Number Of Ingredients 17

1 tablespoon unsalted butter
1/2 cup minced onion
1/2 green bell peppers or 1/2 red bell pepper, finely chopped
2 garlic cloves, minced
1 teaspoon fresh ground black pepper
1 teaspoon cayenne
1 teaspoon salt
1/2 teaspoon cumin seed, toasted and ground
1 1/4 lbs lean ground beef
3/4 lb ground pork
1 1/2 cups dry breadcrumbs
1/4 cup tomato-based barbecue sauce
3 tablespoons sour cream
1 tablespoon Worcestershire sauce
1 egg
milk, as needed
additional barbecue sauce (optional)

Steps:

  • Melt butter in a heavy skillet.
  • Add onion, bell pepper, and garlic and saute until they are softened.
  • Stir in the black pepper, cayenne, salt, and cumin, and saute 2 or 3 minutes more.
  • Place the vegetables in a large bowl.
  • Add remaining ingredients (except milk) and mix well with your hands.
  • The meat should feel quite moist but not soupy.
  • If it is too dry, add milk a tablespoons.
  • at a time until consistency is right.
  • Mound the meat into a 9x5 loaf pan.
  • Bake, uncovered, at 350ºF for 40 minutes.
  • Raise oven temperature to 400ºF and bake another 20 to 30 minutes.
  • If you wish, brush with another tablespoons.
  • of barbecue sauce the last 10 minutes of cooking.
  • Serve meat loat hot or cold.
  • Makes great lefovers and sandwiches or a great filling for stuffed peppers.

1 tablespoon good olive oil
3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)

Steps:

  • Preheat the oven to 325 degrees F.
  • Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
  • In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.) Serve hot.

⅔ cup milk
2 teaspoons salt
¼ teaspoon ground black pepper
3 slices bread, crumbled
1 ½ pounds ground beef
1 onion, chopped
1 cup shredded Cheddar cheese
½ cup shredded carrot
¼ cup brown sugar
¼ cup ketchup
1 tablespoon prepared yellow mustard

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Whisk eggs, milk, salt, and ground black pepper in a large bowl. Add crumbled bread and stir until dissolved. 1 carrot, coarsely chopped
1 rib celery, coarsely chopped
½ onion, coarsely chopped
½ red bell pepper, coarsely chopped
4 white mushrooms, coarsely chopped
3 cloves garlic, coarsely chopped
2 ½ pounds ground chuck
1 tablespoon Worcestershire sauce
1 egg, beaten
1 teaspoon dried Italian herbs
2 teaspoons salt
1 teaspoon ground black pepper
½ teaspoon cayenne pepper
1 cup plain bread crumbs
1 teaspoon olive oil
2 tablespoons brown sugar
2 tablespoons ketchup
2 tablespoons Dijon mustard
hot pepper sauce to taste

Steps:

  • Preheat the oven to 325 degrees F.
  • Place the carrot, celery, onion, red bell pepper, mushrooms, and garlic in a food processor, and pulse until very finely chopped, almost to a puree. Place the minced vegetables into a large mixing bowl, and mix in ground chuck, Worcestershire sauce, and egg. Add Italian herbs, salt, black pepper, and cayenne pepper. Mix gently with a wooden spoon to incorporate vegetables and egg into the meat. Pour in bread crumbs. With your hand, gently mix in the crumbs with your fingertips just until combined, about 1 minute.
  • Form the meatloaf into a ball. Pour olive oil into a baking dish and place the ball of meat into the dish. Shape the ball into a loaf, about 4 inches high by 6 inches across.
  • Bake in the preheated oven just until the meatloaf is hot, about 15 minutes.
  • Meanwhile, in a small bowl, mix together brown sugar, ketchup, Dijon mustard, and hot sauce. Stir until the brown sugar has dissolved.
  • Remove the meatloaf from the oven. With the back of a spoon, smooth the glaze onto the top of the meatloaf, then pull a little bit of glaze down the sides of the meatloaf with the back of the spoon.
  • Return meatloaf to oven, and bake until the loaf is no longer pink inside and the glaze has baked onto the loaf, 30 to 40 more minutes. An instant-read thermometer inserted into the thickest part of the loaf should read at least 160 degrees F (70 degrees C). Cooking time will depend on shape and thickness of the meatloaf.

2 tablespoons salsa
1 cup green pepper, finely diced
1 cup tomatoes, finely diced
1 (1 1/2 ounce) package taco seasoning
1 cup onion, finely diced
1 chili pepper, medium finely chopped
2 teaspoons garlic, minced
1 1/2 lbs extra lean ground beef
1/2 cup oatmeal, plain
1/4 cup cilantro, finely chopped
4 tablespoons lime juice
1 egg white

Steps:

  • Heat oven to 350°F.
  • To make the Pico de Gallo, chop onions, green pepper, tomato and 1/2 of the cilantro and mix in a bowl with the lime juice and set aside.
  • Combine the Ground Beef, remaining Cilantro, 1 cup of Pico de Gallo, Egg White, Oatmeal, Pepper, Seasoning Mix and 2 tablespoons of the Salsa into a large bowl.
  • Pat into a 9 x 5 loaf pan. Bake 50-55 minutes.
  • Serve topped with the remaining Pico de Gallo.

This is a very easy and no fail recipe for meatloaf. It won't take long to make at all, and it's quite good!

1 ½ pounds ground beef
1 egg
1 onion, chopped
1 cup milk
1 cup dried bread crumbs
salt and pepper to taste
2 tablespoons brown sugar
2 tablespoons prepared mustard
⅓ cup ketchup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the beef, egg, onion, milk and bread OR cracker crumbs. Season with salt and pepper to taste and place in a lightly greased 9x5-inch loaf pan, or form into a loaf and place in a lightly greased 9x13-inch baking dish.
  • In a separate small bowl, combine the brown sugar, mustard and ketchup. Mix well and pour over the meatloaf.
  • Bake at 350 degrees F (175 degrees C) for 1 hour.
