Steps:

  • Break a graham cracker in half. Place one of the graham cracker halves on a plate with a paper towel on it. Set the other graham cracker half aside. The paper towel will prevent the cracker from getting soggy. If you can't find any graham crackers, you can use another similar honey-cinnamon flavored cracker instead.
  • Break off a piece of chocolate, and place it on top of the graham cracker. If you are using one of those large chocolate bars that have brick-like lines, use those lines as a guide. The chocolate should be a little smaller than the graham cracker.
  • Place a marshmallow on top of the graham cracker. Stand it up on the flat side, so that it doesn't roll off when you move the plate. Do not place the other graham cracker half on top just yet; you will do that at the end.
  • Microwave the s'more on high for 15 seconds. Put the plate with the s'more on it into the microwave, and heat it on high for 15 seconds. The chocolate will start to melt and become soft, and the marshmallow will puff up. If the marshmallow puffs up too much, heat the s'more at 5-second intervals. Let the marshmallow deflate before heating it again.
  • Take the plate out of the microwave, and place the other graham cracker half on top of the marshmallow. Press down on the s'more to seal it. Be careful not to press so hard that the graham cracker breaks.
  • Let the s'more cool for a few minutes before eating it. S'mores are tasty while they are still hot, but they won't be much fun to eat if you burn your tongue on them!

You only need a small amount of each ingredient to create a decadent chocolate, graham cracker, marshmallow treat with a twist that you can make in the microwave and eat right away. The best part? Since each cake is made in one mug there's practically no clean up, to boot.

4 tablespoons butter
1 graham cracker, crushed to crumbs
3 tablespoons milk
1 large egg, whisked
4 tablespoons all-purpose flour
3 tablespoons sugar
3 tablespoons cocoa powder
1/2 teaspoon baking powder
Kosher salt
32 mini or 4 large marshmallows

Steps:

  • Microwave 1 tablespoon of the butter in a microwave-safe mug until melted, about 20 seconds. Add the graham cracker crumbs and stir to combine. Transfer half of the crumbs into another microwave-safe mug and press the crumbs down into the bottom of each mug.
  • Microwave the remaining 3 tablespoons butter in a microwave-safe bowl until melted, 20 to 30 seconds. Add the milk and egg and whisk to combine. Add the flour, sugar, cocoa powder, baking powder and a pinch of salt and whisk until smooth.
  • Divide 1/4 of the batter into each mug and top each with 8 mini marshmallows or 1 large marshmallow. Divide the remaining batter into each mug and top each with 8 mini marshmallows or 1 large marshmallow.
  • Microwave the mugs for 1 minute to 1 minute 15 seconds, watching towards the end to make sure the cakes don't overflow.

I found this recipe years ago from Great-Tasting Kid's Snacks. It's so simple - no need to build a fire and find the sticks for marshmallows. It's so easy that the grandkids can do it themselves. The last ingredient should read hot fudge sauce, but Zaar won't allow it, lol.

Steps:

  • Break graham cracker in half crosswise.
  • Place one half on small paper plate or microwavable plate; top with marshmallow.
  • Spread remaining 1/2 of cracker with fudge sauce.
  • Place cracker with marshmallow in microwave.
  • Microwave at HIGH 12 to 14 seconds or until marshmallow puffs up.
  • Immediately place remaining cracker, fudge side down, over marshmallow.

Campfire s'mores without the campfire! Really easy! My sister and I came up with this recipe one night when we were really craving s'mores. Just be wary not to microwave s'mores on high (100% power), or the marshmallows will become hard and crunchy when they cool.

2 marshmallows or 20 mini marshmallows
1 (2 ounce) Hershey Bars, broken equally in half or 1 (2 ounce) semi-sweet chocolate chips

Steps:

  • Toast graham crackers in toaster until slightly toasted (lightly tanned), checking crackers periodically as your toaster may have a different darkness setting.
  • Break each cracker in half, place the halves onto a microwavable plate, and place each half of Hershey's bar or about 2 handfuls of semisweet chocolate chips onto two of the cracker halves and a marshmallow or about 10 mini marshmallows onto each of the remaining cracker halves.
