milk into yolk mixture; return to same pan. Stir over low heat until custard thickens, about 1 minute (do not boil). Remove from heat; add chocolate. Whisk until chocolate melts and mousse base is smooth; whisk in rum. Cool 45 minutes.
  • Beat 3/4 cup cream in bowl until peaks form; fold into mousse base. Cover; chill at least 4 hours.

  • for filling:

Remove bowl from over water. Stir in corn syrup. Cool to room temperature. Beat cream in large bowl to soft peaks. Fold 1/4 of whipped cream into chocolate mixture, then fold in remaining cream. 1/4 cup vegetable oil

9 ounces godiva milk chocolate, coarsely chopped (6 1.5-oz bars)
1/4 cup godiva liqueur
2 tablespoons vegetable oil
2 teaspoons vanilla extract
1 1/4 cups heavy cream
7 1/2 ounces godiva dark chocolate, coarsely chopped (5 1.5-oz bars)

Steps:

  • MAKE THE CHOCOLATE GENOISE:
  • Preheat oven to 350°F
  • Lightly butter bottom of 9-inch springform pan and line with parchment paper.
  • Sift together flour, cocoa powder, 2 tablespoons of the sugar, baking powder and salt.
  • Beat whole eggs, egg yolks, oil, 1/2 cup sugar and vanilla in bowl until tripled in volume, using electric mixer at medium-high speed.
  • Add flour all at once, folding until just combined.
  • Pour batter into prepared pan.
  • Bake for 30 to 35 minutes or until cake springs back when touched lightly.
  • Cool completely in pan on wire rack.
  • MAKE THE CHOCOLATE GANACHE:.
  • Place chocolate in microwave-safe bowl.
  • Microwave on medium (50% power) for 1 minute; stir.
  • Microwave 30 seconds more or until chocolate is softened; stir until smooth.
  • Add Godiva Liqueur, oil and vanilla, stirring to combine.
  • Cool to room temperature.
  • Beat heavy cream in bowl until soft peaks form, using electric mixer at medium-high speed.
  • Gently fold whipped cream into chocolate mixture.
  • ASSEMBLE THE CAKE:.
  • Loosen genoise from pan, using a knife.
  • Remove side of springform pan; carefully remove paper.
  • Cut cake horizontally into two equal layers.
  • Place one layer cut side up in bottom of springform pan.
  • Spread half of the mousse on cake.
  • Place top layer on mousse and spread with remaining mousse.
  • Cover and refrigerate for 3 to 4 hours or until mousse is set.
  • MAKE THE GANACHE:.
  • Place chocolate, corn syrup and vanilla in bowl.
  • Heat heavy cream in saucepan over medium heat to a simmer.
  • Pour over chocolate mixture.
  • Let stand 30 seconds.

  • MAKE THE RASPBERRY SAUCE:.
  • Puree raspberries in food processor.
  • Strain through a fine-meshed sieve into small bowl.

2 cups chilled heavy cream
2/3 cup egg whites (from about 5 eggs)
1/3 cup sugar
1 teaspoon freshly grated orange zest
1 tablespoon thawed frozen orange juice concentrate or Grand Marnier liqueur

Steps:

  • In the top of a large double boiler set over barely simmering water, melt the chocolates together. Stir well and set aside to cool slightly. In a mixer fitted with a whisk attachment (or using a hand mixer), whip the cream until stiff. Keep refrigerated.
  • In a clean, dry bowl, whip the egg whites until soft peaks form. Add the sugar and continue whipping just until stiff and glossy, about 30 seconds more. Whisking hard, incorporate 1/3 of the egg whites into the chocolate until well blended. Fold in the next 1/3 of the egg whites. Fold in the remaining egg whites until just barely combined (the mixture will be streaky). Add the orange zest, orange juice concentrate, and whipped cream and fold until smooth.
  • Use a pastry bag fitted with a large plain or star tip to pipe the mousse into serving dishes, or simply spoon it into a large serving bowl. Cover lightly and refrigerate at least 1 hour or until ready to serve.

Milk and Dark Chocolate Mousses:
3 1/2 cups (812 grams) heavy cream
5 ounces (142 grams) milk chocolate, finely chopped

1/4 cup (50 grams) sugar

Steps:

  • Make the chocolate génoise:
  • 1. Preheat the oven to 350°F. Butter a 9-inch round cake pan. Dust the pan with flour and tap out the excess.
  • 2. Whisk together the flour and cocoa powder in a medium bowl; set aside.
  • 3. Fill a pot one-third full with water and bring to a simmer. Combine the eggs and sugar in the bowl of an electric mixer. Place the bowl over the simmering water and whisk until the mixture is warm to the touch. Transfer the bowl to the mixer stand and, using the whisk attachment, beat on medium speed until the mixture triples in volume and forms a thick ribbon when the whisk is lifted, about 8 minutes. Using a large rubber spatula, gently fold in the flour mixture. Fold in the melted butter. Scrape the batter into the pan and smooth the top.
  • 4. Bake the cake for 20 to 25 minutes, until it has pulled away from the side of the pan and the top springs back when lightly touched. Cool the cake in the pan for 10 minutes. Unmold the cake on a rack and cool completely, right side up.
  • Make the milk and dark chocolate mousses:
  • 5. In the bowl of an electric mixer, using the whisk attachment, beat 2 1/2 cups (580 grams) of the heavy cream to soft peaks. Scrape half of the whipped cream into a medium bowl. Cover both bowls and refrigerate.
  • 6. Put the milk and dark chocolate in two separate medium bowls. Bring the remaining 1 cup (232 grams) cream to a boil in a small saucepan. Pour 1/2 cup (116 grams) of the hot cream over the milk chocolate and the remaining 1/2 cup (116 grams) over the bittersweet chocolate. Gently whisk the milk chocolate until it is completely melted and the mixture is smooth. Whisk the dark chocolate until smooth.
  • 7. Let the chocolate mixtures cool for 10 minutes. Fold the milk chocolate mixture into one bowl of whipped cream. Fold the dark chocolate into the remaining whipped cream.
  • Make the sugar syrup:
  • 8. Combine 1/4 cup (59 grams) water and the sugar in a small saucepan. Bring to a boil over medium-high heat, stirring to dissolve the sugar. Let the syrup cool to room temperature.
  • Assemble the cake:
  • 9. Using a serrated knife, slice the cake horizontally in half. Cup a strip of parchment paper to line the inside of a 9x4-inch cake ring. Line the mold with the strip and place it on a serving plate. Place a 9-inch cardboard cake round in the bottom of the cake ring. Place the bottom cake round, cut side up, in the ring. Brush the cake generously with the sugar syrup. Scrape the dark chocolate mousse onto the cake and smooth it into an even layer. Top with the second cake round, cut side down. Brush the cake generously with syrup. Scrape the milk chocolate mousse onto it, smoothing it into an even layer. Chill the cake for at least 2 hours and up to 24 hours.
  • 10. To unmold the cake, lift it off the plate, holding it with your palm against the cardboard round. Using a hairdryer or warm damp towel, briefly warm the cake ring mold. Lift off the ring mold and peel off the parchment strip. Allow the cake to stand at room temperature for 30 minutes before serving.

  • For ganache:
  • Boil 1 1/4 cups Port in heavy medium saucepan until reduced to 1/4 cup, about 9 minutes.
  • Meanwhile, simmer cream and butter in small saucepan. Remove from heat. Add chocolate; whisk until smooth. Stir 2 tablespoons Port reduction into chocolate mixture. Add 1/2 cup Port and 1 tablespoon sugar to Port reduction. Boil until syrup coats spoon thickly, 6 to 7 minutes.
  • For mousse:
  • Whisk yolks, 2 tablespoons water, 2 tablespoons cream, and sugar in heavy medium saucepan. Stir over medium-low heat until custard thickens enough to coat spoon, about 5 minutes (do not boil). Remove from heat. Add chocolate; stir until smooth. Transfer chocolate mixture to medium bowl. Using electric mixer, beat egg whites in another medium bowl until soft peaks form. Fold whites into chocolate mixture in 2 additions. Beat 8 tablespoons cream in another medium bowl until peaks form. Fold cream into chocolate mixture. Cover; chill at least 6 hours.   • For whipped crème fraîche:
  • Using electric mixer, beat cream in medium bowl until soft peaks form. Fold in crème fraîche.
  • Rewarm ganache in microwave in 10-second intervals until warm. Rewarm Port syrup, thinning with Port by 1/2 teaspoonfuls if too thick.
  • Bring small saucepan of water almost to boil. Spoon 2 tablespoons warm ganache onto center of each of 8 plates. Dip large tablespoon into hot water; shake off excess. Starting at 1 edge of mousse, pull tablespoon in horizontal position across surface of mousse, forming oval-shaped scoop. Place mousse in center of ganache. Repeat procedure for each serving, dipping spoon into hot water and shaking off excess between scoops. Using slightly smaller spoon, repeat procedure to scoop whipped crème fraîche. Place 1 scoop of whipped crème fraîche alongside mousse on each plate. Drizzle warm Port syrup around ganache on each plate.

4 1/2 ounces milk chocolate
2 ounces bittersweet chocolate
4 tablespoons unsalted butter, room temperature
3 large egg yolks
1/4 cup granulated sugar
1/4 teaspoon salt
1 cup heavy cream
1/4 cup creme fraiche
1 teaspoon pure vanilla extract
9 ounces bittersweet chocolate
3 ounces unsweetened chocolate

3/4 cup whole milk
3/4 cup heavy cream
6 tablespoons unsalted butter, room temperature
1/2 cup Kahlua or other coffee liqueur
1 tablespoon pure vanilla extract

Steps:

  • Make cake: Preheat oven to 350 degrees. Butter an 8-inch round cake pan. Line with parchment, and butter parchment. Sift together flour, cocoa, and salt.
  • With a mixer fitted with the whisk attachment, beat egg yolks and sugar on medium-high speed until pale and thick, about 7 minutes. Beat in vanilla.
  • With a mixer fitted with the whisk attachment, beat egg whites until medium-stiff peaks form. Fold into yolk mixture in 3 additions. Fold in flour mixture in 2 additions until almost incorporated. Fold in butter. Pour into pan.
  • Bake cake until a toothpick inserted into center comes out clean, 25 to 30 minutes. Let cool completely in pan on a wire rack. Invert onto rack. Remove parchment, and turn right side up.
  • Make brittle: Bring sugar, corn syrup, water, and salt to a boil, stirring until sugar has dissolved. Wash down sides of pan with a wet pastry brush, and cook until pale amber, about 12 minutes total. Stir in butter. Remove from heat, and stir in cashews. Pour onto a parchment-lined baking sheet to cool. Coarsely chop.
  • Make mousse: Melt chocolates and butter in a heatproof bowl set over simmering water, stirring occasionally. Cool 20 minutes. Keep water simmering.
  • Combine yolks, sugar, and salt in a heatproof bowl set over simmering water. Whisk until sugar has dissolved and mixture reaches 160 degrees on a candy thermometer. Remove from heat. With a mixer fitted with the whisk attachment, beat on medium-high speed until thick and cool, about 7 minutes.
  • Whisk cream, creme fraiche, and vanilla until medium-stiff peaks form. Fold chocolate mixture into yolks. Fold in cream mixture, and then 1 1/2 cups brittle. Cover, and refrigerate, stirring occasionally, until slightly thickened, 1 hour.
  • Make ganache: Fill a bowl halfway with ice water, and set aside. Combine chocolates and salt in a heatproof bowl. Bring milk, cream, and butter to a boil. Pour over chocolate, and whisk until smooth. Reserve 1 cup ganache at room temperature. Place bowl with remaining ganache in ice water, and whisk constantly, scraping bowl, until ganache is set but not solid.
  • Make syrup: Mix liqueur and vanilla.
  • Assemble cake: Using a serrated knife, trim rounded top of cake to create a flat surface, and shave off just the slightest bit of cake around edges so that it fits inside an 8-by-3-inch springform pan without touching sides. Cut cake in half horizontally. Cut both layers in half horizontally to make 4 layers. Place 1 layer in pan. Brush with 1/4 of the syrup. Top with 1/2 cup ganache and 1 cup mousse. Repeat with cake, syrup, ganache, and mousse. Spread 1 cup reserved ganache over top. Refrigerate at least 2 hours (preferably overnight).
  • Run an offset spatula around edges of pan, and remove sides. Garnish with berries and, if desired, Cashew-Brittle Hearts.

6 ounces milk chocolate, finely chopped
1/4 cup natural-style peanut butter
1 cup heavy cream
1/3 cup chocolate-covered peanuts, chopped

Steps:

  • Combine milk chocolate, peanut butter, heavy cream in a large heatproof bowl. Place bowl over a large saucepan with one inch simmering water and stir occasionally until mixture is melted and smooth (about 5 minutes). Remove the bowl from the saucepan, place in the fridge and then chill for about 2 hours.
  • Whip the mixture with a handheld mixer at medium-high speed until light and fluffy ( do not overbeat of mousse will be grainy ) spoon mixture into 4 bowls and garnish with chopped chocolate covered peanuts, and wallah you now have "Milk Chocolate Peanut Butter Mousse".

7 oz. Toblerone Milk Chocolate, broken into small pieces
6 T plus 1/2 c whipping cream
2 egg whites
pinch salt
2 T sugar

Steps:

  • Place Toblerone Milk Chocolate and 6 T whipping cream in small heavy sauce pan over low heat. Stir constantly until melted. Do not overheat. As soon as melted, remove from heat and cool at room temperature or in refrigerator until slightly thick. Whip 1/2 c whipping cream until holds a definite shape. Beat egg whites with salt until they hold a soft shape. Gradually add sugar and continue to beat until firm but not dry. Fold all ingredients together only until incorporated. Pour into individual dessert bowls or wine glasses. Cover and refrigerated at least 2 hours.

2 tablespoons brewed coffee
5 ounces milk chocolate, coarsely chopped
1 tablespoon dark rum (optional)
3/4 cup heavy cream

Steps:

  • Bring a small pot of water to a gentle simmer over medium heat. Combine the coffee, chocolate and rum, if using, in a medium metal bowl that can sit atop the pot of water without touching the water. Place the bowl on the pot and heat until the chocolate is melted, stirring often. When the mixture is smooth, remove from the heat and set aside to cool until no longer warm to the touch.
  • Whip the cream at high speed to speed to soft peaks, about 1 minutes.
  • Fold half of the cream into the chocolate until combined but not fully incorporated and some streaks remain. Add the remaining cream in two batches, mixing to fully incorporate when the last batch is added.
  • If you want to serve it on its own, you can our it into dessert dishes to set or leave it in the bowl to scoop when you're ready to serve. Refrigerate until set, at least 1 hour, or up to 48 hours.

E. Guittard dark and milk chocolate, or Amadei dark and milk chocolate
8 ounces dark chocolate, finely chopped
4 ounces milk chocolate, finely chopped
1 1/2 cups heavy cream
5 large egg yolks
1 whole large egg
1 tablespoon agar
1/4 cup sugar
2 tablespoons light corn syrup
3 tablespoons water
2 tablespoons bourbon or dark rum (optional)
1 tablespoon vanilla extract

Steps:

  • Line a standard 12-cup muffin pan with baking cups.
  • Melt the two chocolates together in a stainless steel bowl over a pan of simmering water and set aside.
  • In the bowl of an electric mixer fitted with the whisk attachment, whip the cream for 3 to 5 minutes to form stiff peaks. Transfer the whipped cream to a bowl, cover with plastic wrap, and store in the refrigerator.
  • Rinse out the mixer bowl and the whisk attachment and return them to the mixer. Combine the egg yolks and whole egg in the bowl and mix on low until the eggs are frothy. Mix in the agar.
  • In a small saucepan, combine the sugar, corn syrup, and water. Bring to a full boil over medium heat. Boil for about 5 minutes, or until the mixture reaches 235°F on a candy or digital thermometer. Carefully add just a tiny splash of the hot syrup into the eggs, then turn the mixer on to low speed and beat for 1 minute. Add another small splash and beat for 30 seconds or so, then another, carefully and slowly incorporating all the hot sugar syrup into the eggs. Whip on medium speed for another 3 minutes.
  • Take the bowl off the mixer and gradually fold in the chocolate mixture with a big rubber spatula or wooden spoon. Once the mixture is smooth, gently fold in the whipped cream, bourbon, and vanilla. Blend gently until the mousse is smooth with no streaks.
  • Using a big pastry bag with a big star tip, pipe the mousse into the baking cups until they look like big ice cream cones. Chill until you are ready to serve or freeze them, then wrap them up to present as a gift.

1 cup brown sugar

1 1/2 cups sour cream
3/4 cup oil
1/3 cup milk
2 tablespoons vanilla extract
3 eggs plus 2 egg yolks
1 1/2 cups hot water
1 cup heavy whipping cream
1 cup crushed chocolate sandwich cookies, such as Oreos
1/4 cup cookie-and-cream-flavor pudding mix, such as Jell-O Oreo
1/4 cup cookie-and-cream-flavor pudding mix, such as Jell-O Oreo
American Buttercream, for icing, recipe follows
Fondant, for decorating
1 pound unsalted butter
8 cups confectioners' sugar
2 tablespoons vanilla extract
1 tablespoon water

Steps:

  • For the chocolate cake: Preheat the oven to 350 degrees F. Coat four 6-inch round cake pans with cooking spray; line with parchment paper.
  • Combine the flour, granulated and brown sugars, cocoa powder, baking soda, baking powder and salt in the bowl of a stand mixer fitted with the paddle attachment. Mix thoroughly.
  • In another bowl, mix together the sour cream, oil, milk, vanilla, eggs and egg yolks, then pour into the dry ingredients. Mix on medium speed for 5 minutes.
  • Adjust the mixer speed to low and add the hot water slowly until fully combined.
  • Pour the batter into the prepared cake pans and bake until the cakes spring back to the touch or a tester inserted in the center comes out clean, 30 minutes.
  • For the cookies-and-milk mousse filling: Combine the cream, cookies and pudding mix in the bowl of a stand mixer fitted with the whisk attachment, and mix on medium speed until thickened, 1 to 2 minutes. Continue mixing on high speed until peaks form and the mixture has a mousse consistency.
  • To assemble the cake: Cut the domed top off of each cake round. Place one round on a serving plate. Using an offset spatula, spread an even layer of the filling on top. Repeat with the remaining layers until the cake is fully stacked. Coat the cake with American Buttercream, then apply fondant.
  • In a stand mixer fitted with the paddle attachment, beat the butter on medium speed until fluffy. Add the powdered sugar, vanilla and water, and mix on low speed until blended. Increase the speed to medium and continue beating until white in color. Scrape down the sides of the bowl with a spatula, then return the mixer to medium speed for 2 minutes.

1 tsp. vanilla
1-1/3 cups thawed COOL WHIP Whipped Topping, divided
18 chocolate malted milk balls, chopped

Steps:

  • Sprinkle gelatine over milk in medium saucepan; let stand 1 min. Add malted milk powder; stir. Cook on low heat 3 min. or until gelatine and milk powder are completely dissolved, stirring constantly. Add chopped milk chocolate; cook 3 min. or until chocolate is completely melted and mixture is well blended, stirring constantly. Remove from heat. Stir in vanilla.
  • Pour through fine-mesh strainer into bowl; place bowl in larger bowl filled with ice water. Stir chocolate mixture 3 min. or until slightly thickened. Pour into large bowl. Gently stir in 1 cup COOL WHIP; spoon into 6 dessert glasses.
  • Refrigerate 4 hours or until firm.
  • Top with remaining COOL WHIP and chopped malted milk balls before serving.

Steps:

  • Heat 1 1/4 cups cream and malted milk powder in small saucepan over medium heat, stirring, just until milk powder dissolves. Transfer to medium bowl. Chill until fully cold, about an hour.
  • Melt milk chocolate in microwave or in bowl set over pan of simmering water until smooth. Let cool until just slightly warm.
  • Using mixer fitted with whip attachment, beat chilled malted cream to soft peak. Fold in melted chocolate until combined. Spoon into serving dishes and chill until set, about an hour.
  • When ready to serve, whip remaining 3/4 cup cream on medium-high speed with sugar and vanilla to soft peak, then spoon on top of mousses. Top with chopped malted milk balls.

CHOCOLATE COCONUT MILK MOUSSE



Chocolate Coconut Milk Mousse image

2 cans coconut milk, refrigerated
4 tablespoons cocoa powder
4 tablespoons liquid sweetener
2 teaspoons vanilla
1 pinch salt
3.5 ounces chocolate bar, finely chopped

Steps:

  • Shake coconut milk and pour into a bowl; whisk until combined.
  • Add the cocoa, salt and vanilla and whisk while adding sweetener. Whisk for 1 minute with electric whisk or 2-3 minutes with a manual whisk. Mixture should start to thicken but still be pourable.
  • Pour mousse into serving dishes and place in fridge for at least 2 hours.
  • Remove from fridge, sprinkle with chocolate and serve.
