Squash, Potatoes and Onions- Oh My! image

A wonderful side dish that I make as soon as the yellow squash start coming in. When I first started making this about 30 years ago, I used the bacon grease. I found I like the margarine better and I like the squash to cook so that you have a few browned pieces in. Oooohh, that gives it so much flavor!

Number Of Ingredients 4

1/4 cup margarine (or a little bacon grease)
3 medium size yellow squash (cut in chunks)
2 medium potatoes (cut in chunks)
1 small onion (halved and sliced)

Steps:

  • Wash and Cut up squash, potatoes and onions.
  • Melt butter in lg. fry pan.
  • Add squash.
  • Add potatoes on top of squash.
  • Add onions on top of potatoes.
  • Cover and simmer till potatoes are done stirring occasionally (about 1/2 hour).
  • Add salt and pepper to taste.
  • Add small amount of water if it starts sticking (usually not necessary due to water content in vegetables).

Simple and fast. I don't "cook" many dishes in the microwave, but I make an exception with this. Cooking time will vary by individual oven.

6 medium potatoes, peeled and sliced
1 onion, sliced
1/2 cup margarine
salt, to-taste
black pepper, to-taste

Steps:

  • Layer potatoes and onions in a microwave proof, coverd dish.
  • Salt and pepper to taste.
  • Add butter on top.
  • Microwave covered for 10 to 15 minutes until potatoes are fork tender.

Something I came up with when I didn't have enough time to cook squash casserole the traditional way. Super easy and even better super quick.

Number Of Ingredients 10

4 cups summer squash, yellow crookneck and zucchini mixed (3 to 4 medium halved lengthwise and sliced)
1/2 cup carrot, shredded
1/2 cup onion, chopped
1 (10 ounce) can 98% fat-free cream of mushroom soup
1/2 cup low-fat ricotta cheese
salt and pepper
1 teaspoon garlic powder
1 teaspoon parsley flakes
1/2 cup 2% cheddar cheese, shredded
1/2 cup crouton, crushed

Steps:

  • Place squash, onions and carrots in microwavable casserole dish, add about 1/4 cup water, cover with plastic wrap and vent corner. Cook on high 5 minutes.
  • Drain water off, add cream of mushroom and ricotta cheese and spices. Stir together and microwave uncovered 5 minutes Take out and stir in cheddar cheese. Then top with crushed croutons, put back in microwave for 1 minute.
  • Enjoy.

Microwaved Squash, Potatoes & Onions image

We love this dish. I have made this dish countless times and it's always been a hit when served to family and friends. This isn't really a recipe but directions on how I make this myself. We grow yellow summer squash and zucchini every year so I had to get a little creative. I also love just potatoes and onions fixed this way...

fresh yellow summer squash, sliced
zucchini, sliced (optional)
potatoes, sliced
onions, chopped (or onion powder)
carrots, shredded (optional)
salt & black pepper
paprika
garlic powder
olive oil (your choice) &/or butter

Steps:

  • 1. Wash veggies really well and slice in thin rounds the same thickness as much as possible. But then again you can simply cube the veggies. I do it both ways. (I always chop my onions because that's the way we prefer them. We also like our carrots shredded in this dish when I decide to use them).
  • 2. Put in a microwavable bowl. Sprinkle on your seasonings of choice then drizzle olive oil over veggies. You decide the amount. It's not necessary to add any water. If you don't use olive oil you may put pats of butter on top of veggies. You may even put one pat of butter in with the olive oil.
  • 3. Cover and microwave to the tenderness you desire.
